The BEST homemade carrot cake recipe is extra moist from crushed pineapple and buttermilk, has the perfect blend of spices, and is smothered in cream cheese frosting.

1 1/2 cups granulated sugar
2/3 cup light brown sugar (, firmly packed)
1 cup oil (,vegetable or canola oil)
1/2 cup buttermilk
4 large eggs (, room temperature)
2 teaspoons vanilla extract
1/2 cup crushed pineapple*
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 1/2 cups carrots (, finely grated (about 1 lb.))
1 cup chopped pecans (, optional)
1 cup golden raisins (, optional)
16 ounces cream cheese (, softened)
3/4 cup butter (, softened)
2 teaspoons vanilla extract
4-5 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Prepare three 8 inch cake pans* by lightly coating with cooking spray and lining with parchment paper on the bottom.
  • Beat the eggs, granulated sugar, brown sugar, oil, buttermilk, vanilla, and pineapple together in a large bowl.
  • In another bowl combine the flour, baking powder, baking soda, cinnamon, ginger, salt and nutmeg. Add the dry ingredients to the wet ingredients and mix until incorporated.
  • Fold in the carrots, pecans and raisins just until evenly distributed throughout the batter.
  • Pour the batter into the prepared pans. Bake on the center oven rack until a toothpick inserted into the center of the cake comes out clean, about 25-30 minutes. Allow cakes to cool in the pans for 10-15 minutes before inverting them onto a wire rack to cool completely.

2-1/2 tsp. baking soda
2 tsp. ground cinnamon
4 eggs
1 cup oil
1-1/4 cups granulated sugar
2 cups shredded carrots
1/2 cup raisins
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 Tbsp. butter or margarine, softened
2 tsp. milk
1/2 tsp. vanilla
2 cups powdered sugar
1/4 cup toasted chopped walnuts
1/4 cup BAKER'S ANGEL FLAKE Coconut, toasted

Steps:

  • Heat oven to 350°F.
  • Combine flour, baking soda and cinnamon. Beat eggs, oil and granulated sugar in large bowl with mixer until blended. Gradually add flour mixture, mixing well after each addition. Stir in carrots and raisins. Pour into 2 greased and floured 9-inch round pans.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min.; invert onto wire racks. Gently remove pans; cool cakes completely.
  • Beat cream cheese and butter in large bowl with mixer until creamy. Blend in milk and vanilla. Gradually add powdered sugar, mixing well after each addition.
  • Fill and frost cake layers with cream cheese mixture. Combine nuts and coconut; sprinkle over frosting.

1 cup flaked coconut
1 cup chopped walnuts
1 (8 ounce) can crushed pineapple in juice

8 ounces cream cheese, softened (or light cream cheese)
1/2 cup butter, softened (1 stick)
2 teaspoons pure vanilla extract
3 1/2 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, beat together the sugar, oil, eggs, buttermilk and vanilla.
  • In a second bowl, combine the flour, baking soda, cinnamon and salt. Stir to blend.
  • Gradually add the dry ingredients to the batter. Mix gently.
  • Fold in the carrots, coconut, walnuts, pineapple and raisins with a spoon.
  • Pour into a greased 9 x 13 pan and bake at 350 degrees for about 1 hour or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.
  • For the frosting: In a mixing bowl, cream together the cream cheese and butter until fluffy. Add the vanilla and stir. Sift the powdered sugar in gradually and beat until thoroughly blended.

Steps:

  • Preheat oven to 350 degrees.
  • Sift flour, the mix with sugar, baking soda, salt, cinnamon and allspice; set aside.
  • In another bowl, combine 4 eggs, coconut, oil, pineapple, carrot, and pecans.

1 1/2 cups powdered sugar
1 1/2 cups egg whites (about 12)
1 1/2 teaspoons cream of tartar
1 cup granulated sugar
1 1/2 teaspoons vanilla
1/2 teaspoon almond extract
1/4 teaspoon salt
1/4 teaspoon cherry extract
1/8 teaspoon vanilla extract

Steps:

  • Heat oven to 375º.
  • Mix flour and powdered sugar.
  • Beat egg whites and cream of tartar in large bowl on medium speed until foamy.
  • Beat in granulated sugar on high speed, 2 tablespoons at a time, adding vanilla, almond extract and salt with the last addition of sugar; continue beating until meringue holds stiff peaks. Do not underbeat.
  • Sprinkle flour-sugar mixture, 1/4 cup at a time, over meringue, folding in gently just until mixture disappears.
  • Spread in ungreased tube pan, 10 × 4 inches. Gently cut through batter with spatula.
  • Bake 30 to 35 minutes or until cracks feel dry and top springs back when touched lightly. Immediately invert pan onto heatproof funnel; let hang until cake is completely cool.

1/2 cup chopped nuts (walnuts or pecans)
1/2 cup butter or 1/2 cup margarine
1 (8 ounce) package cream cheese, softened

1 lb confectioners' sugar (sifted)

Steps:

  • Preheat oven to 350°F.
  • Sift together flour, baking powder, soda, salt and cinnamon.
  • In mixing bowl, beat eggs and add sugar.
  • Let stand until sugar dissolves, about 10 minutes.
  • Stir in oil, carrots, drained pineapple and nuts.
  • Stir in dry ingredients and beat until well blended--3 minutes or so with blender.

  • Cool in pans about 10 minutes, then turn onto wire racks to cool completely before frosting.
  • Frosting: Combine butter, cream cheese and vanilla in large bowl and beat until well blended.
  • Add powdered sugar gradually, beating vigorously.
  • If frosting is too thick, thin with a few drops of milk to spreading consistency.
