Warning: if you try this recipe, you'll never again trust a bartender to mix your mojito. I was fed up with mediocre bar mojitos, and decided to learn to make a traditional one myself. After much research, I think I've arrived at perfection. Try it for yourself! Notes: Real sugar cane syrup really does make a difference. Any good liquor store will have it. Use mineral water with a high effervescence, like Perrier. You want a bit of texture to your mojito to balance the sweetness.

3/4 fluid ounce cane syrup
1 fluid ounce fresh-squeezed lime juice
1 lime peel, whole
2 fluid ounces white rum
2 stalks fresh mint leaves, rinsed
3 fluid ounces sparkling water
1 -2 cup crushed ice

Steps:

  • Muddle the leaves into the cane syrup to release the mint's flavor.
  • Add the lime juice, rum, mineral water, and lime hull. Stir.
  • Shovel in the crushed ice until it towers over the brim.

I've made it my mission to find the perfect mojito recipe - I know, it is a tough job. So I've tried dozens of different recipes (See the sacrifices I make?) and have come up with what I think is the perfect mojito. The secret is the simple syrup and the bitters.

8 mint leaves (plus more for garnish if desired)
2 ounces simple syrup
2 1/2 ounces light rum
2 ounces lime juice
2 ounces club soda
4 drops bitters
lime wedge (for garnish if desired)

Steps:

  • Place the mint leaves and simple syrup in a glass and muddle the mint until the leaves are crushed and the flavor is released.
  • Add the rum, lime juice and bitters and stir to combine.
  • Top with club soda and stir lightly.
  • Garnish with a sprig of mint and lime wedge.

6 mint leaves
4 teaspoons white sugar
1 lime, cut into 6 wedges
2 (1.5 fluid ounce) jiggers lemon-flavored rum
1 cup ice cubes, or as needed
½ cup carbonated water, or as needed

Steps:

  • Put 3 mint leaves and 2 teaspoons sugar into each of 2 glass tumblers; vigorously stir sugar and mint together, crushing mint with the back of a spoon to release oils. Add 3 lime wedges to each glass; again stir vigorously to release some lime juice. Pour 1 jigger rum into each glass. Fill glasses with ice cubes and top with carbonated water; stir.

juice of 1 lime
1 tsp granulated sugar
small handful mint leaves, plus extra sprig to serve
60ml white rum
soda water, to taste

Steps:

  • Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
  • Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

6 limes, plus 1 lime sliced, to serve
4 tbsp granulated sugar
4-5 mint sprigs
ice
350ml white rum
600ml sparking water

Steps:

  • Chop each lime into six pieces and drop them into a two-litre jug. Add the sugar and squish the lime wedges with a muddler, or the end of a rolling pin. Keep crushing to get out all the juices.
  • Pick the leaves off a mint spring and lay them on one of your hands. Clap the other hand on top to bruise the leaves ever so gently, then drop them into the jug. Repeat with the rest of the mint spring.
  • Fill up the jug about three-quarters full with ice, then add the rum. Stir with a long-handled spoon to mix all the ingredients together gently and top up with the sparkling water. Stir once more, then serve poured into tall glasses with a few extra ice cubes and lime slices.Try these 3 twistsStrawberry mojitoMuddle 9-10 strawberries, 2 chopped limes and 2 tbsp granulated sugar in a large jug. Bruise the leaves from 2 mint sprigs and add to the jug with a pinch of black pepper. This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
