1 1/2 teaspoons ground cumin, half a palm full
2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
1 lime, juiced
2 tablespoons vegetable or olive oil, eyeball it
Salt and pepper

Steps:

  • Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

15 oz black beans, 1 can, drained, rinsed
½ cup brown rice, cooked
1 cup corn
½ teaspoon garlic powder
1 teaspoon chili powder
1 egg
salt, to taste
black pepper, to taste
⅓ cup seasoned bread crumbs
canola oil
4 slices pepper jack cheese
tomato
red onion
avocado
pico de gallo

Steps:

  • In a large bowl, add black beans, rice, corn, seasonings, and egg. Using a potato masher, mash the ingredients until thoroughly mixed together.
  • Once mashed, add the bread crumbs and mix to combine.
  • Take a quarter of the mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create four patties.
  • In a pan, heat a small amount of oil over medium heat. Add the patties and cook for 4-5 minutes, flip, top with a slice of pepper jack, and cook for another 4-5 minutes.
  • Place patties on buns, and top with sliced tomato, red onion, avocado, and fresh salsa.
  • Enjoy!

2 cups frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup shredded reduced-fat Mexican cheese blend
1 can (4 ounces) chopped green chilies, drained
4 green onions, chopped
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon pepper
20 egg roll wrappers
Cooking spray
Salsa and reduced-fat ranch salad dressing, optional

Steps:

  • In a large bowl, combine the first nine ingredients. Place 1/4 cup mixture in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner with water; roll up tightly to seal. Repeat., Place seam side down on baking sheets coated with cooking spray. Spray tops of egg rolls with cooking spray. Bake at 425° for 10-15 minutes or until lightly browned. Serve warm with salsa and dressing if desired. Refrigerate leftovers. Freeze option: Freeze cooled egg rolls in a freezer container, separating layers with waxed paper. To use, reheat rolls on a baking sheet in a preheated 350° oven until crisp and heated through.

3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
  • Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

I threw this together one day before a picnic with things that I wanted to use up. Everyone at the picnic really enjoyed them.

1 (16 ounce) jar corn and black bean salsa
1/2 cup cheddar cheese, shredded
4 ounces cream cheese
2 tablespoons taco seasoning
1 frozen pie crust, thawed

Steps:

  • Drain salsa so that most of the liquid is removed. Stir in the cheese.
  • Combine the cream cheese and taco seasoning.
  • Roll out pie crust to thin so it is easier to roll. Spread cream cheese mixture over entire crust. Spread salsa mixture on top of cream cheese.
  • Roll up crust like you would a cinnamon roll.
  • Cut into pieces about 1/2" wide.
  • Bake at 425 degrees for 14 minutes. I served these at room temperature.

1 (16 ounce) can black beans, rinsed and drained
1 (16 ounce) can corn, drained
1 green pepper, chopped
1 onion, chopped
1 medium zucchini, chopped
1 garlic clove, sliced as thin as possible
1 teaspoon ground cumin (I like a little more)
2 teaspoons lime juice (or as much as you want)
tortilla (whatever kind you like)
mozzarella cheese, grated

Steps:

  • Place chopped vegatbles in bowl and add the first teaspoon of lime juice. Let it sit for 5-10 minute.
  • Preheat oven or toaster oven to 350.
  • Heat frying pan with oil or spray.
  • Add Zucchinni, Onion, Peppers, and Garlic. cook for 5-7 minute.
  • Add Cumin. Cook for another 3-5 minute.
  • In a bowl mash the black beans.
  • Add corn and cooked vegetables.
  • Spread the filling on a tortilla, top with desired amount of cheese, roll up.
  • Heat in oven for about 12 min or until slightly crispy. Enjoy!
  • Also good with a little low fat sour cream.

These wraps, however, come together so quickly and effortlessly that I make them often. They taste better than fast food meals and they're much better for you too.

1 (15 ounce) can black beans, drained and rinsed
1 (11 ounce) can mexicorn, drained
2 ounces shredded monterey jack cheese
1/4 cup chopped fresh cilantro
1/4 cup bottled salsa
4 (8 -9 inch) jalapeno-cilantro tortillas

Steps:

  • Heat oven to 350 degrees F.
  • In a medium bowl, combine black beans, corn, cheese, cilantro and salsa; mix well.
  • Spoon 1/4 of bean mixture down center of each tortilla.
  • Fold in ends and then roll up each tortilla; wrap each in aluminum foil.
