Ingredients

1 cup unsalted butter, softened
2/3 cup light brown sugar, packed
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 lb semi-sweet chocolate bit
1 1/2 cups old fashioned oats
1 cup sweetened flaked coconut
1/2 cup pecans, coarsely chopped

Steps:

Preheat oven to 375 degreees.
In large bowl using an electric mixer, cream butter with sugars until fluffy. Beat in egg and vanilla. Using wooden spoon, stir in flour, baking soda and salt. Stir in chocolate, oats, coconut and pecans.
Spoon rounded tablespoonfuls of dough about 2" apart onto large cookie sheet. Bake for 12 minutes or until golden. Transfer to a wire rack to cool completely.
Cookies can be stored for up to 1 week in an air-tight container or they can be frozen.

6 Tbsp butter
1 c brown sugar packed
1 3/4 c flour
1 tsp baking soda
1/2 c nuts (opt.)
1/2 tsp salt
1/2 tsp cinnamon
1/4 c water

Steps:

1. Cream 6 tbsp. butter with brown sugar. Stir rest of ingredients into creamed mixture alternating with 1/4 c. water. Blend in 1/2 c. nuts. Knead well with hands. Shape into 1 roll 1 1/2" high 2" wide and about 8" long. Wrap in wax paper or saran wrap chilling until firm. Cut with sharp knife into slices 1/8" thick. Place 1" apart on an ungreased baking sheet. Bake 6 min in 400o oven Remove from baking sheet as soon as they are done. Approx. 6 dozen cookies
