CHOCOLATE CHIP-BANANA PANCAKES

Steps:
- Heat griddle to 375° or heat skillet over medium-high heat; grease with shortening if necessary (or spray with cooking spray before heating).
- Beat eggs in large bowl with wire whisk until lightly beaten. Beat in remaining ingredients except banana, chocolate chips and syrup just until smooth. Stir in banana and chocolate chips.
- For each pancake, pour batter by slightly less than 1/2 cupfuls onto hot griddle. Cook about 1 1/2 minutes or until puffed and dry around edges. Turn; cook other sides until golden brown. Serve with syrup.

- Heat oven to 400°F. Line 15x10x1-inch pan with foil; spray with cooking spray.
- In large bowl, mix flour, sugar, baking powder and salt until blended; set aside.
- In medium bowl, beat eggs, milk, melted butter, vanilla and 1/2 cup mashed banana with whisk until blended. Stir egg mixture into flour mixture until just blended (batter will be lumpy). Pour into pan. Sprinkle chips on top.
- Bake 20 to 24 minutes or until golden brown, center is set and toothpick inserted in center comes out clean. Cool on cooling rack 10 minutes. Top with Toppings. If desired, serve with additional maple syrup.

- In small bowl, mash 2 bananas with fork. In medium bowl, stir together Bisquick mix, milk and eggs. Stir in mashed bananas just until combined. Stir in chocolate chunks and 1/2 cup pecans.
- Spray griddle with cooking spray; heat over medium heat. For each pancake, pour 1/4 cup batter onto griddle. Cook until bubbles form on top and edges are dry. Turn; cook other side until golden brown.
- Serve pancakes topped with syrup, sliced bananas and additional pecans.

- Mash bananas using fork or whisk. I like to mash them coarsely so that there are banana chunks in the pancakes, but you can mash them finely if you like.
- In a bowl, mix all ingredients except chocolate chips with a whisk.
- Cook as normal, on a frying pan or skillet sprayed with Pam (re-spray pan between each batch). Measure out each pancake onto the pan (about 1/8 - 1/4 cup per pancake depending on your size preference) and sprinkle each pancake with chocolate chips. Flip pancakes when bubbles appear in pancake, cook other side.

BISQUICK BANANA PANCAKES (CHOCOLATE CHIPS?!)
Very easy with very few ingredients! No eggs, but you won't even miss them. Very quick breakfast for 1, but still very simple to multiply! I suggest using the heart smart bisquick because it is ALOT healthier; no trans fat, low fat, cholesterol free, and is a good source of calcium! When our bananas start getting black, we freeze them, they're perfect for this once thawed!

BISQUICK BANANA PANCAKES
Steps:
- Lightly grease griddle or skillet with cooking oil. Heat electric griddles to 350°F, or heat skillets over medium-low heat.
- Mix baking mix, eggs, milk, butter, and baking powder together in a medium bowl with a whisk or fork until just blended. Mash one of the bananas (reserve the other to slice) and stir into the pancake mixture. There may be some small lumps. Once the pancake mixture starts to bubble, it's ready to cook.
- Thinly slice the second banana into round slices and set aside for garnish.
- Depending on the size of pancakes you prefer, use 1/4 to 1/3 cup of batter for each banana pancake. Add pancake batter to the griddle. Cook pancakes for about 1-2 minutes, until there are bubbles across the top of the pancakes and the edges are dry. Using a pancake turner, turn and cook the other side until the pancake is golden brown.
- Top with sliced bananas and serve hot with butter and warmed maple syrup or honey. Garnish with chopped walnuts or pecans, if desired.
