- Preheat oven to 400 degrees. Peel sweet potatoes; cut in half crosswise and then into wedges about 1 inch wide. Crush garlic clove in its skin.
- On a rimmed baking sheet, toss sweet potatoes with garlic, olive oil, thyme, crushed red pepper, and salt. Roast until soft, about 30 minutes.
CRISPY SWEET POTATO WEDGES
Baked sweet potato wedges are crispy on the outside and tender on the inside. These are seasoned with a smoky, spicy blend that will have everybody coming back for more! Great thing about this recipe is you can adjust the seasoning to your desire. You want to add minced garlic, go ahead! You want these bad boys spicier, go for it!

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Mix chili powder, cumin, paprika, garlic powder, onion powder, sea salt, cornstarch, and cayenne pepper together in a small bowl.
- Cut potatoes in half lengthwise, then cut each half into 3 wedges. Place in a large bowl and drizzle with olive oil; toss to coat. Add spice mixture and stir with a rubber spatula or your hands until potatoes are completely coated. Transfer to the prepared baking sheet.
- Bake in the preheated oven until the thickest parts of potato wedges are easily pierced with a fork, about 25 minutes.

- Thoroughly wash sweet potatoes. Slice in half, then into wedges.
- Toss wedges in olive oil and seasonings.

ROASTED SWEET POTATO WEDGES
Steps:
- Preheat the oven to 375 degrees F.
- Wash the yams and slice into 1/4-inch-thick wedges. Place the yams in a large mixing bowl and coat with the olive oil. Sprinkle with salt and pepper and spread out on a baking sheet. Roast the yams until tender to the touch, about 30 minutes.
- Put the canola oil in a frying pan and heat to 180 degrees F. Fry the yams on each side until the outside is brown and caramelized. Season with salt, pepper and the chopped parsley. Serve with ketchup or your favorite condiment.

- Cut sweet potato into wedges. Set aside.
- Prepare breading mixture in a large bowl and set aside. Whisk 2 eggs in a separate bowl.
- Dip wedges, one by one, in the egg mixture followed by the breading mixture and place on a baking sheet lined with parchment paper.
- Bake for 30-35 minutes, or until golden brown. For best results, flip halfway.

- Preheat oven to 425°. Peel and cut sweet potatoes lengthwise into 1/2-in. wedges. In a shallow bowl, whisk egg whites, salt and pepper until foamy. Place Parmesan cheese in another shallow bowl. Dip potatoes in egg white mixture, then in Parmesan cheese, patting to help coating adhere., Transfer to 2 foil-lined 15x10x1-in. baking pans coated with cooking spray. EASY SWEET POTATO WEDGES
After reading how good sweet potatoes are for us, I set out to find a fast, easy recipe that was also delicious. My sister and I developed this tasty side dish. The cayenne pepper can be increased to taste. I have found these wedges are even better reheated the next day, so make a bunch!

- Preheat the oven to 350 degrees F (175 degrees C). Spray a rimmed baking sheet with cooking spray.
- Place potatoes into a bowl and drizzle with oil.
- Mix brown sugar, cumin, and cayenne pepper together in a small bowl with a fork. Sprinkle mixture over potatoes to coat. Lay out wedges on the prepared baking sheet.

- Scrub potatoes and cut each one into 8 lengthwise wedges.
- Place on a piece of heavy duty foil and sprinkle with butter, then seal foil tightly to form a packet.
- Place on grill over medium high heat, close lid and cook until tender, turning once (about 12 to 15 minutes per side).
- Note: If you prefer a potato with a crisp edge, place directly on grill for 1 to 2 minutes a side at this point (after removing from foil).
- Sprinkle with salt and pepper.

ROASTED SWEET POTATO WEDGES WITH SAFFRON AIOLI

- To make the aioli: Lightly sprinkle the garlic with a pinch of the salt and smash it into a paste with the side of a cook's knife. Set aside.
- Pour about 2 inches of water into a small saucepan and bring to a simmer over medium heat.
- In a medium, heatproof bowl, whisk together the remaining salt, egg yolk, vinegar, water, lemon juice, and saffron until light and frothy. Place the bowl over the simmering water and whisk constantly until the yolk mixture is just warmer than room temperature, about 20 seconds. Remove from the heat and whisk in the garlic paste.
- While whisking constantly, gradually drizzle in the olive oil until a smooth and slightly thick sauce is formed. Store in the refrigerator until ready to use.
- Meanwhile, make the sweet potatoes: Position a rack in the center of the oven and preheat to 425 degrees F.
- Put a baking sheet on the center rack and preheat for 10 minutes.
- Quarter the sweet potatoes and leave the skins on. In a large bowl, toss the wedges with the olive oil. Carefully remove the hot baking sheet from the oven and place the wedges evenly spaced on the pan, cut-side down. Bake until the bottoms of the potatoes are lightly browned, about 15 minutes.
- Carefully remove the hot baking sheet from the oven. Turn the wedges so the other cut side comes in contact with the hot baking sheet. Continue to bake the sweet potatoes until both sides are browned and tender, about 15 minutes more.
- To serve, arrange the sweet potatoes on a platter, and season with salt, to taste. Drizzle the potatoes with some of the aioli. Serve warm.
- Cook's Note: We recommend golden olive oil for its smooth finish and low acidity. The golden color comes from olive pressed at the peak of ripeness. These oils are made on California, southern France, and Sicily.

- Heat the oven to 220C/200C fan/gas 7. Cut off and discard the ends of the potatoes, halve, then cut each half into long wedges.
- Tip the wedges onto a large baking tray. Drizzle over the oil, sprinkle over the thyme or rosemary and plenty of seasoning, then toss to coat.
- Cook in the oven for 15 mins, then turn the wedges over and cook for 15 mins more until golden and tender. Serve.
