This vegan nacho cheese sauce is addicting and life changing!

1 C white potatoes, peeled and cubed
1/2 C carrots, peeled and cubed
1/4 C vegetable oil
1/4 C nondairy milk
2 tsp lemon juice
6 pickled jalapeño slices
3 tbsp jalapeño pickle brine
1 tbsp tomato paste
1 1/2 tsp arrowroot flour
1 tsp garlic powder
1 tsp onion powder
1 tbsp nutritional yeast
1/2 tsp sea salt

Steps:

  • Boil the potatoes and carrots in pot of water for approximately 10 minutes. Drain them from the boiling water and add to a high-powered blender immediately. If you cook the potatoes for too long, they will become starchy and your sauce will not be smooth. This recipe will not work in a conventional blender. The potatoes need to be whipped at a high enough speed that they break down and emulsify, creating a smooth and creamy cheese-like sauce, with undetectable potato! You'll need a Vitamix or Blendtec. I've made it in a Magic Bullet in a half batch and it also worked well.
  • Add the remaining ingredients to the blender and combine until smooth. Your sauce may be hot enough to serve immediately, if you're in a rush, or heat it up in a small pot to thicken it slightly before pouring over whatever food you want to make cheesier! How about chips, chili, broccoli, or cauliflower for starters.

Our family loves this vegan cheese sauce. We're not usually that excited with fake cheeses, but this one has been the exception. Tastes great over nacho chips, baked potatoes, in vegetarian tacos, etc. This recipe has helped us enjoy more vegan meals in our home. We got this recipe from our friend Connie Yroc after she shared this wonderful cheese sauce with nachos with our family one day. After almost losing the recipe last week I realized I must post it right away, because we make it so frequently! Hope you enjoy it. Thanks Connie!

Number Of Ingredients 9

3 1/2 cups water
2 cups raw cashews
2 lemons, juice of
3/4 teaspoon paprika
1 teaspoon garlic powder (heaping)
1 teaspoon onion powder (heaping)
3 teaspoons salt
1 (7 ounce) can pimientos (including the liquid)
1/2 cup nutritional yeast (not brewers yeast!)

Steps:

  • Soak raw cashews for a few hours (this will help the sauce be more smooth and less grainy from the nuts though the flavor is good either way).
  • Put 2 1/2 cups of water into a blender with all of the ingredients and blend until smooth.
  • Pour the blended mixture into a saucepan and add the remaining water.
  • Heat the mixture in a saucepan for about 20 minutes.
  • Stir continually to prevent it from burning.
  • Add water to desired consistency (optional).
  • Use as a nacho cheese dip or as a replacement for cheese on other yummy foods!

4 small tomatoes
3 avocados, peeled and pit removed
1 chili pepper
1/2 small red bell peppers (I used roasted red pepper) or 1/2 small other small red sweet pepper (I used roasted red pepper)
1 teaspoon chili powder or 1 teaspoon blended cumin
salt and pepper

Steps:

  • Blend all in blender or food processor till smooth.
  • Adjust seasonings to your tase.

This is a cheesy dip that is great over nachos. I put it in a fondue pot for a build your own nachos party. Big plus..it doesn't use Velveeta for those that aren't fans. It is also a great base for mac and cheese.

1 lb cheddar cheese

Steps:

  • Melt butter.
  • Saute onions until caramelized.
  • Add flour and cook for 2-3 minutes on medium heat.
  • Add milk and cheese and stir frequently until melted, about 15 minutes.
