AIR FRYER CORN FRITTERS
Everyone loves Air Fryer Corn Fritters! Today, I made cheesy corn fritters filled with corn and loaded with cheddar cheese. They were air-fried, and they were absolutely delicious.

Steps:
- N a large bowl, combine flour, breadcrumbs, garlic powder, ground black pepper, and salt. Mix until combined.
- Add in the cheese and the corn kernels until all coated with flour/breadcrumbs mixture, mix until all is combined, and finally add in the corn kernels.
- Next, add in the eggs and sour cream. Mix until all is combined. The dough will be very sticky. You can use a fork, or I use my dough hook.
- Use a cookie scoop (I like using OXO medium size scoop 1 ½ tablespoon) and scoop up some corn fritter mixtures into a ball. You should have seven corn fritter balls. Use your hand and flatten out each dough to a small but thick pancake.
- Place four corn fritters in the prepared air fryer basket and cook for 7 minutes at 370 degrees F on a manual setting. Flip them and cook for an additional 6 to 7 minutes or until golden. You should have only two batches to do.
- Repeat this process until there are no more corn fritters. Once the corn fritters are cooked, place them on a cooling rack and cool off for 5 minutes.
- Plate, serve and enjoy!

- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

- Line air-fryer basket with parchment (cut to fit); spritz with cooking spray. Preheat air fryer to 410°. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Add milk, eggs, lemon juice and 1 teaspoon vanilla extract; stir just until moistened. Fold in apples. In batches, drop dough by 1/4 cupfuls 2-in. apart onto air-fryer basket. Spritz with cooking spray. Cook until golden brown, 5-6 minutes. Turn fritters; continue to air-fry until golden brown, 1-2 minutes. Melt butter in small saucepan over medium-high heat. Carefully cook until butter starts to brown and foam, 5 minutes. Remove from heat; cool slightly. Add confectioners' sugar, 1 tablespoon milk and remaining 1/2 teaspoon vanilla extract to browned butter; whisk until smooth. Drizzle over fritters before serving.

- Preheat air fryer to 375 degrees.
- Mix together all fritter ingredients in a mixing bowl. Make sure it is well combined but don't overmix. If the mixture is too dry, add additional mayonnaise or sour cream. If it is too wet, add a little bit of flour at a time. You should have a sticky consistency.
- Using either a tablespoon or a cookie scoop to form tablespoon sized balls of mixture. Flatten with the palm of your hand into a disc. Place in hot air fryer and cook for 8 minutes, flipping at the 4 minute mark.
- Serve immediately with desired dipping sauce.

Steps:
- Grate zucchini using the large teeth of a grater. Toss zucchini and salt together in a large colander and place in the sink to drain for 10 minutes.
- Put zucchini in the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture from zucchini as possible.
- Mix Parmigiano-Reggiano cheese, egg, 3 tablespoons bread crumbs, pepper, and garlic powder together in a large bowl. Stir in zucchini, shallot, and jalapeno until combined.
- Preheat the air fryer to 400 degrees F (200 degrees C).
- Place about 1/2 cup bread crumbs into a shallow plate or pie dish. Divide fritter batter into 7 portions. With oiled hands, gently roll each portion into balls. The batter will be very wet. Gently roll in the bread crumbs to cover on all sides. Continue with the rest of the batter. Pat the fritters slightly so excess bread crumbs fall off.
- Air fry fritters in 2 batches until browned, about 15 minutes per batch.

CRISPY CORN PAKODA (CORN FRITTERS)

- Coarsely grind the boiled sweet corn kernels. Pulse in a mixer/blender for few times.
- In a large bowl, add the coarsely ground sweet corn, onions, green chilies, ginger-garlic paste, curry leaves, coriander leaves, turmeric, chat masala powder, jeera, besan, rice flour, and salt.
- Combine and mix well without adding any water. Add more besan if required.
- Now drop the corn pakoda mixture into the hot oil.
- Stir occasionally and fry on medium flame. Fry till the pakora turns crispy and golden brown in color. Note: takes approximately 10-12 minutes.
- Drain them on kitchen tissues. Finally, serve crispy corn pakoda with masala tea and ketchup.

- Place 2/4 cup of sweet corn into a blender with the all-purpose flour, eggs, and shredded Parmesan cheese.
- Blend the mixture on high for 10 seconds.
- Get a chopping board, and chiffonade the parsley and chives, and set aside.
- Pour the mixture into a mixing bowl, then add 3/4 cup of sweet corn, followed by the salt, paprika, chopped chives, and chopped parsley.
- Mix everything together with a spoon until it's well incorporated.
- Get a lined air fryer tray, spray the olive oil spray on the parchment paper, and place 3 corn fritters onto the tray. Then, spray more olive oil on top of the corn fritters.
- Bake the corn fritters for 12 minutes, turning them over at 6 minutes.
