- In a shallow dish, combine the first six ingredients. Cut steak into four wide strips; add to the marinade and turn to coat. Cover and refrigerate for 2-3 hours or overnight, turning once., Drain and discard marinade. Wrap a bacon strip around each steak piece; secure with a toothpick. Sprinkle with lemon-pepper. Lightly oil the grill rack., Grill steak, covered, over medium-low heat or broil 4 in. from the heat for 10-15 minutes, turning occasionally, until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Combine the glaze ingredients; brush over steaks. Grill until glaze is heated. Discard toothpicks.

- Whisk the olive oil, vinegar, garlic, rosemary, parsley, oregano, honey, red pepper flakes and 1/2 teaspoon each salt and pepper in a medium bowl. Transfer 3 tablespoons of the vinaigrette to a small bowl; cover and refrigerate until ready to serve.
- Combine the remaining vinaigrette with the steak in a large resealable bag; turn the bag several times to coat the meat. Refrigerate at least 4 hours or overnight, turning the bag occasionally.
- Preheat a grill to high. Transfer the steak to a plate or baking sheet, letting the excess marinade drip off; season the steak with salt and pepper. Let stand at room temperature, 30 minutes. Grill the steak until a thermometer inserted into the thickest side reaches 130 degrees F, 16 to 20 minutes for medium rare, flipping every 4 to 5 minutes. Transfer the meat to a cutting board and let rest 10 minutes. Thinly slice the meat against the grain; serve with the reserved vinaigrette.

- In a small bowl, combine oil, garlic, worcestershire, onion powder, salt & pepper.
- Cut steak into four wide strips. Pierce meat & place into a marinating container, pour mixture overtop & coat well. Cover & refrigerate 2 - 3 hrs (or overnight), turning container once or twice.
- Drain & discard marinade (or heat well to make into gravy).
- Wrap a bacon strip around each steak piece; secure with a toothpick.
- Sprinkle with lemon-pepper.
- Grill steak, covered, over medium-low heat for 10 - 15 mins, turning occasionally, until meat reaches desired doneness.
- Combine the glaze ingredients; brush over steaks. Grill until glaze is heated; discard toothpicks.
MARINATED SIRLOIN STEAKS

This is what the article says: Oriental meets Mediterranean in this flavorful, sweet-and- spicy marinade from Sarah Vasques of Milford, New Hampshire "The blend of honey and soy sauce really works well with the olive oil and balsamic vinegar," she notes. Her marinade is also great when grilling New York strip steaks.

- In a blender, combine the honey, soy sauce, oil, vinegar, garlic and pepper; cover and process until blended. Pour 1/3 cup marinade into a large resealable plastic bag; add steaks and onions. Seal bag and turn to coat; refrigerate for at least 1-2 hours. Cover and refrigerate remaining marinade for basting.
- Coat grill rack with cooking spray before starting the grill. Drain and discard marinade. - Combine marinade ingredients in an airtight plastic bag.
- Add mushrooms and beef and turn to coat thoroughly.
- Seal and refrigerate for 30 minutes, turning bag frequently.
- Cook pasta using package directions, omitting salt and oil.
- Spray a large nonstick skillet with olive oil spray.
- Heat over medium-high heat for 1 minute.
- Using a slotted spoon, transfer half the beef mixture to skillet.
- Cook for 4 minutes, or until meat is no longer pink, stirring frequently.
- Put on a plate and set aside.
- Repeat with remaining beef mixture, reserving all marinade and leaving beef mixture in skillet.
- Return reserved beef mixture with juices to skillet and add marinade.
- Increase heat to high and cook for 1 minute, stirring gently.
- Remove from heat.
- To serve, spoon beef mixture and sauce over pasta.

- In small bowl, combine 3 tablespoons soy sauce, olive oil and hot chili oil; whisk until blended.
- In second small bowl, combine garlic powder and 3/4 teaspoon pepper.
- Place beef steak in large shallow dish.
- Pour 1/2 of soy sauce mixture over one side of steak; sprinkle with 1/2 of garlic powder mixture and 1/2 of chopped cilantro.
- Rub mixture firmly into beef.
- Turn steak over and repeat on second side. Cover and marinate in refrigerator 20 minutes.
- Place steak on grid over medium, ash-covered coals.
- Grill, uncovered, 17 to 21 minutes for medium rare to medium doneness, turning once. When steak is almost done, in small saucepan, combine sauce ingredients.
- Place on grid near edge of grill to heat until hot. Carve steak crosswise into thin slices; arrange on heated platter.
- Spoon sauce over beef; garnish with lime slices and cilantro sprigs.
- Serve immediately.
- Tip: To broil, place steak on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 16 to 21 minutes, turning once.
