CHEESY PENNE WITH TURKEY AND SPINACH
Cheesy Penne with Turkey & Spinach is a light and quick one-pot meal to serve any night of the week.

Steps:
- To begin, in a Dutch oven cook a pound of penne pasta according to package directions. When the pasta is done cooking, scoop out a half cup of the pasta water and set it aside for now. Pour your pasta into the colander to drain.
- Back in the Dutch oven, drizzle in a tablespoon of extra virgin olive oil. Add in the grated garlic and let it cook for just a minute.
- Add in the baby spinach and let it cook until wilted, about 2 minutes.
- Add in the diced turkey, light cream cheese and reserved pasta water. Let those melt all together.
- Stir in the salt, pepper and ancho chile powder.
- Add the pasta back into the pot ,along with the parmesan cheese - stir it all together.
- Serve topped with a little extra parmesan if you like. Enjoy!

- Prepare the pasta according to package instructions, draining well and set aside.
- In a large skillet, heat oil on medium high heat. Add ground turkey and seasoning and cook 5-7 minutes stirring to combine seasonings.
- Add onion, mushroom and bell peppers to ground turkey mixture. Cook until veggies are tender and translucent.
- Add vegetable stock, heavy cream and black pepper to the ground turkey and veggie mixture. Stir and combine all ingredients well to make a creamy sauce.
- Add drained Penne pasta and Baby spinach. Simmer for another minute or two on low heat just until spinach is cooked but not too wilted.
- Serve and Enjoy.

- Heat the oil in a large, high-sided skillet or Dutch oven over medium high heat until it shimmers and then add the ground turkey with 1 teaspoon kosher salt, 1 teaspoon 1 teaspoon ground cumin, the oregano, 1/2 teaspoon black pepper and the crushed red pepper. Break up the turkey with the spices and cook for about 5 minutes.
- Add the onion, red bell pepper, and pressed garlic and cook for another 5 minutes or until the turkey is browned and the veggies soften.
- Add the canned tomatoes with green chiles to the skillet or pot with the rest of the kosher salt, cumin, black pepper, chili powder and stir.
- Add the penne pasta and cover with the chicken broth, bring to a boil, turn down to a simmer, cover and cook until the pasta is just tender, about 8 minutes, stirring occasionally.
- Stir in the cream and fold in the spinach and cook until the spinach wilts, taste for seasoning and top with the shredded cheese.
- Garnish with the chopped cilantro, sit back and watch the forks fly!

- Preheat the oven to 400 degrees F. Mist a 2 to 2 1/2-quart rectangular or oval baking dish with nonstick cooking spray.
- Bring a large pot of salted water to a boil. Add the penne and cook according to package directions for al dente.
- While the pasta cooks, heat the oil in a medium pot set over medium heat. Add the fennel seeds and garlic and cook until aromatic, about 2 minutes. Add the tomatoes, basil sprig, 1 teaspoon salt and 1/4 teaspoon pepper. Simmer, lowering the heat if the sauce bubbles too vigorously, until the sauce has thickened slightly, the flavors have blended together and the raw tomato taste has cooked out, 10 to 15 minutes. Remove from the heat, discard the basil and season with additional salt and pepper. Pour over the cooked pasta and toss well to coat. Add the cubed mozzarella and transfer half the pasta to the prepared baking dish.
- Put the cottage cheese in the bowl of a food processor and process until smooth. Add the shredded mozzarella and Parmesan and pulse two to three times. Combine half the cottage cheese mixture with the spinach and mix to break up the spinach. Drop in spoonfuls over the pasta in the baking dish. Top the spinach layer with the rest of the pasta and then the remaining cottage cheese mixture.
- Bake until bubbly and golden brown on top, about 30 minutes. Let stand for 10 minutes, and then scatter the torn basil over the top.
