TANGY TUNA BURGERS

Steps:
- Chop the tuna into small chunks, then carry on chopping until the tuna is roughly minced. Tip the tuna into a bowl and mix with the garlic, ginger, soy sauce and coriander. Shape into two burgers, place on a plate, then freeze for 10 mins to firm up.
- Heat the oil in a non-stick frying pan, then cook the burgers for 1-2 mins on each side or until done to your liking. Serve the burgers in toasted buns with lettuce, tomato and avocado.

- Gather all the ingredients.
- Cut the green onions, and keep the white part and green part separated. We use the green part for garnish and white part to be mixed in with the tuna.
- Combine 1 ½ Tbsp Sriracha sauce and ½ tsp sesame oil and mix well together.
- Cut the sashimi-grade tuna into small cubes, about ¼ inch pieces.
- Mix the tuna with the sauce and add the white part of the green onion.
- Transfer the spicy tuna in a serving bowl and garnish with the sesame seeds and the green part of the green onion.
- If you like to drizzle some spicy mayo (optional), combine 1 Tbsp Japanese mayo and 1 tsp Sriracha sauce and mix well. Set aside.
- You can serve spicy tuna over rice or inside sushi roll (spicy tuna roll recipe), or with crackers. Drizzle spicy mayo on top.

- Lighly mix tuna, eggs, pickles and radishes.
- In a small bowl blend mustard, lemon juice, vinegar, salt, and cayenne. Gradually stir in salad oil with a fork until dressing is well blended. Mix dressing lightly with tuna mixture. If you wish, cover and chill 30 minute to 2 hours to blend flavors.
- Serve tuna mixture a top shredded lettuce in shells or seafood cocktail dishes. Sprinkle with parsley. Garnish each serving with a lemon wedge.
- Good served with thinly sliced pumpernickle bread and butter.
MAKE SPICY TUNA ROLLS AT HOME
Steps:
- Gather the ingredients.
- Chop the raw tuna into small cubes using a sharp knife. Combine with the mayonnaise and ichimi togarashi in a bowl and mix.
- Put a nori sheet on top of a bamboo mat and spread 1/4 portion of sushi rice on top of the nori sheet, creating an even layer. Leave a strip at the top of the nori bare to seal the roll. Sprinkle sesame seeds on top of the sushi rice.
- Spoon 1/4 of the tuna mixture lengthwise on the rice, making an even line of filling about 1/3 of the way up from the bottom of the nori.
- Roll up the bamboo mat from the bottom, pressing forward to shape the sushi into a cylinder.
- Press the bamboo mat firmly to seal and remove it from the sushi. Repeat this process to make 3 more rolls.
- Wipe a knife with a wet cloth before slicing sushi. Cut the rolled sushi into bite-sized pieces on a cutting board.
- Serve immediately and enjoy!

SPICY TUNA RECIPE

- Prepare spicy tuna sauce mixture: In a medium sized mixing bowl combine Sriracha, chili oil and a pinch of sea salt. Stir to combine well.
- Prepare the spicy tuna: Add the tuna, masago, white parts of the scallions and sesame seeds to the bowl. Gently mix together.
- OPTIONAL: Cover the bowl and place the spicy tuna in the refrigerator for 30 minutes to allow the flavors to marry.
- Prepare the Spicy Mayonnaise: Combine the mayonnaise and sriracha in a small bowl. Whisk well to mix together. Taste and adjust for spiciness with more sriracha if desired..
- Serve: Drizzle spicy mayonnaise over tuna mixture and enjoy!
