CHICKEN PUMPKINS

How do you make chicken bites look like little pumpkins? The trick to this savory treat is a few strategic (but straightforward) knife cuts. The nuggets are soaked in buttermilk, then coated in Cheddar-cracker breadcrumbs and stuffed with mozzarella for the ultimate chicken and cheese experience.

4 chicken breasts (about 2 pounds total)
3 cups buttermilk
Kosher salt and freshly ground black pepper
4 mozzarella cheese sticks
Vegetable oil, for frying
2 celery stalks with leaves attached
One 14.2-ounce box Cheddar crackers, such as Cheez-It (about 5 cups)
Ranch sauce, for serving

Steps:

  • Cut a series of deep slits crosswise into each chicken breast (do not cut through), about 3/4 inch apart from one another. Cut each chicken breast in half lengthwise.
  • Whisk together the buttermilk, 2 teaspoons salt and 1/4 teaspoon pepper in a large bowl. Add the chicken and toss to coat. Cover and refrigerate at least 2 hours and up to overnight.
  • Meanwhile, cut each cheese stick in half crosswise so you have into 8 pieces. Freeze until solid, about 2 hours.
  • Fill a large Dutch oven or other heavy pot with 3 to 4 inches of vegetable oil. Heat over medium heat until a deep-frying thermometer registers 350 degrees F. Set a rack on a baking sheet.
  • Meanwhile, trim the skinny tops from the celery stalks and remove any leaves. Cut eight 1-inch pieces from the skinny tops (these will be your pumpkin stems) and set aside.
  • Add the Cheddar crackers and 1 teaspoon salt to a food processor and process until finely ground. Transfer the mixture to a large bowl.
  • One at a time, remove the chicken pieces from the buttermilk mixture, letting the excess drip off. Transfer to the bowl of cracker crumbs and toss to thoroughly coat. Shake off any excess coating and transfer to a cutting board, cut-side down. Place a piece of cheese on one end of the chicken and roll up to enclose the cheese. Seal with a toothpick.
  • Working in batches of two, carefully lower the coated chicken into the oil using a slotted spoon. Fry the chicken until golden, cooked through and a thermometer inserted in the center of the meat registers 160 degrees F, about 4 minutes. Remove to the prepared rack to drain. Insert a celery stem in the center of each pumpkin so it sticks in the cheese. Serve hot with ranch sauce.

This is Day 21: Lunch, on the 21 Day Wonder Diet. You can make the filling the night before, and then fill the tortilla in the mornng. I have posted the assembly instructions as they were written in the book, but I simply rolled mine like burritos, and toasted them in the sandwich press. Delicious! This lunch is to be followed by an afternoon snack of 100g skim-milk fruit flavoured yogurt.

160 g chicken breast fillets
1 tablespoon taco seasoning mix
cooking spray
150 g butternut pumpkin, cut into 1cm cubes
2 tablespoons fresh coriander, coarsely chopped
1/3 cup low fat cottage cheese
2 green onions, finely chopped
2 tablespoons lime juice
1 garlic clove, crushed
30 cm flour tortillas

Steps:

  • Combine chicken and seasoning in a small bowl.
  • Spray chicken with cooking oil. Cook chicken on 1 side, in a medium heated frying pan for 5 minutes. Turn chicken; add pumpkin. Cook chicken and pumpkin, uncovered, about 5 minutes or until both are cooked.
  • Chop chicken coarsely, combine in medium bowl with umpkin and coriander.
  • Combine cheese, onion, juice and garlic in small bowl.
  • Spread cheese mixture, then chicken mixture on one tortilla; top with remaining tortilla. Serve cut into wedges.

This is Day 20: Dinner, on the 21 Day Wonder Diet. Make sure you have all your ingredients prepared and laid out before you start. If you don't like chilli, just leave it out.

160 g chicken breast fillets, sliced thinly
1/3 cup teriyaki sauce
1 garlic clove, crushed
cooking spray
1 small red onion, cut into wedges
1/3 cup chicken stock
200 g udon noodles
100 g snow peas, halved lengthways
1 cup bean sprouts
1 fresh small red Thai chile, sliced thinly

Steps:

  • Combine chicken, half the sauce and garlic in medium bowl; cover. Refrigerate 30 minutes.
  • Spray wok with cooking oil; cook chicken , in batches, in heated wok until browned.
  • Cook onion in wok 1 minute. Return chicken to wok with remaining sauce, stock, noodles and peas; stir-fry until hot.
  • Serve stir-fry topped with sprouts and chilli.

250 g pork fillets
2 tablespoons hoisin sauce
cooking spray
350 g watercress, trimmed
1/3 cup of fresh mint, coarsely chopped
1 small green apple, sliced thinly
1/2 small red onion, sliced thinly
2 tablespoons lime juice
1 tablespoon light soy sauce
10 g fresh ginger, grated
1 small red Thai chile, chopped finely

Steps:

  • Spread pork with hoisin sauce. Spray medium frying pan with cooking oil; heat pan, cook pork. Cover pork, stand 5 minutes.
  • Meanwhile, combine watercress, mint, apple and onion in medium bowl.
  • Combine juice, soy sauce, ginger and chilli in small jug. Add to salad, toss to combine.
  • Serve salad topped with sliced pork.

175 g Broccolini
2 beef eye steak fillets, 250g
cooking spray
1 tablespoon green peppercorn, drained
1 tablespoon buttermilk
1/2 cup beef stock

Steps:

  • Preheat oven to 200°C.
  • Roast Kumara on oven tray,uncovered, about 25 minutes. Boil, steam or microwave broccolini until tender.
  • Meanwhile, spray beef with cooking oil; cook beef in heated frying pan. Remove from heat; cover with foil.
  • Add peppercorns, buttermilk and stock to and stock to pan; heat without boiling.
  • Serve vegetables topped with beef, then drizzled with peppercorn sauce.

1 small red onion, chopped finely
2 tablespoons coriander roots, and stem chopped finely
1/4 cup coriander leaves
2 fresh long red chilies, chopped coarsely
2 garlic cloves, crushed
25 g fresh ginger, grated
1 teaspoon ground turmeric
1 cup chicken stock
180 g chicken breast fillets, sliced finely
1/4 cup light coconut milk
150 g butternut pumpkin, cut into 1cm cubes
115 g baby corn, chopped coarsely
1 cup bean sprouts
2 tablespoons fresh coriander leaves, extra

Steps:

  • Cook rice in large saucepan of boiling water unril tender, drain.
  • Meanwhile, blend onion, coriander root and stem mixture, coriander leaves, chilli, garlic, ginger, and turmeric until smooth.
  • Cook paste in medium frying pan, stirring, until fragrant. Add stock, chicken and coconut milk; bring to a boil. Reduce heat; simmer, covered, 10 minutes.
  • Add pumpkin and corn to pan; simmer, uncovered, 10 minutes.
  • Serve rice topped with curry, sprouts and extra coriander.
