KNOX BLOCKS
Enjoy and old-fashioned favorite. I have loved Knox blocks since I was a kid and was surprised to not see a recipe here. So I thought I would add one. For those who don't know what Knox Blocks are they are the original Jello Jigglers and I think a little more tasty.

Steps:
- Heat the Four Cups of Water Until Boiling.
- Combine the Jello and Gelatin together in a bowl.
- Pour in the water.
- Stir until completely dissolved.
- Pour into a glass dish or pan.
- Put in refrigerator about 2 hours to cool and set.
- When set cut into squares.
- How many you get depends on how large you cut them. You can also use cookie cutters for shapes.

CREAMY STRAWBERRY SQUARES

- Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1-1/2 cups. Add to gelatin; stir until ice is completely melted. Remove 1-1/2 cups gelatin; set aside on counter. Refrigerate remaining gelatin 30 min. or until slightly thickened.
- Add 3/4 cup COOL WHIP to chilled thickened gelatin; whisk until well blended. Pour into 8-inch square dish. Refrigerate 15 min. or until gelatin mixture is set but not firm. Carefully pour reserved gelatin over creamy gelatin layer in dish.
- Refrigerate 3 hours or until firm. Cut into squares; top with remaining COOL WHIP.

- Stir boiling water into dry gelatin mix in large bowl at least 3 min. until completely dissolved. Pour into 13x9-inch pan.
- Refrigerate at least 3 hours or until firm.
- Dip bottom of pan in warm water 15 sec. Cut into 24 decorative shapes using 2-inch cookie cutters, being careful to cut all the way through gelatin to bottom of pan. Lift JIGGLERS® from pan. Reserve scraps for snacking. Store in tightly covered container in refrigerator.

- Add boiling water to gelatin mix in large bowl; stir at least 2 min. until completely dissolved. Add enough ice to juice to measure 1-1/2 cups. Stir into gelatin. Refrigerate 30 min. or until slightly thickened. Remove 1-1/2 cups of the gelatin; place in medium bowl. Stir in fruit; set aside.
- Stir half the COOL WHIP into remaining gelatin with whisk until well blended. Pour into 8-inch square dish. Refrigerate 10 min. or until set but not firm. Carefully top with fruited gelatin.
- Refrigerate 3 hours or until firm. Serve topped with remaining COOL WHIP.

HOMEMADE REAL FRUIT JELLY SQUARES

- Line a baking dish with plastic wrap.
- Soak the gelatin in cold water for about 5 minutes.
- In a saucepan, mix the fruit juice with water and lemon juice. Stir in the sugar and bring to boil, and then reduce the heat.
- Thoroughly squeeze the gelatin leaves and, one after another, dissolve in the juice-mixture without boiling.
- Fill the jelly-mix into the dish and leave to set in the fridge for at least 5-6 hours.
- For serving, cut into cubes or use fancy cookie cutters. (Tip: spread the cutter or your knife with some oil to make the slicing easier)
- With a pastry brush, coat the jelly with a thin layer of oil and toss in sugar (optional).
WATERMELON-LIME GELATIN SQUARES

- Puree the watermelon, sugar, lime juice and Sambuca in a blender until smooth, working in batches if necessary. Pour through a fine-mesh sieve into a large liquid measuring cup.
- Pour 1 cup of the watermelon mixture into a small saucepan and bring to a boil. Meanwhile, pour another 1 cup of the watermelon mixture into a large bowl and sprinkle the gelatin on top; let stand 1 minute. Pour the hot watermelon mixture into the bowl and stir until the gelatin dissolves. Stir in the remaining watermelon mixture from the measuring cup.
- Spray an 8-inch-square cake pan with cooking spray, wiping out the excess. Pour in the watermelon mixture. Skim the foam from the surface and refrigerate the gelatin until slightly thickened, about 20 minutes. Arrange the mint leaves on top in rows, then push them just below the surface. Refrigerate until fully set, at least 4 hours.
- Unmold the gelatin: Invert onto a cutting board, then re-invert onto another cutting board and cut into squares.

Really different...Jello powder on a baked crusty base and delicious. I used to make these for my kids all the time....like 40 years ago.

- Blend the marg., flour and brown sugar.
- Use a pastry cutter to make it easier.
- Press into a 9" square pan and bake at 350* for 15 minutes.
- For the topping -- mix the jello powder with the cold water and boil for 1 minute, cool.
- Beat the egg whites with salt until foamy.
- Add the cooled gelatin and beat until soft peaks form.
- Quickly spread over the base.
- Place in fridge to set.
- Enjoy.

- Drain pineapple, reserving juice in 1-cup measuring cup. Add enough water to reserved juice to measure 1 cup; pour into small saucepan. Reserve drained fruit for later use.
- Bring pineapple juice to boil. Add to gelatin mixes in medium bowl; stir 3 min. until completely dissolved. Stir in cold water. Add cranberry sauce and reserved pineapple; mix well.
- Pour into 8-inch square dish sprayed with cooking spray. Refrigerate 1-1/2 to 2 hours or until gelatin is set but not firm.

- In a small bowl, combine 1 package flavored gelatin and 1 envelope unflavored gelatin. Stir in 1 cup boiling water until dissolved. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm, about 20 minutes., In small bowl, combine the condensed milk and 1 cup boiling water. In another bowl, sprinkle 2 envelopes unflavored gelatin over cold water; let stand for 1 minute. Stir in 3/4 cup boiling water. Add to milk mixture. Spoon 1 cup creamy gelatin mixture over the first flavored gelatin layer. Refrigerate until set but not firm, about 25 minutes., Repeat from beginning of recipe twice, alternating flavored gelatin with creamy gelatin layers. Chill each layer until set but not firm before spooning next layer on top. Make final flavored gelatin layer; spoon over top. Refrigerate at least 1 hour after completing last layer before cutting into 1-in. squares.

This is my two granddaughters favorite snack. We use different colors of jello according to the theme we are doing, such as red and green for Christmas. I use pastel colors for Easter and I have used green for St. Patrick's Day. This is really easy to prepare and I have found out that the adults like them as much as the children do. Also they are fat free!

Steps:
- Preheat your oven 350°F.
- Combine flour and sugar.
- Cut in the butter until crumbly.
- Press into 8-inch square baking tin.
- Bake until a very light golden colour about 15 to 20 minutes.
- In a medium saucepot place two cups crushed fresh or thawed strawberries.
- Add 1/2 cup white sugar, and bring to a boil.
- Remove from heat; add Jello powder and stir well until dissolved.
- Chill until slightly thickened.
- Prepare Dream Whip dessert topping according to the package directions using the 1/2 cup milk and teaspoons vanilla which it calls for.
- Fold half of the prepared Dream Whip into the slightly thickened strawberry mixture and pour into cooled crust.
- Chill in fridge until set. (This should be about one hour or so).
- Beat the icing sugar into the remaining dessert topping and spread over the set layer.
- Chill until serving time.

- Preheat oven to 350 degrees. Cream butter and sugar together until light and fluffy; add flour and nuts and stir until a crumbly dough is formed. Press dough into bottom of 9x13 inch pan. Bake for 10 minutes or until crust is brown. Cool.
- Dissolve lemon gelatin in 1 cup of hot water. Cool. Meanwhile, whip the whipping cream (or you could substitute an 8 oz container of Cool Whip instead). Cream the cream cheese and 1/2 cup sugar together until fluffy. Add cooled lemon gelatin and stir until blended. Fold whipped cream into cheese mixture. Pour onto cooled crust. Chill.
- For topping, dissolve the strawberry gelatin in 4 1/2 cups hot water and chill for about 15 minutes. Gently pour on top of cheese mixture. Chill until set and ready to serve.
- Tips:.
- To lighten this dessert you can make a graham cracker crust with 2 cups crushed graham crackers, 1/2 cup melted butter and 1/3 cup sugar or Splenda. 8 oz of cottage cheese can be substituted for the cream cheese. Place cottage cheese in a blender and blend until smooth (otherwise it will taste grainy). Substitute sugar free gelatin for the gelatin in all or part of the recipe. Other flavors of gelatin can be substituted.
