1/2 tablespoon oil
1 garlic clove, minced
1 jalapeno, minced (seeded if desired)
1/2 small onion, minced
1 (15 ounce) can black beans, drained and rinsed
1 (14 1/2 ounce) can diced tomatoes
1 (11 ounce) can mexicorn
1 (8 ounce) can tomato sauce
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cayenne (or more depending on how hot you want the chili)
3/4 cup flour
3/4 cup cornmeal
1 1/2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup cheddar cheese, shredded
1 egg
1 cup buttermilk
2 tablespoons butter, melted and cooled

Steps:

  • Preheat oven to 375 degrees.
  • Heat oil in a large skillet.
  • Add garlic, jalapenos, and onion and saute until soft. About 5 minutes.
  • Stir in remaining chili ingredients and bring to a boil.
  • Reduce heat and simmer for about 10 minutes until chili is thickened.
  • While chili is simmering, prepare cornbread.
  • Combine dry ingredients in a medium sized bowl.
  • Add cheese and mix well.
  • In a small bowl, combine wet ingredients and stir well.
  • Add to dry ingredients and stir just until combined.
  • Spray a 10X10 casserole dish with spray oil.
  • Pour chili in prepared dish.
  • Pour cornbread batter over top.
  • Bake 20 - 25 minutes until a toothpick inserted in the cornbread comes out clean.
  • Cool for about 5 minutes and serve with sour cream and salsa, if desired.

The idea behind this spicy, all-vegetable chili is ease: It's easily made on a weekend, a meditative wintry afternoon in the kitchen, chopping and stirring. Then, on a weeknight made even shorter by commuting and homework, concoct an easy corn bread topping, spread it on the chili and bake it for a while. It's healthy, filling food.

2 tablespoons olive oil
2 medium onions, finely chopped
2 cloves garlic, minced
3 cups red bell peppers (about 2 large peppers), finely diced
2 teaspoons hot red pepper flakes
1 teaspoon ground coriander
1 teaspoon ground cumin
3 cardamom pods, lightly crushed
1 1/2 cups red lentils
3 cups canned chopped tomatoes
3 1/2 cups drained canned kidney beans
1/4 cup ketchup
1/4 cup tomato paste
1 tablespoon unsweetened cocoa powder
1 teaspoon salt
2 cups cornmeal
2 tablespoons flour
3 teaspoons baking powder
1 teaspoon ground cinnamon
1 cup butter milk
2 large eggs
1 teaspoon honey
2 tablespoons vegetable oil
1 cup coarsely grated Cheddar cheese
2 cups sour cream
1 cup chopped cilantro

Steps:

  • To prepare chili, heat olive oil over medium-low heat in a deep, wide pan with a lid. Add onions, garlic and bell peppers, and sauté until softened, about 5 minutes. Stir in red pepper flakes, coriander, cumin and cardamom pods. Stir in lentils.
  • Add chopped tomatoes, kidney beans, ketchup, tomato paste, cocoa and 3 cups water. Stir well. Cover, and simmer, stirring frequently, until mixture is thickened and beans are tender, about 45 minutes. Chili can be made ahead to this point and topping added later. (In that case, cover, and refrigerate for up to 3 days, bringing to room temperature before proceeding.)
  • For corn bread topping, heat oven to 425 degrees. In a mixing bowl, combine salt, cornmeal, flour, baking powder and cinnamon. In a separate bowl, whisk together buttermilk, eggs, honey and oil. Pour liquid ingredients into dry; stir until combined.
  • Pour chili into a baking dish 13 by 9 by 3 inches. Spread corn bread topping evenly over chili, and sprinkle cheese on topping. Bake until topping has risen and turned golden brown, about 25 minutes.
  • Remove from oven, and let chili stand about 5 minutes. To serve, cut into squares, and pass sour cream and cilantro at the table.

2 medium onions (chopped)
1 large red bell pepper (chopped)
1 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/4 to 1/2 teaspoon cayenne pepper
4 cloves garlic (chopped)
1 (15-ounce) can black beans (drained)
1 (15-ounce) can corn (undrained)
1 (16-ounce) can tomato sauce
1 1/2 teaspoons dried oregano
2 (6 to 8-inch) corn tortillas (cut into 2-inch strips)
For serving:
Optional: 1/4 cup shredded Monterey Jack cheese (or Jalapeno Jack cheese)
Optional: 2 green onions (chopped)
Optional: 1/4 cup sour cream
Optional: 2 tablespoons fresh cilantro (chopped)

Steps:

  • Gather the ingredients.
  • Heat 1 tablespoon of the oil in a large saucepan or Dutch oven. Add the onion, bell pepper, half of the salt, and the pepper. Sauté until slightly softened, about 3 minutes.
  • Add the chili powder, cumin, and cayenne pepper. Stirring often, bloom the spices for about a minute.
  • Stir in the garlic followed by the beans, corn, and tomato sauce. Season with remaining salt, or to taste. Finally, add the oregano by pinching between your fingers to allow the oils to activate. Bring to a simmer and cook, uncovered, for 20 minutes over medium-low heat, stirring occasionally.
  • While the chili cooks, make the tortilla strips. In a large skillet, heat the remaining 1 tablespoon oil over medium-high heat. Add the cut tortillas and sauté for a few minutes until lightly browned and crisp.
  • Remove to a paper-towel-lined plate; let drain. These tortilla strips will top your chili and give it a fantastically crunchy finishing touch.
  • Serve your black bean and corn chili topped with tortilla strips, cheese, green onions, sour cream, and cilantro, if desired.

8 ounces whole onion or 7 ounces chopped, ready-cut onion (1 2/3 cups)
2 teaspoons olive oil
1 large clove garlic
1/2 to 1 whole jalapeno
1 teaspoon ground cumin
1/4 to 1/2 teaspoon hot chili powder
15-ounce can black beans, no salt added
Enough fresh oregano to yield 1 tablespoon chopped or 1 teaspoon dried oregano
1 16-ounce can pureed tomatoes, no salt added
1 1/2 cups beer
1 teaspoon white vinegar
4 whole wheat tortillas, preferably no fat added
2 scallions
2 cups frozen corn kernels
1/8 teaspoon salt
Freshly ground black pepper to taste
4 tablespoons low-fat sour cream

Steps:

  • Chop whole onion.
  • Heat nonstick pan large enough to hold all filling ingredients until it is very hot. Reduce heat to medium-high, and add oil. Saute the onions until they begin to soften and brown.
  • Meanwhile, mince the garlic and add. Wash, trim, seed and mince the jalapeno, and add. Stir in the cumin and chili powder.
  • Drain and rinse the beans. When onions have softened, add the beans, oregano, tomatoes, beer and vinegar, and continue to cook at a simmer while preparing the rest of the meal.
  • Wrap the tortillas in aluminum foil, and heat in a toaster oven about 5 minutes, until heated through.
  • Wash, trim and slice scallions.
  • Two minutes before it is time to serve the chili, add the corn and stir well to heat through. Season with salt and pepper. Serve the chili, topped with scallions and sour cream, with warm tortillas.
