SWEET AND SIMPLE PORK ROAST
Simple, healthy slow cooker pork roast recipe born from my love of sweetness and lack of ingredients. The dish works great even for singles or smaller families because the leftovers are great. Don't throw out the juice! Save all the juice with the leftovers and include it when reheating; it will keep the meat moist and delicious.

Steps:
- Place a skillet or ovenproof sauté pan on the center rack in the oven then preheat the oven to 450°F.
- While the pan and oven heat up, trim any excess fat from the tenderloin and dry it thoroughly. Sprinkle it on all sides with the garlic powder, salt and pepper.
- Once the pan has been in the oven for 10 minutes, carefully remove it. Add the oil, swirling it to coat the entire bottom of the pan, then place the seasoned pork tenderloin in the pan. (If it's too long, you can curve it slightly, but once you place it in the pan, don't move it around because you want to get a good sear.)
- Return the pan to the oven and roast the pork for 10 minutes. Flip the pork once, reduce the oven to 400°F, and roast the pork for an additional 10 to 15 minutes or until it reaches an internal temperature of 145°F.
- Remove the pork from the oven, transfer it to a cutting board and brush it generously with the sweet chili sauce. (You can also reserve additional sauce for dipping.) Tent the pork tenderloin with foil and let it rest for 5 to 7 minutes before slicing and serving.

GLAZED SWEET AND SPICY PORK ROAST

Steps:
- Place roast fat side down in a shallow metal pan or iron skillet.
- Rub all surfaces of the roast with canola oil.
- Combine all the dry ingredients together to make a rub. Note: I mortar and pestle the rosemary a little to break it apart and release the flavor. You can use more or less of these dry ingredients to taste or to your perference.
- Apply the above to all surfaces of the roast. Rub them in well and return the roast to the pan fat side down.
- Drizzle maple syrup over top of the roast and let it run down the sides. Try to coat the top and sides evenly. It's okay if the syrup runs down onto the pan surface.
- Bake in a preheated 325F oven. Refer to a cookbook pork roasting chart to determine the exact baking time, depending on the weight of your roast. A 2 1/2 to 3 pound roast should take about 1 hour and 20 minutes to be done in a 325F oven.
- After the roast is done, remove from the oven and let it rest for about 20 minutes or so while still in the pan. Then use a tablespoon to gather the thick fluid (glaze) from the bottom of the pan and spoon it over the top and sides of the roast.
- Enjoy.

From empoweredsinglemoms.com
- Pork Fried Rice. Stir fry vegetables you have on hand like carrots, broccoli, water chestnuts, cauliflower, mushrooms, or bamboo shoots. Add garlic, onion, and ginger (if you have ginger or you can leave it out) for flavor.
- Sweet and Sour Pork. Stir fry bell peppers, carrots, and pork. Add a small can of pineapple chunks. Make your own sweet and sour sauce or save time and use this one.
- Pork Quesadillas. You can add sliced bell peppers and or black beans to the quesadillas if you want to. These are great with mango salsa.
- Cuban Sandwich. Make this with ham, pork roast, mustard, swiss cheese, and pickles. Cuban rolls, Italian bread or hoagie rolls are all options for the bread.
- Chili. This is best if the pork is in cubes rather than shredded. Add canned crushed or diced tomatoes, and beans. I like black beans the best, but chili beans are good too.
- Barbequed Pork Sandwich. Buns make the best bread for barbequed sandwiches. Fried potatoes and a salad are great accompaniments to barbequed pork sandwiches.
- Pork burritos. Saute different colored bell peppers and onions for one or two minutes then add slivered or shredded pork. serve in tortillas with cheese and lettuce.
- Stuffed Sweet Potatoes. This is probably the easiest meal on the list. Bake the sweet potatoes, split them down the middle add warm cut up pork roast and a dollop of light sour cream.
- Moo Shu Pork (weeknight version) Stir fry sliced mushrooms, a bag of coleslaw mix, a few green onions and leftover pork roast. Season with soy sauce and toasted sesame oil.
- Barbequed Pork Pizza. Naan bread is my favorite pizza base for this, but you can use a premade pizza crust or even make your own crust if you have the time.

- Heat the olive oil in a dutch oven over medium high heat. Mix all of the dry spices in a bowl and coat the pork in the dry rub. Be sure to use all of the rub and pat the spices into the meat. Brown the pork in the olive oil on both sides, about 7 minutes each side until golden brown.
- Add the sliced onions, garlic cloves, Worcestershire sauce, and broth to the pot. Cover the pot and place in the preheated oven. Let the pork cook until fork tender, about 2 hours and 15 minutes. I suggest checking the pork every 45 minutes. The internal temperature of the pork should be at least 145°.

- Peel sweet potatoes then cut into 1" cubes. Don’t worry if they are slightly smaller, but don’t make them too much bigger—you’ll want them to cook in the same amount of time as the tenderloin.
