LITTLE CHIEF BEEF AND GAME JERKY



Little Chief Beef and Game Jerky image

This is a very flavorful marinade for beef or game jerky. It's a nice blend of red wine, soy sauce, sugar and salt, with a pepper-onion-garlic zip. I use flank steak sliced about 1/4 inch thick and do the drying in my oven, but if you have a smoker or dehydrator, knock yourself out!

2 lbs lean beef or 2 lbs game, sliced 1/4 inch thick
3 tablespoons sugar
2 tablespoons kosher salt
1 cup soy sauce
1/2 cup water
1/2 cup red wine
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon Tabasco sauce

Steps:

  • Place all ingredients in a plastic zipper bag and refrigerate overnight.
  • The next day, if using your oven to dry, cover your oven racks with foil and preheat oven to 180 degrees F.
  • Transfer drained meat to baking racks and dry for approximately 6 hours; depending on how thick the meat slices are, drying could take between 5 and 7 hours.
  • Be sure to place a couple of potholders in the oven door to keep it slightly ajar so moisture can escape and the meat can dry more thoroughly.

  • Buy the Right Smoker for You. Maybe your family doesn’t eat BBQ all that often, but you still want a good smoker. If that’s the case, you may want to buy a smaller smoker.
  • Clean All the Implements Before Use. Hygiene is so essential for the smoking process. You don’t want to get a flavor of beef in the smoked fish you’re preparing.
  • Plan Around the Weather. If it is a snowy day, you should plan for a longer cook time and take the necessary steps. Since most smokers can only be used outside, the weather is a significant factor you need to consider.
  • Set Aside Enough Time. Smoking takes a long time. You need to be prepared for this and be ready to take care of your meat. Smoking can take upwards of 30 minutes per pound of meat, and you need to be prepared for it to go even longer.
  • Don’t Overdo the Smoke. While the whole point of using a smoker is putting a classic smokey flavor into whatever you’re cooking, there comes the moment when you can create too much smoke.
  • Use a Grill Mat or Parchment Paper. Always use a grill mat on your smoker grill grates. A grill mat will make it easy to transfer food on and off your smoker grates.
  • Stay Close. You shouldn’t leave your smoker unattended while you leave the area. While the Big Chief smoker families are pretty well-contained, you never know what can happen.
