BISTRO BACON AND EGG SALAD

4 slices bacon, cut crosswise into thin strips
2 1/2 tablespoons cider vinegar
2 teaspoons Dijon mustard
Kosher salt
Freshly ground black pepper
2 tablespoons extra-virgin olive oil
8 large eggs
8 cups mesclun salad greens (about 7 ounces)
4 to 8 slices crusty bread, toasted if desired

Steps:

  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until crisp. Using a slotted spoon, transfer the bacon to a paper towel. Pull the skillet from the heat (leave drippings in the skillet) and stir in 1 12 tablespoons cider vinegar, scraping up any browned bits clinging to the skillet. Pour the mixture into a large bowl and whisk in mustard, salt and pepper to taste, and olive oil.
  • Fill a nonstick skillet with about 2 inches of water and bring it to the barest simmer over medium heat; add the remaining 1 tablespoon vinegar. Crack the eggs, slipping them gently into the water, and cook until the whites are set but the yolks are still runny, about 4 minutes.
  • While the eggs poach, toss the greens with the vinaigrette and bits of bacon. Divide the salad among 4 plates or shallow bowls. Using a slotted spoon, gently scoop the eggs from the water, blot dry with a paper towel, and place 2 of them on top of each salad. Add bread to each plate and serve.

2 tablespoons white wine vinegar
4 ounces brie cheese, sliced
2 6-inch baguette segments, split and toasted
1/3 cup sliced fresh basil
1 tablespoon dijon mustard
Kosher salt and freshly ground pepper

1/4 cup extra-virgin olive oil
4 large eggs
1 5-ounce package mixed baby greens
1 small head frisee, torn into bite-size pieces
1 large tomato, cut into wedges
1/2 pound thickly sliced Black Forest ham, cut into strips

Steps:

  • Fill a wide, shallow pot with 2 inches of water. Add 1/2 tablespoon vinegar and bring to a gentle simmer.
  • Meanwhile, divide the brie between the baguette pieces and sprinkle with about 1 tablespoon of the basil. Whisk the mustard, the remaining 1 1/2 tablespoons vinegar, 1/2 teaspoon salt, and pepper to taste in a large bowl. Slowly whisk in the olive oil until smooth.
  • One at a time, crack each egg into a small bowl or cup, then slip into the simmering water. Poach the eggs until the whites are set but the yolks are still runny, 2 to 3 minutes. Using a slotted spoon, transfer the eggs to a paper towel-lined plate to drain briefly.
  • Add the mixed greens, frisee and the remaining basil to the bowl with the dressing and toss; season with salt and pepper. Divide among plates and top with the tomato and ham. Season the eggs with salt and pepper and add to the salads. Serve with the baguette pieces.

A simple, balanced bistro-style salad that's low in calories but high in flavour, texture and nutrition

1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
200g peeled cooked beetroot (not in vinegar), cut into bite-sized pieces
2 handfuls mixed leaves
¼ cucumber , cut into batons
8 asparagus spears , trimmed
2 large eggs

Steps:

  • Pour the olive oil and vinegar into a small bowl, mix well and add the beetroot. Divide the mixed leaves and cucumber between 2 plates.
  • Blanch the asparagus in a pan of simmering water for 2 mins, then remove and set aside. Crack the eggs into the pan and simmer gently for 3 mins until the whites are cooked and the yolks are just beginning to set, but still runny. Remove with a slotted spoon and drain on kitchen paper.
  • Meanwhile, add the beetroot to the salad plates, pour over the dressing and lightly toss together. Top each plate with asparagus and a poached egg to serve.

  • Cook the pancetta in a skillet set over medium heat until browned and crispy, stirring occasionally—about 8-10 minutes. Transfer the cooked pancetta to a paper-towel lined plate to drain and pour off the fat in the skillet. Reserve the pancetta
  • Adjust the heat to medium-low and add the olive oil to the skillet and when it is warm add the onion. Cook the onion, stirring often, until tender and caramelized about 15-20 minutes. Remove from the skillet and add to the paper-towel lined plate with the pancetta.
  • In a blender, combine the sherry vinaigrette, mustard, anchovy, and honey and blend until smooth. With the motor running, slowly drizzle in the olive oil to form an emulsion. Taste and adjust for seasoning. Reserve (See Note #3 for alternative)
  • Fill a large saucepan three-quarters full of water. Bring the water to a boil, reduce the heat to simmer. Working with one egg at a time crack it into a fine mesh strainer, swirl it around allowing the watery white to drain off, transfer the egg into a small half-cup plastic cup or a ladle that has been sprayed with cooking spray. I use the individual serving containers that applesauce are sold in. Do the same process with the second egg. Float the containers on top of the hot simmering water for 30 seconds, or if your using a ladle then hold it only slightly submerged, then gently tip the egg out of the container and into the simmering water. Cook an additional 2-3 minutes, or according to your preference.

  • Arrange oven rack in upper third of oven. Preheat broiler. Line a baking sheet with parchment or a silicone baking mat.
  • Toss tomatoes with 2 teaspoons oil, herbs de Provence, ¼ teaspoon salt, and ¼ teaspoon pepper in a medium bowl. Spread out on the prepared baking sheet and broil until the tomatoes are soft and starting to blister, 4 to 8 minutes.
