- Line a 9 by 5 inch or smaller loaf pan with parchment or grease well. Preheat the oven to 360 deg F (182 deg C). In a bowl, mix in the wet ingredients until the sugar is fully combined.
- In another bowl, whisk 1 3/4 cup flour, baking powder, baking soda and salt. Add spices of choice if you like. See GF option in Notes below. (Optional: Add 2 tbsp almond flour to the dry for additional texture). At this point you can also toss in seasonal berries of choice.
- Fold the dry into the wet until just about combined. Add more flour if needed 1 tbsp at a time to make just slightly thick batter (you might not need any depending on the flours used).
- Add 1/3 cup chocolate chips and mix in. Pour the batter into a prepared loaf pan. Sprinkle the remaining chocolate chips on top. or top with a streusel of choice.
- Bake for 50 to 55 mins. Cool for 10 mins, then remove from pan. Cool completely before slicing. Store on the counter for upto 2 days, refrigerated for upto 7 days, freeze (slices) for upto a month. See Tips above for troubleshooting.
- To make cupcakes/muffins: Bake for 22 to 24 mins for regular size muffinsBake in a brownie pan, bake for 40 mins.

I have no idea where I found this recipe, but I've adapted it to be gluten-free. I serve it to people without allergies all the time, and they never guess that it is either GF or vegan. Great for those with dairy or egg allergies, or who keep kosher and need a pareve recipe. I've included both the GF and regular version in the ingredients.

Steps:
- Preheat oven to 350 degrees.
- Grease an 8x8in square pan.
- Combine applesauce, brown sugar and vanilla in a small bowl.
- In a separate bowl, combine all dry ingredient (except the chocolate chips).
- Add the applesauce mixture into the dry ingredients and mix until thoroughly combined.
- Add in chocolate chips.
- Pour into prepared pan.
- Bake 25-30 minutes, or until a toothpick comes out clean.

- As I always recommend, use a scale for accurate results. If you must use cups, make sure to scoop the flour with your cup, lightly pat down and then level off, so there are no gaps. If you want to make cupcakes, then I would suggest making these with my Truffle Frosting instead. Double the recipe for a double layer cake.
- Preheat your oven to 350 degrees and spray an 8 inch round (9 will yield too short a cake) cake pan with nonstick spray. Place a round piece of parchment paper on the bottom.
- It is important to make sure your liquids are not cold, or it will cause the coconut butter to harden. The oil tends to separate from the coconut meat in the jar and be very hard, and it's imperative that it's mixed back up properly before measuring. Otherwise, you run the chance of getting too much of just the oily part or just the meaty part, which will affect the end result. So I like to slightly warm up the jar (like 10 seconds) and empty the coconut butter in a separate container, warm up for just a few more seconds if too chunky still in the microwave until it is warm and soft enough to stir. It should be soft, but don't overheat the coconut butter or it will burn and ruin it. As you stir it, the warmth will melt it and make it more runny. Stir until completely smooth and runny, like the consistency of oil, then measure the weight.
