This is a cousin of jambalaya or perloo, and it should be fairly simple, with the chicken, sausage and rice as the stars. Any white meat works, and I used pheasant. This is a great one-pot meal for a Sunday supper, and you can make it a weeknight meal if you have leftover chicken and pre-made chicken broth.

1 whole chicken, or 2 pheasants, (about 3-4 pounds total)
1 yellow or white onion, chopped
2 ribs celery, chopped
4 cloves garlic, smashed
1 sprig rosemary ((optional))
1 sprig fresh thyme ((optional))
1 teaspoon smoked paprika ((optional))
2 tablespoons butter
1 large white or yellow onion, chopped
2 cloves garlic, minced
2 cups long or medium-grain rice
1 quart chicken broth ((homemade above, or store-bought))
1 pound smoked sausage, cut into coins
3 tablespoons chopped green onion
3 tablespoons chopped fresh parsley

Steps:

  • To make the broth, you can either cut the birds into serving pieces or keep them whole. Either way, submerge the birds in water and bring it to a simmer. Skim any scum that floats to the top. Add salt to taste, then the remaining broth ingredients. Simmer very gently for 2 hours.
  • Remove the chicken or whatever meat you are using, and strip the meat from the bones. Set aside. Strain the broth into a large bowl or pot, through a strainer that has a paper towel set inside it; this strains out debris. Reserve the broth.
  • Heat the butter in a heavy, lidded pot that can cook 2 cups of rice in it. Add the onion, cover the pot, and cook, stirring once in a while, until the onions are just turning brown -- about 10 minutes.
  • Add the rice, shredded meat and the garlic and stir to combine. Cook for about 2 minutes, stirring often. Add the smoked sausage and the broth you just made, or if you are using pre-made broth, add 1 quart now. Stir well, cover the pot and drop the heat to low. Cook gently until the rice is done.
  • When the rice is ready, add some broth to make the dish a bit soupy, then stir in the green onions and parsley.

These pieces of battered chicken are crispy and succulent, and hard to stop eating! They're so good that they will give your local Chinese restaurant a run for their money. Enjoy with rice and sweet and sour sauce.

1 cup all-purpose flour
2 teaspoons baking powder
1 pinch salt
1 teaspoon sesame oil
½ cup water, or more if needed
vegetable oil for frying
5 tablespoons cornstarch
1 pinch ground white pepper
4 boneless skinless chicken breasts, cubed

Steps:

  • Mix flour, baking powder, and salt together in a bowl. Drizzle in sesame oil. Gradually add water, whisking constantly until smooth; batter should be the consistency of cream. Let sit for at least 30 minutes.
  • Fill a deep pan or wok with oil and slowly heat to 375 degrees F (190 degrees C).
  • Mix cornstarch and white pepper together in a large shallow dish. Dust chicken in the cornstarch mixture and dip into the batter, evenly coating each piece. Transfer to the hot oil in batches and fry until golden and no longer pink in the center, 4 to 5 minutes. Scoop fried chicken out with a slotted spoon. Drain on a clean kitchen towel. Repeat with remaining chicken.

Sweet & sour chicken balls image

Try making these sweet & sour chicken balls at home with this easy recipe. These satisfying chicken bites paired with a tangy dipping sauce are irresistible

125g plain flour
2 tsp baking powder
2 eggs
160ml semi-skimmed milk
1 tbsp groundnut oil, plus extra for deep-frying
4 chicken breasts cut into 3cm cubes
240ml orange juice
3 tbsp caster sugar
1 tbsp tomato purée
1 tbsp tomato ketchup
3 tbsp white wine vinegar
3 tbsp cornflour, mixed with 6 tbsp water

Steps:

  • First, make the sauce. Put the orange juice, sugar, tomato purée, ketchup and vinegar in a large saucepan over a medium heat. Bring to the boil, then reduce the heat and simmer for 5 mins. Slowly pour in the cornflour mixture, a little at a time, stirring continuously until you have the desired consistency. Remove from the heat and set aside.
  • Mix the flour, baking powder and 1 tsp salt together in a large bowl. Beat the eggs, milk and 1 tbsp oil together in a separate bowl. Pour the wet ingredients into the dry and mix well to create a smooth paste. Add the chicken pieces and mix, making sure each piece is thoroughly coated.
  • Fill a deep saucepan or wok no more than a third full with oil and heat to 170C, or until a cube of bread dropped in browns within 30 seconds. Carefully lower the coated chicken pieces into the oil, one piece at a time, and fry in batches of five for about 5-6 mins each batch until golden brown and cooked through. If you have a food probe thermometer, the internal temperature should reach 78C. If you don't have a thermometer, cut a chicken piece in half to ensure the juices run clear.
  • Drain the fried chicken on a wire rack set over a baking tray lined with kitchen paper, or on a plate lined with kitchen paper. Serve with the sweet & sour sauce for dipping.

Lately I have of late been roasting a chicken every weekend. This weekend we had less guests than usual-I used the leftovers for a beautiful and delicious chicken pot pie, a wonderful one pot meal. It's a bit different, using roasted butternut squash, potatoes, carrots, and baby green beans instead of the usual potatoes and green peas. I hope you will try it, it was great!

Number Of Ingredients 12

2 refrigerated pie crusts, at room temperature
2 cups cooked chicken, cut into 1-2 inch chunks
1/2 cup baby carrots
2 medium potatoes, peeled and cubed
1 small butternut squash, peeled and cubed
1 cup cooked thin green beans
1 medium onion
1 stalk celery
2 -3 tablespoons olive oil
2 -3 tablespoons flour
salt and pepper, granulated garlic powder, and dried thyme
2 cups chicken broth

Steps:

  • Remove prepared refrigerated pie crusts from refrigerator and let come to room temperature.
  • Peel, seed, and cube butternut squash and place on roasting pan coated with non-stick cooking spray. Peel potatoes and cube, placing on same prepared roasting pan, along with baby carrots. Sprinkle with salt and pepper to taste and roast in oven at 350 degrees for 45 minutes to 1 hour until tender. Remove from oven and allow to slightly cool.
  • In a heavy duty skillet, saute celery and onion in 3 tablespoons olive oil until translucent. Add 3 tablespoons of flour and stir for 1-2 minutes to make a roux. Add 1 1/2 -2 cups chicken broth, 1 teaspoon dried thyme, 1/2 teaspoon granulated garlic and salt and pepper to taste, simmering on medium heat until thickened. Add more chicken broth if needed until desired thickness.
  • Place one pie crust in 8 x 10 casserole dish. Place chicken and roasted vegetables on top of crust. Top with sauteed vegetables and roux, mixing gently. Top with remaining crust and cut 3-4 slits in top of crust to allow steam to escape.
  • Place casserole in 350 degree oven on bottom rack for 45 minutes, allowing bottom crust to bake evenly. Move casserole dish to top shelf and increase temperature to 400, baking 15 minutes longer to allow top to brown. Remove from oven and allow to cool for 15 minutes before serving.

Don't bother ordering Chinese chicken balls make these at home they are just as good if not even better and the sweet and sour sauce is the same as what is served at your Chinese restaurant!-- these are a great weekend snack or can be served as appetizers, if you want some extra flavor to you chicken batter feel free to add in some garlic or onion powder or spices of choice --- this makes a large amount so you may want to reduce the chicken ball batter amount by half (using 4 chicken breasts) --- NOTE: the sauce recipe is one you may have to make a few times before you get the consistancy and sweetness to your liking, 1 cup white sugar and 1/2 cup lightly packed brown will give you a sweet sauce you may reduce the white sugar amount by a few tablespoons

1 teaspoon soy sauce
1/3 cup white vinegar
1/2 cup brown sugar, lightly packed

3/4 cup cold water (or can use unsweetened pineapple juice or half each, I prefer the pineapple juice)
3 tablespoons cornstarch (for a thinner sauce reduce to 2 tablespoons, if you want an very thick sauce use 4 tablespoons)
1 cup all-purpose flour
1 cup cornstarch
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon garlic powder (garlic lovers add 1 teaspoon)

1 1/3 cups cold water (if you are reducing to half a recipe use 1/2 cup plus 2-1/2 tablespoons water)
1 -2 teaspoon sesame oil (optional but good to add)
oil (for frying)
8 chicken breasts, cut into bite-size pieces
seasoning salt (optional)

Steps:

  • To make the sweet and sour sauce sauce; in a saucepan combine the first 5 ingredients until combined.
  • In a cup or bowl whisk the cold water or pineapple juice with cornstarch until smooth and well blended, then whisk vigorously into the ketchup mixture; bring to a boil stirring or whisking constantly over medium-high heat until bubbly.
  • Reduce the heat to medium-low and continue simmering and mixing until thickened (be patient the sauce takes a few minutes to thicken up) remove from heat and allow to sit at room temperature while making the chicken balls or you may cool to room temperature then refrigerate until ready to use (I prefer the sauce at room temperature).
  • To make the chicken balls: in a large bowl combine flour, cornstarch, baking powder, baking soda, garlic powder; add in water and sesame oil; whisk vigorously until smooth.
  • Add in chicken pieces; using clean handsand mix until well coated.
  • Heat oil in a deep-fryer or Dutch oven to 375 degrees.
  • Carefully dip the battered chicken pieces in hot oil and fry until golden brown (about 3-4 minutes).
  • Remove to a paper towel.
  • Sprinkle with seasoning salt immediately after frying if desired.
  • Serve immediately with sweet and sour sauce.
  • Delicious!

1/2 teaspoon lemon rind (grated)
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon lemon juice
2 teaspoons canola oil
1 cup onion (minced)
1 cup green pepper (minced)
2 garlic cloves (minced)
1 1/2 lbs ground chicken
1/2 cup breadcrumbs
1/2 cup zucchini (shredded)
1/2 teaspoon salt
1/2 teaspoon lemon rind (grated)
1/4 teaspoon fresh cracked pepper
2 teaspoons Dijon mustard
2 teaspoons lemon juice
1 teaspoon soy sauce

Steps:

  • Heat oven 400.
  • Whisk together the honey, rind, soy sauce, dijon and juice. Set aside.
  • Heat oil in a skillet.
  • Add onion, pepper and garlic. Saute 3 minutes.
  • Add chicken. Saute 5 minutes. Remove from heat. Let cool.
  • Stir in the breadcrumbs, zucchini, salt, rind, pepper, dijon, juice and soy sauce.
  • Shape into 1/2 inch balls.
  • Place on a sprayed baking sheet. Bake 20 minutes or until golden. Pour sauce over. Stir to coat.
  • Bake 5-10 more minutes.
