This is the BEST biryani masala powder recipe you'll find on the internet. This is an aromatic, flavorful, unique blend of spices specially used in making mangy veg and non-veg biryani or pulao dishes.

10 Bay leaves
6 inch Cinnamon stick
4 Star anise
4 no. Mace (Javitri)
1 piece Nutmeg
2 tablespoon Cloves
2 tablespoon Black peppercorns
4 tablespoons Coriander seeds (sabut dhaniya)
2 tablespoon Cumin seeds
2 tablespoon Shahi jeera (kala jeera or black cumin seeds)
1 tablespoon Fennel seeds
30 Green cardamoms
6 Black cardamoms
2 tablespoon Red chili powder
1 teaspoon Turmeric powder

Steps:

  • Take all the whole spices (except spices powders - red chili and turmeric powder) in a pan.
  • Dry roast them with stirring constantly for 2-3 minutes on LOW heat. We are not looking for any color, just to remove any moisture if there is any. Instead you can sun dry them.
  • Once cooled, grind into fine powder along with red chili powder and turmeric.
  • Store in airtight container.

1/4 cup salt
1 tablespoon garlic powder

2 tablespoons roasted ground cumin
1 tablespoon ground aniseed
1 tablespoon pepper
1 tablespoon star ground aniseed
1 teaspoon ground cinnamon
1 tablespoon ground black cardamom pod
1 teaspoon ground black cumin seeds
1 teaspoon ground cloves
1 tablespoon ground green cardamoms
1/2 tablespoon ground mace
1/2 tablespoon ground nutmeg
3 bay leaves, torn
1 cup dried apricot
1/2 cup ground roasted coriander seed

Steps:

  • for 1 kilo meat, use 4tblsp of the spice mix.
  • mix all together and store in air tight jars.
