2 medium acorn squash, halved and cleaned
1/2 lb Italian sausage, casings removed
1/2 cup onion, sliced
2 cups pasta sauce
1/2 lb penne, cooked
1/4 lb mozzarella cheese, shredded

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the squash with olive oil, salt and pepper. Place on a baking sheet, flesh side up and add 1/2 cup water to the pan. Cover with alluminum foil and bake until tender, about 1 hour. Remove from the oven and cool completely.
  • In a large saute pan, over medium heat, brown the sausage and onions, about 6 to 8 minutes.
  • In a large mixing bowl, toss the sausage and onions with the pasta sauce, pasta, and cheese. Season with salt and pepper. Mix well.
  • Spoon the pasta mixture into the cavity of each squash. Place the filled squashes on a baking sheet and place in the oven.
  • Bake until the squash is heated through and the cheese melts, about 20 minutes.

Savory Stuffed Acorn Squash with Sausage, Mushrooms, Spinach & Cheese

2 acorn squash (halved (depending on size))
drizzle of avocado oil
salt (to taste)
1 lb Italian turkey sausage
½ cup chopped onion
4 oz mushrooms (chopped)
6 cloves garlic
½ tsp onion powder
1 Tbsp fresh rosemary
1 Tbsp fresh thyme
3 cups spinach
10 2-3 oz Sunsweet® Amaz!n™ Prunes, chopped (⅓ cup)
¼ cup shaved parmesan
¼ cup shredded mozzarella
red pepper flakes
parsley (for garnish)

Steps:

  • Preheat oven to 425°F (220°C).
  • Using a serrated knife, cut open acorn squashes. (Can poke holes around the outside and microwave for ~5 minutes to soften, if needed.)
  • Scoop out seeds from inside squash so you have a "bowl."
  • Brush the inside of each squash half with avocado oil and sprinkle with salt. Place face down on a lined baking sheet and roast 25-30 minutes (depending on size), until fork tender.
  • In a skillet over medium high heat, add a drizzle of oil and cook onion and mushrooms for 3-4 minutes. Add sausage and cook until no longer pink, 5-7 minutes. Add garlic, rosemary, thyme, onion powder and spinach, stirring to integrate. Cover and cook 1-2 minutes, until spinach is wilted.
  • Stir in chopped Sunsweet® Amaz!n™ Prunes. Add salt if needed. (Sausage typically has enough salt added already, but season to your preference.)
  • Place squash "bowls" on baking sheet and fill with sausage mixture. Sprinkle with cheese, or stop here if you don't want cheese.
  • Broil until cheese is melted, 2-5 minutes. Watch it so it doesn't burn!
  • Sprinkle with red pepper flakes, serve, and enjoy!

2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 links (8 ounces) spicy Italian sausage, casings removed
1/2 cup chopped red onions
1/4 teaspoon hot Hungarian paprika
1/4 teaspoon pumpkin pie spice
6 fresh sage leaves, finely chopped
1 stalk celery, finely chopped
1 red bell pepper, seeded and finely chopped
Kosher salt and freshly ground black pepper
1/2 cup shredded Cheddar-Monterey Jack cheese blend
1/2 cup chopped walnuts
1/4 cup dried cranberries, finely chopped
Chopped fresh parsley, for garnish

Steps:

  • For the squash: Preheat the oven to 400 degrees F.
  • Place the squash on a baking sheet flesh-side up and rub with the olive oil. Season liberally with salt and pepper. Roast until the edges begin to ripple and a poke with a fork reveals tender flesh, about 40 minutes. Allow to cool until easy to handle.
  • Lower the oven temperature to 350 degrees F.
  • Use a spoon to scoop out the flesh into a large bowl, leaving about 1/4 inch of flesh within the skin of each squash half to help it maintain its shape.
  • For the filling: In a large pan on medium-high heat, add the olive oil and sausage. While cooking, break the sausage into bits like ground meat with a wooden spoon. Once some of the fat is rendered from the sausage, add the onions, paprika, pumpkin pie spice, sage, celery, bell peppers and a pinch of salt. Cook until the sausage is done and the vegetables are tender.
  • Add the mixture to the bowl of squash along with the cheese, walnuts and cranberries and stir to combine. Taste and season with salt and pepper if needed. Fill the hollowed squash halves with the mixture and place back in the oven to melt the cheese and make the tops golden brown, 15 more minutes. Sprinkle with parsley and serve warm.

This recipe is from Apple Companion, which I found at Amish Acres in the heart of Indiana's Amish country. If you ever have a chance, pick up a copy of this cookbook! I have found most of the recipes to be outstanding, including this one, which I make at least once every fall or winter.

1 large acorn squash (about 1 lb)
4 tablespoons butter
1 medium yellow onion, peeled & diced
1 large tart apple, cored & diced
2 cloves garlic, minced
2 teaspoons good quality curry powder
1 lb ground lamb, beef or 1 lb turkey
1 teaspoon cumin seed
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/2 cup heavy whipping cream

Steps:

  • Cut acorn squash in half from stem to tip and scrape out seeds; set aside.
  • In a heavy, non-reactive (such as enameled) skillet, melt the butter over medium heat.
  • Sauté onion for 2-3 minutes.
  • Quick trick: Use one of those handy green peeling/coring/slicing units that attach to the counter with suction.
  • You can find these at most stores for around$20—if you don’t have one, I recommend getting one.
  • They work really well, and save lots of time!
  • Core and slice the apple with the peeling arm wedged out of action.
  • Slice the spiral to form small, uniform dice.
  • Add the apple, garlic and curry powder to the skillet.
  • Sauté, stirring, for about 3 more minutes, or until apple is beginning to soften and curry has become quite fragrant.
  • Add lamb and mix thoroughly, breaking up chunks.
  • Brown lamb and stir in cumin, cayenne and salt.
  • Add cream; allow to boil and reduce until thick.
  • Pack as much of the lamb mixture as possible into the hollowed out squash halves.
  • Place the squash in a baking dish just large enough to hold them upright.
  • Pour 1 inch of boiling water in the dish and cover tightly.
  • If baking in the oven, use foil.
  • If microwaving, use microwave-safe plastic wrap, ventilated with 2 slits.
  • Bake in preheated 400 F degree oven for 1 hour, or at 70% power in microwave for about 25 minutes, until the flesh of the squash is tender when pierced with a fork.

1 tablespoon butter, melted
1/4 teaspoon garlic salt
1/4 teaspoon ground sage
1 lb pork sausage (regular seasoning)

1 celery rib, finely chopped
4 ounces mushrooms, chopped
2 apples, cored and chopped (macintosh)
1 cup fine breadcrumbs
1/2 teaspoon sage
salt and pepper
1 egg, beaten
2 tablespoons fresh parsley, chopped

Steps:

  • Combine the melted butter, garlic salt and 1/4 teaspoons sage; brush over cut sides and cavity of squash. Salt and pepper to taste.
  • Bake in a large roasting pan, cut side up, at 400 degrees F for 1 hour, until squash is tender yet still holds its shape.
  • Meanwhile make stuffing: Fry pork sausage until light brown. Remove pork to a colander to drain. Drain all but 2 tablespoons drippings from frypan. Add onion, celery and mushroom; saute 4 minutes. Stir in apple and saute 2 more minutes.
  • Combine the pork, vegetables, and breadcrumbs in a large bowl.
  • Taste and season with sage, salt or pepper if needed (depending on your sausage you may not want to add more seasoning).
  • Stir in the egg and parsley.
  • Fill the squash halves with stuffing-they should be slightly mounded.
  • Return to oven and bake, covered, for 20 more minutes, until the egg is set.
  • Garnish as desired with parsley and shredded romano cheese.

1 teaspoon unsalted butter
1 medium onion, peeled and chopped
12 ounces breakfast-style pork sausage
2 teaspoons dried thyme
1/2 teaspoon salt
Freshly ground pepper to taste
1/2 cup toasted pecan halves
4 cups of 1/4-inch cubes of lightly toasted sourdough bread
3/4 cup chicken broth, homemade or low-sodium canned
4 teaspoons chopped fresh Italian parsley

Steps:

  • Slice off the bottom of each squash half so that they stand flat, being careful not to cut into the flesh. Place in a large roasting pan and set aside.
  • Melt the butter in a large nonstick skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the sausage and cook, breaking it up with the back of a spoon, until no traces of pink remain, about 8 minutes. I had never worked with Acorn Squash before, so I kind of made it on the spot, but it is delicious! This is a yummy, cheap way to use left overs and still have fall flavors. You can substitute the meat for beef or leave it out and add extra veggies for a vegetarian meal. Can be used as a side dish for a larger group accompanying a larger entree.

1 acorn squash
1/2 lb ground venison
1 cup corn
1 cup rice
1 garlic clove
2 tablespoons brown sugar
1/2 teaspoon nutmeg
1 teaspoon olive oil
1/4 teaspoon dried parsley

1/4 cup shredded white cheddar cheese
1 -2 tablespoon water

Steps:

  • 1. Cut the squash in half and clean out the seeds. Rub brown sugar and nutmeg on flesh of squash. Place on pan, cover with tin foil and bake at 350 for about 50 minutes, or until squash is fork tender.
  • 2. While squash is cooking, cook about 1 cup of rice.
  • 3. In pan, pour about 1 teaspoon olive oil and warm, then add 1 clove of garlic and cook until garlic just starts to brown. Add in venison and cook till browned.
  • 3. Add corn and rice to venison mixture and warm mixture thoroughly. (I used left over corn and rice) After all is warmed through, add butter and water.
  • 4. When squash is done, pull out and remove foil. Turn oven to broil.
  • 5. Stuff center with venison and corn mixture. You may have some left over stuffing, keep it warm for serving. Sprinkle shredded cheese over squash and stuffing. Place back in oven for about 5-7 minutes or until cheese is melted.
  • 6. Let cool for about 5 minutes or until you can't wait to eat!

  • Using a sharp knife cut off the very top and bottom of each squash to create a flat base on each side (being careful not to cut through the center cavity).
  • Slice the squash in half, scrape out seeds to create individual bowls for the stuffing.
  • Drizzle each squash half with olive oil, salt, and pepper.
  • Roast in a preheated oven at 400˚F (200˚C) for 40-50 minutes - or until fork tender.
  • While squash is roasting - in a large fry pan over medium heat - heat oil and add Onion, Celery, Salt, Pepper, and Rosemary. Cook until onions begin to soften.

  • Add Apple until slightly softened. Finally mix in Bread Crumbs and Parmesan cheese just until incorporated. Remove from heat.
  • Once Squash has finished roasting (when you can easily poke it with a fork) remove from oven and fill each with prepared stuffing mixture.
  • Return to Oven for 20 minutes - adding a sprinkle of Parmesan cheese to the top for the final 5 minutes.

Acorn squash stuffed with ground beef, pork sausage, onions, garlic, and cheddar cheese. Serve with tossed salad and crusty bread for a simple, tasty meal.

1 halved lengthwise and seeded
salt and freshly ground black pepper to taste
cooking spray
¼ pound lean ground beef
¼ pound ground pork sausage
vegetable oil
1 small onion, chopped
1 clove garlic, minced
2 ounces Cheddar cheese, cubed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle squash with salt and pepper, and lightly spray with cooking oil. Place in a baking dish flesh side down, and cover with plastic wrap.
  • Microwave on high for 10 to 15 minutes, or until flesh is fork-tender.
  • Meanwhile, cook beef and pork in 1 tablespoon of oil on medium high heat until well browned, stirring frequently to crumble. Drain, and set aside. In the same skillet, cook the onion and garlic until onion is translucent. Combine beef and pork with cheese and onions, and spoon mixture into squash halves.
  • Bake, uncovered, in the preheated oven for 15 to 20 minutes, or until cheese is melted and squash is lightly browned. Season with salt and pepper to taste. Serve hot.
