I usually keep a can of sloppy joe sauce in the pantry, because our kids love sloppy joes. But sometimes I don't have buns on hand. With this fun casserole, we can still enjoy the flavors that they love in a flash. 1-1/2 pounds ground beef
1 can (15-1/2 ounces) sloppy joe sauce
2 cups shredded cheddar cheese
2 cups biscuit/baking mix
2 large eggs, lightly beaten
1 cup 2% milk
1 tablespoon sesame seeds

Steps:

  • In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Stir in sloppy joe sauce. Transfer to a lightly greased 13x9-in. baking dish; sprinkle with cheese. , In a large bowl, combine the biscuit mix, eggs and milk just until blended. Pour over cheese; sprinkle with sesame seeds. Bake, uncovered, at 400° for 25 minutes or until golden brown.

Seasonal fruit
1 lb(s) (450 g) extra lean ground beef (per recipe; 2 in one pan, 1 in another for lunches)
1 Tbsp onion flakes (15 mL)
1 cup ketchup (250 mL)
1 Tbsp prepared mustard (15 mL)
1 ½ tsp Worcestershire sauce (7 mL)
½ cup water (125 mL)
8 to 12 whole wheat buns
Meat mixture
½ tsp chili powder (2 mL)
½ tsp cumin (2 mL)
Small freezer zipper type bags
1 head green leaf lettuce
Individual bags of nacho chips (preferably plain and baked)
Plastic forks
1 cup grated cheddar cheese (250 mL)

Steps:

  • Preheat oven to 375 F (190 C).
  • Meanwhile...Make lunches by mixing chili powder and cumin into meat mixture, then serve 1/2 cup (125 mL) meat mixture into the bottom of a small freezer bag. Roll it up so it forms a tube on the bottom. Freeze. Rinse lettuce in the salad spinner and spin dry. Keep in a vegetable bag in the fridge.Lay out 5 bags of plain nachos along with plastic forks. Before school, each child can stuff the frozen meat bag with lettuce and some grated cheddar. The frozen meat will keep it refrigerated. At lunch, open the nacho bag, crunch them into pieces, transfer lettuce and cheese to the nacho bag and warm up the meat. When meat is hot, add to bag as well. Enjoy your portable taco salad.

These drunken sloppy joes were inspired by by the drunken meatballs recipe that I make (recipe #276860). I had a gathering with a group of friends that usually request the drunken meatballs but I wanted to try to do something else. So, I looked at what I had in the house and came up with Drunken Sloppy Joes. I am sure any kind of bourbon would work but I drink so little (funny considering this recipe) that I have been working through the same bottle of Southern Comfort since Christmas.

2 teaspoons extra virgin olive oil
1 cup onion, very finely chopped (I used my mini chopper)
2 lbs extra lean ground beef
1 1/2 cups ketchup (I recommend using Heinz)
1 cup Southern Comfort
1 cup light brown sugar
1 tablespoon Dijon mustard

Steps:

  • Heat the olive oil in a large and deep pan.
  • Add the onions and fry gently until they have started to go tender. This takes about 5 minutes, stirring often.
  • Crumble in the ground beef and cook, stirring when needed, until all of the meat is browned. This took me about 8 minutes.
  • Add the ketchup, Southern Comfort and brown sugar and stir until everything is combined with the meat.
  • Bring to a boil and then reduce to a simmer and continue to simmer for about 15 minutes, stirring now and then.
  • Stir in the dijon mustard and then let simmer for another 15 minutes or until the sauce is the thickness you like with a sloppy joe.
  • Serve on buns.

Give mince a makeover with this American-inspired favourite. Known as a 'loose meat' sandwich, this saucy, savoury filling can be adapted to your tastes

2 tbsp olive oil
400g beef mince
1 onion, finely chopped
1 green pepper, finely chopped
1 tsp garlic granules
1 tsp smoked paprika
1 tsp light brown soft sugar
1 tbsp malt vinegar
4 tbsp ketchup
1 tbsp Dijon mustard or 1⁄2 tsp mustard powder
300ml beef stock
4 burger buns, split
chilli sauce, to serve (optional)

Steps:

  • Heat half the oil in a frying pan over a medium heat and crumble in the beef mince. Fry for 10 mins, breaking it up with a wooden spoon as you go, stirring until it browns all over. Tip onto a plate. Heat the rest of the oil in the same pan and fry the onion and pepper for 6-8 mins until softened. Sprinkle in the garlic granules, paprika and sugar, then return the mince and any resting juices back into the pan and stir everything together. Sizzle for 1-2 mins to combine.
  • Splash in the vinegar, then stir through the ketchup and mustard. Pour over the stock and bring to a simmer, then turn down the heat to low and bubble everything gently for 15-20 mins until the mixture is thick and glossy. Taste and season if needed. To freeze, leave to cool completely, then tip into an airtight container or divide between freezer bags and freeze for up to three months. Defrost thoroughly in the fridge overnight and reheat in a pan until piping hot. Toast the burger buns in a hot pan, then fill with the sloppy joe mixture and top with chilli sauce, if you like.

This is my adaptation of my mom's yummy sloppy joe recipe. I like to toast the buns, as they hold together a little better when they are toasty. I usually make a double batch, which gives us enough for dinner with leftovers for lunch. Times are estimated. Tip: my DH loves to add a slice of cheddar cheese before placing the bun top on. They are pretty tasty that way!

Number Of Ingredients 12

4 (1 1/2 ounce) hamburger buns (the smallish ones, about 3 inch diameter)
1/4 cup butter, softened
granulated garlic, to taste
1/4 cup shredded parmesan cheese (to taste)
1 lb extra lean ground beef
1/2 cup chopped onion
1 (15 ounce) can tomato sauce
2 tablespoons ketchup (or more to taste)
salt & pepper, to taste
1 garlic cloves, minced or 1 teaspoon granulated garlic
2 -3 tablespoons chili powder
2 -4 teaspoons brown sugar (to taste)

Steps:

  • In a large skillet over medium heat, brown beef until no longer any pink; drain.
  • Add onions and garlic and cook until onions are transparent.
  • Add remaining sauce ingredients and stir to combine. Bring to a simmer; reduce heat and simmer until thickened (about 15 minutes).
  • Meanwhile, split buns and spread with butter. Place on a baking sheet and sprinkle with garlic and parmesan cheese. Place under broiler and broil until toasted golden brown. Set aside until sauce is done.
  • Taste sauce and correct seasonings, if needed. Serve with toasted buns.
