2 lemons, ends trimmed and sliced thickly
4 (6 ounce) fillets salmon
½ cup water
⅓ cup lemon juice
1 ½ teaspoons cornstarch
4 teaspoons butter
3 lemon slices, cut into quarters
1 tablespoon snipped fresh dill
¼ teaspoon salt
⅛ teaspoon dried chervil
1 dash cayenne pepper

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Grill salmon and thick lemon slices on hot grill until salmon flakes easily with a fork, 3 to 5 minutes per side.
  • Stir water, lemon juice, and cornstarch together in a small saucepan to dissolve the cornstarch; add butter and place over medium heat. Cook and stir the mixture until boiling and thick, 5 to 10 minutes. Remove saucepan from heat. Stir quartered lemon slices, dill, salt, chervil, and cayenne pepper into the sauce. Serve with the grilled salmon and grilled lemon slices.

Steps:

  • Heat gas or charcoal grill. In small saucepan, combine shallots, wine and 3 tablespoons lemon juice. Bring to a boil over medium-high heat. Reduce heat to medium; cook 5 to 7 minutes or until mixture is reduced to about 2 to 3 tablespoons, stirring occasionally.
  • Remove from heat. Stir in cold butter 1 tablespoon at a time until each is well blended. Stir in dill, chives and 1/8 teaspoon pepper. Cover to keep warm.
  • In small bowl, combine oil and 1 tablespoon lemon juice; mix well. Brush over salmon fillets. Sprinkle with salt and 1/4 teaspoon pepper.
  • When grill is heated, place salmon, skin side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. 4 (5 ounce) salmon fillets
5 tablespoons fresh lemon juice, divided
¾ teaspoon dried dill weed
¾ teaspoon lemon pepper
10 tablespoons butter, divided
1 shallot, minced

½ cup heavy cream
½ cup milk

2 whole lemons
fresh dill sprig
1 1/2 tablespoons butter

1/2 cup cold water
1/3 cup fresh lemon juice

1/4 teaspoon salt
1/8 teaspoon dried chervil, can sub parsley (optional)

3 slices lemons, unpeeled and cut into quarters

  • In small saucepan, melt butter over medium high heat, remove from heat when melted.
  • Combine cornstarch with water and stir into butter.
  • Add rest of sauce ingredients except lemon slice quarters.

3/4 cup white wine (I used a Chenin Blanc~Chardonnay Blend)
fresh ground pepper
1 tablespoon finely minced red onion
1/4 cup sour cream
2 tablespoons heavy cream
1/4 cup Dijon mustard
2 tablespoons honey
3 tablespoons finely minced fresh dill
1 lemon, juice of
2 -3 tablespoons capers

Steps:

  • Preheat oven to 400 degrees.
  • Place whole salmon fillet inside a 13X9 baking dish. Pour wine over salmon and sprinkle with freshly ground black pepper and finely minced onion.
  • Bake for 15-20 minutes basting with wine every 5 minutes or so. Do not overcook the salmon.
  • In a small sauce pan over very low heat combine sour cream, cream, Dijon mustard, honey, fresh dill and the juice of one lemon (about two tablespoons or so). Stir sauce until warmed.
  • Remove salmon from oven. Place servings on plates, top with sauce and sprinkle with capers. Enjoy!

  • Gather the ingredients.
  • Place the salmon in a shallow, nonreactive dish. In a bowl, combine the lemon zest, lemon juice, vegetable oil, dill, and garlic. Whisk to combine and emulsify .

6 - 8 slice cooked and crumbled bacon
1/2 c squeezed lemon juice

  • 1. Prepare you dill sauce and set in refrigerator till ready to serve.
  • 2. Rinse your salmon fillets with water and pat dry. Now place them flat in a shallow baking dish and pour the lemon juice over them and refrigerate for 10 minutes to marinate them. Turn them once while in the marinade. Meanwhile, begin to steam your potatoes and peas. Cook up your bacon and crumble. [Do not let the fish sit any longer than 15 minutes in this lemon marinade or else you will ruin the fish. I have done and let it sit for 1/2 hour and all you could taste was lemon. It was terrible!]
  • 3. Remove your fillets from marinade and lightly coat with your olive oil. Cook salmon 4-6 minutes on each side depending on the thickness of your fillet.
