These super healthy black bean brownies are the ultra fudgy and decadent chocolate treat.

1 1/2 cups black beans ((1 15-oz can, drained and rinsed very well) (250g after draining))
2 tbsp cocoa powder ((10g))
1/2 cup quick oats ((40g) (See nutrition link below for substitutions))
1/4 tsp salt
1/3 cup pure maple syrup, (honey, or agave (75g))
pinch uncut stevia OR 2 tbsp sugar ((or omit and increase maple syrup to 1/2 cup))
1/4 cup coconut or vegetable oil ((40g) (See nutrition link for substitution notes))
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup to 2/3 cup chocolate chips ((Not optional. Omit at your own risk))
optional: more chips, (for presentation)

Steps:

  • Black Bean Brownies Recipe: Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well. (A blender can work if you absolutely must, but the texture-and even the taste-will be much better in a food processor. I use this food processor.) Stir in the chips, then pour into a greased 8x8 pan. Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up! Makes 9-12 brownies. If you make this recipe, don't forget to leave a review! 3 oz. BAKER'S Bittersweet Chocolate
1 Tbsp. oil
1 can (15.5 oz.) black beans, rinsed
3 eggs, divided
1/2 cup maple syrup
1 tsp. baking powder
1 tsp. vanilla
1/3 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 350°F.
  • Melt bittersweet chocolate in small microwaveable bowl as directed on package. Stir in oil.
  • Process beans and 1 egg in food processor until smooth. Add syrup, baking powder, vanilla, melted chocolate mixture and remaining eggs; process until well blended.
  • Spoon into 12 paper-lined muffin cups; sprinkle with chocolate chips.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove muffins from pan to wire rack; cool completely.

Incredible, flourless black bean muffins that taste like a delicious, cakey brownie. That's right, the secret ingredient in these easy, fiber packed brownie muffins is black beans! They're dairy, gluten and grain free and the perfect healthy treat or snack.

1 (15 ounce) can of black beans, rinsed and drained
3 eggs*
1/2 cup pure maple syrup (or sub honey)
2 tablespoons coconut oil, melted and cooled
1 teaspoon vanilla extract
1 tablespoon brewed coffee, optional to enhance chocolate flavor
1/2 cup high-quality unsweetened cocoa powder (or use cacao powder)
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup dark chocolate chips, plus 2 tablespoons for sprinkling on top

Steps:

  • Preheat oven to 350 degrees F. Line a 12 cup muffin tin with baking liners and spray the inside of each liner with nonstick cooking spray.
  • Place black beans and 1 egg in food processor and process until beans are well blended.
  • Add two other eggs, maple syrup, coconut oil, vanilla and coffee; process again until smooth.
  • Next add in cocoa powder, baking powder and salt; process once more until smooth. Next fold in 1/3 cup of chocolate chips.
  • Divide batter evenly among muffin cups. Sprinkle remaining chocolate chips evenly among the tops of each muffin batter.
  • Bake for 25 minutes or until toothpick inserted into the middle of a muffins comes out clean. Place on wire rack to cool for 10 minutes, then remove muffins from tin and transfer to wire rack to cool completely.
  • Keep muffins for a day at room temperature, then transfer to fridge and place in an airtight container.

3/4 cup cooked black beans
1/2 cup vegetable oil, or olive oil
2 eggs
1/4 cup unsweetened cocoa powder
2/3 cup sugar
1 teaspoon instant coffee or espresso
1 teaspoon vanilla extract
1/2 cup mini chocolate chips, divided
1/3 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 9-inch square baking pan.
  • In a blender, puree the beans with the oil. Add the eggs, cocoa, sugar, coffee, and vanilla. Melt half the chocolate chips and add to the blender. Blend on medium-high until smooth. In a small bowl, whisk together the flour, baking powder, and salt. Add to the blender and pulse until just incorporated. Stir in the remaining chocolate chips. Pour into the prepared pan. Bake until the surface looks somewhat matte around the edges and still a bit shiny in the middle, about 20 minutes. Let cool at least 15 minutes before cutting and removing from the pan. Dust with confectioners' sugar and serve.

3/4 cup flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup butter
1/4 cup chocolate chips
1/4 cup cocoa
2 eggs, lightly beaten
1 cup sugar
2 -3 teaspoons vanilla extract
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)
chocolate chips, for garnish
chopped nuts (to garnish)

Steps:

  • Preheat oven to 350.
  • In a bowl combine flour, baking powder, and cinnamon.
  • Set aside.
  • In a small pot melt butter over low heat.
  • Add chocolate chips and cocoa while stirring constantly.
  • Remove from heat when chocolate chips are just about melted.
  • In a large bowl combine eggs, sugar, and vanilla.
  • Add in flour mixture and chocolate mixture alternately stirring just until blended.
  • DO NOT OVERMIX.
  • Spoon into well greased muffin tin or paper cups that have been lightly sprayed with oil.

This recipe goes back to when my son was small and that is quite a while back, and I still make them, these are moist and rich no need for an electric mixer for this recipe it's all mixed with a wooden spoon, I have even added in chopped walnuts or mini chocolate chips, my recipe #89207 works great with these :)

3/4 cup good quality baking cocoa
1 teaspoon baking powder (heaping)
3/4 cup butter or 3/4 cup margarine, melted
1/2 cup boiling water
1 tablespoon vanilla
1 1/4 cups sugar (or to taste)
2 eggs
1 1/3 cups all-purpose flour
1/4 teaspoon salt
1/2 cup mini chocolate chip (optional)
1/2 cup walnuts (optional)

Steps:

  • Set oven to 350°F.
  • Line 12 muffin tins with paper liners.
  • In a medium bowl combine cocoa and baking powder; mix to combine.
  • Add in boiling water; mix well with a wooden spoon to combine.
  • Add in the melted butter and vanilla; mix well.
  • Add in the sugar, mix well with a wooden spoon.
  • Stir in eggs with a wooden spoon; mix until combined.
  • Mix the flour with salt; add in the chocolate mixture; mix well to combine (batter will be a bit on the thin side).
  • Add/mix in mini chocolate chips or walnuts (or 1 cup of both!).
  • Using an ice cream scoop fill each of the muffin tins almost to the top.
  • Bake for 25-30 minutes or until muffins are done, don't over bake! (might take a little longer, depending on how full the muffin tins are with the batter).
  • Cool, drizzle glaze over or frost with buttercream frosting.
