CLASSIC ITALIAN LASAGNA

Assemble a Classic Italian Lasagna with Giada De Laurentiis' recipe from Everyday Italian on Food Network. A homemade bechamel sauce makes a big difference.

5 tablespoons unsalted butter, plus 2 tablespoons for the lasagna
1/2 cup all-purpose flour
4 cups whole milk at room temperature
Pinch freshly grated nutmeg
1 1/2 cups tomato sauce, recipe follows
Salt and white pepper
1/4 cup extra-virgin olive oil
1 pound ground chuck beef
Salt and pepper
1 1/2 pounds ricotta cheese
3 large eggs
1 pound lasagna sheets, cooked al dente
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
3 cups shredded mozzarella
1/4 cup freshly grated Parmesan
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Preheat oven to 375 degrees F.
  • Bechamel sauce:
  • In a 2-quart pot, melt 5 tablespoons of butter over medium heat. When butter has completely melted, add the flour and whisk until smooth, about 2 minutes. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to simmer and whisk over medium heat until the sauce is thick, smooth and creamy, about 10 minutes. The sauce should be thick enough to coat the back of wooden spoon. Remove from heat and add the nutmeg and tomato sauce. Stir until well combined and check for seasoning. Set aside and allow to cool completely.
  • In a saute pan, heat extra-virgin olive oil. When almost smoking, add the ground beef and season with salt and pepper. Brown meat, breaking any large lumps, until it is no longer pink. Remove from heat and drain any excess fat. Set aside and allow to cool completely.
  • In a medium sized bowl, thoroughly mix the ricotta and eggs. Season with salt and pepper. Set aside.
  • Into the bottom of a 13 by 9-inch baking dish, spread 1/3 of the bechamel sauce. Arrange the pasta sheets side by side, covering the bottom of the baking dish. Evenly spread a layer of all the ricotta mixture and then a layer of all the spinach. Arrange another layer of pasta sheets and spread all the ground beef on top. Sprinkle 1/2 the mozzarella cheese on top of the beef. Spread another 1/3 of the bechamel sauce. Arrange the final layer of pasta sheets and top with remaining bechamel, mozzarella and Parmesan cheeses. Cut the remaining 2 tablespoons of butter into 1/4-inch cubes and top lasagna.
  • Line a large baking sheet with aluminum foil. Place lasagna dish on top, cover and put on the middle rack of the oven and bake until top is bubbling, about 30 minutes. Remove cover and continue to bake for about 15 minutes.
  • In a large casserole pot or Dutch over, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

A long-simmered beef ragu lets the brightness of the tomatoes shine through while developing a meaty richness. Our ricotta is mixed with nutty Parmesan that tempers the sharp garlic and adds flavor. We worked hard to get the right balance of the ricotta and tomato sauce in the layers since each element has their own voice. Our lasagna also uses less mozzarella than many other recipes - we prefer the creaminess of ricotta over the stringiness of melted mozzarella. Look for the shorter noodles - you won't need to cut them when assembling the lasagna.

1 pound ground beef
2 tablespoons olive oil, plus more for greasing
3 ounces pancetta, cut into 1/8-inch pieces
1 large carrot, cut into 1/8-inch pieces
1 large celery stalk, cut into 1/8-inch pieces
1 medium yellow onion, cut into 1/8-inch pieces
6 cloves garlic, finely grated
1 bay leaf
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon freshly ground nutmeg
Kosher salt and freshly ground black pepper
1/4 cup tomato paste
1/2 cup dry white wine
Two 28-ounce cans whole peeled tomatoes
2 large sprigs basil
1 large piece of Parmesan rind
1 pound dried lasagna noodles (see Cook's Note)
2 cups whole milk ricotta
1 1/4 cup grated Parmesan
8 ounces whole milk mozzarella, grated on the large holes of a box grater (about 2 cups)

Steps:

  • Place the beef in a large bowl and "pull" it apart with two forks as if you were shredding pulled pork, breaking up the clumps and loosening the meat without compacting it.
  • Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Add the pancetta and cook, stirring occasionally, until the fat has rendered and the meat is golden brown, 5 to 7 minutes. Transfer the pancetta to a large bowl with a slotted spoon, leaving the fat in the pot.
  • Spread the beef in an even layer in the same pot and cook undisturbed until lightly browned, about 3 minutes. Toss and continue to cook, breaking up any clumps and scraping up any browned bits from the pot, until the meat is browned and completely cooked, 5 to 6 minutes. Transfer the browned meat with a slotted spoon to the bowl with the pancetta, leaving the fat in the pot.
  • Reduce the heat to medium. Add the carrots, celery, onions, half the garlic, the bay leaf, oregano, red pepper flakes, nutmeg, 2 teaspoons salt and 1/4 teaspoon black pepper to the pot and cook, stirring occasionally, until the vegetables are tender but not browned, 6 to 8 minutes.
  • Add the tomato paste and cook, stirring constantly, until it's very fragrant and brick red colored, about 2 minutes. Stir in the wine, bring to a boil and reduce until the liquid is very thick and no smell of alcohol remains, 6 to 8 minutes. Add the tomatoes and the reserved pancetta and beef, bring to a boil and then reduce the heat to low. Add the basil and Parmesan rind and simmer, stirring occasionally, until most of the liquid has evaporated and the sauce resembles sloppy joes, 2 to 2 1/2 hours. There shouldn't be any rapid bubbles while cooking. Instead, the ragu should release occasional small bubbles. If the ragu reduces too quickly, add 1/2 cup of water and continue cooking. Repeat if necessary. The ragu needs the full 2 to 2 1/2 hour cook time to develop the flavors.
  • Discard the bay leaf, basil and Parmesan rind. Break up any remaining clumps of meat with the back of a spoon, making an even textured sauce. Season with salt and set aside until ready to assemble.
  • Arrange a rack in the center of the oven and preheat to 350 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Cook the noodles, stirring occasionally and separating them to prevent sticking, until softened and bendable but are still hard and chalky in the center, about 5 minutes. Transfer the noodles to a large bowl of cold water and set aside until ready to assemble.
  • Stir together the ricotta, 1 cup of the Parmesan, the remaining grated garlic and 2 teaspoons salt in a medium bowl until thoroughly combined. Set aside until ready to assemble.
  • Lightly oil a 13-by-9-inch glass or ceramic baking pan. Spread 1 cup of the ragu evenly in the bottom of the pan. Lay a single layer of noodles over the ragu (if you're using long noodles, you will need to cut some noodles to fill the gaps). Spread 1 1/2 cups of the ragu over the noodles. Dollop 3/4 cup of the ricotta mixture over the ragu and spread lightly with a small offset spatula. Sprinkle with 1/2 cup of the mozzarella, followed by another layer of noodles. Repeat with the remaining pasta, ragu, ricotta mixture and mozzarella, creating 4 layers of pasta and ending with the remaining 1/2 cup mozzarella. (The lasagna should come just above the top of the pan but it will sink down slightly as it cooks.) Top with the remaining 1/4 cup Parmesan.
  • Lightly oil a piece of foil and cover the pan. Put the pan on a rimmed baking sheet to catch any drips. Bake the lasagna until bubbling gently around the edges, about 1 hour.
  • Remove the lasagna from the oven and increase the oven temperature to 450 degrees F. Remove the foil and then continue to bake the lasagna until the top is browned and crisp around the edges, 15 to 20 minutes.
  • Let sit 10 minutes before serving.

¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. 12 ounces sliced pepperoni
1 pound mushrooms, sliced
3 cloves garlic, minced
2 green bell peppers, diced

One 28-ounce can whole tomatoes
One 15-ounce can tomato paste
1/4 cup prepared pesto
1/3 cup finely minced fresh parsley
2 teaspoons salt

1/2 cup sliced black olives
30 ounces whole-milk ricotta
2 eggs, beaten
1/2 cup grated Parmesan, plus extra for sprinkling

Steps:

  • Drizzle the olive oil into a large pot over medium-high heat. Add the sausage, ground beef and pepperoni and stir, breaking the meat up as it begins to cook. Continue cooking, stirring occasionally, until brown, and then remove the meat to a plate.
  • Add the mushrooms, garlic, bell peppers and onions to the pot and saute until the mushrooms have softened and the others have some color. Add the meat back in along with the tomatoes, tomato paste, pesto, half the parsley, 1 teaspoon of the salt, 1/2 teaspoon of the black pepper and the crushed red pepper flakes. Stir, reduce the heat to low and simmer for 25 to 30 minutes. Add the black olives and stir.
  • Preheat the oven to 350 degrees F.
  • To make the cheese mixture: Combine the ricotta and eggs in a large bowl. Add the Parmesan, the rest of the parsley and the remaining 1 teaspoon salt and 1/2 teaspoon pepper. Stir the mixture until totally combined.
  • To assemble the lasagna: Overlap 4 lasagna noodles in the bottom of a large rectangular baking dish. Spoon half the cheese mixture over the noodles and smooth it out into a flat layer. Lay half of the mozzarella slices on top followed by half of the meat sauce. Repeat these layers once more and top with some extra Parmesan. Bake until heated through and bubbly on the top, 40 to 45 minutes.

LASAGNA ROLL-UPS

This is the quick and lunch-friendly version of lasagna. Try tucking in a couple pieces of pepperoni for an easy variation. And be sure to cook an extra noodle in case one tears!

8 lasagna noodles
Olive oil, for tossing noodles
1 1/2 cups part-skim ricotta
3 tablespoons grated Parmesan
5 sun-dried tomatoes packed in oil, finely chopped
1 cup loosely packed fresh basil leaves, torn
24 pepperoni slices, optional
1 cup marinara sauce, for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package directions. You may want to cook an extra noodle or 2 in case they rip. Drain and toss with some oil. Drape the noodles over the edge of the pot, without overlapping, to cool.
  • Meanwhile, mix the ricotta, Parmesan, tomatoes and 1/2 teaspoon salt together in a medium bowl.
  • Lay out the noodles and evenly divide the ricotta mixture on the noodles, spreading it from end to end of each noodle. Top each with about a few pieces of basil and 3 pepperoni slices per roll if using. Roll up and cut each roll in half to make 16 cylinders. Pack 4 pieces, ruffle-side up, in each lunch container and refrigerate. Pack 1/4 cup of marinara sauce in a separate container with each serving.

EASY LASAGNA WITH PEPPERONI



Easy Lasagna With Pepperoni image

Pepperoni isn't just for pizza. Layered between sheets of lasagna with creamy, gooey cheese and a simple crushed tomato marinara, this humble little sausage adds a spicy, peppery, and very flavorful bite to the baked pasta classic. Many recipes call for additional meat-ground beef, other sausages, and such. Here, I used only pepperoni so the full flavor comes through without being hidden behind other ingredients. It also makes this one of the easiest, quickest lasagnas you'll ever put together. Not much cooking at all. Note: This recipe uses a total of 80 small pepperoni slices (the regular kind at the deli), with 40 pieces per layer in a 13 X 9-inch baking dish-about seven ounces of sausage total.

2 garlic cloves, finely chopped

Steps:

  • Preheat the oven to 350° F.
  • Cook the lasagna noodles in boiling, salted water 8-9 minutes. Drain and rinse under cold water.
  • Heat a skillet over medium-low heat and add 1 tablespoon of olive oil. Add the garlic and onion and cook 3 minutes, stirring frequently. Add the tomatoes and oregano and season with salt and pepper.
  • Bring to a light simmer then reduce the heat and cook slowly, covered, 10 minutes. Remove from the heat and let cool 10 minutes (or place the sauce in a sealable container and refrigerate until ready to use-in a few hours or overnight).
  • Stir together the ricotta, parsley, and tarragon in a small bowl.
  • To assemble the lasagna, lightly oil a 13 X 9-inch baking dish. Spread 1/2 cup of the tomato marinara in the bottom of the dish and top it with 4 noodles, slightly overlapping. Spread 1/2 of the ricotta-herb mixture over the noodles, then scatter 1/3 of the mozzarella and 2 tablespoons of Parmesan cheese on top.
  • Cover the cheeses with 40 slices of pepperoni (5 rows of 8 pieces).
  • Place 4 more lasagna noodles on top and spread with 1/2 of the remaining tomato sauce and the remaining 1/2 of the ricotta-herb mixture. Scatter another 1/3 of the mozzarella and 2 more tablespoons of Parmesan cheese on top. Cover with the remaining 40 slices of pepperoni.
  • Lay the last 4 noodles on top and spread with the remaining tomato sauce. Scatter the remaining 1/3 of the mozzarella and remaining 2 tablespoons of Parmesan cheese on top and sprinkle with dried oregano.
  • Bake uncovered until the cheese is bubbly and the top begins to brown, 30-35 minutes. Remove and let rest 10 minutes.
  • To serve, cut the lasagna into 6 pieces and serve.

1/2 pkg pepperoni
1 can(s) spaghetti sauce
1 can(s) diced tomatoes
1 1/2 c cottage cheese or ricotta cheese
4 c mozzerella cheese (any white cheese)
1 clove garlic
1 pkg ready to cook lasagna noodles

Steps:

  • 1. Start by browning the Hamburger Meat, Use a cheese grater to grate Garlic and and to Hamburger meat. Pre Heat over to 350.
  • 2. Add Spaghetti sauce and Canned Diced tomatoes to the Hamburger meat
  • 3. In a lasagna pan place a small amount of sauce into bottom to prevent noodles from sticking... In this order make three layers: Noodles, sauce, cottage cheese or ricotta, Pepperoni, and white cheese, noodles... reapeat for 3 full layers... should end with white cheese on top...Bake for 45 min to 1 hour... Baked covered with foil, uncover alst 15 min so that top can brown... let rest for 10 minutes before serving so Lasagna holds its shape...the reason for white cheese and lean meat is that the pepperoni is oily, too many oils will prevent lasagna from holding its shape...

SAUSAGE-PEPPERONI LASAGNA

If you're counting calories and/or cholesterol, you'll want to skip this one. On the other hand, if you want your kids to kiss your feet and promise to do their homework, you might try it. :) My children are grown now, but they (and their friends) still beg for it. The original recipe, which I've modified slightly, was printed in Southern Living many years ago. Don't let the fractions throw you. Just 'guesstimate', saving enough for the top layer that it doesn't dry out. Serve with a salad and garlic bread and eat 'til you pop!

1 (15 ounce) carton ricotta cheese
2 tablespoons chopped fresh parsley (can substitute 1 Tablespoon dried)
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 cup freshly-grated parmesan cheese
1 tablespoon margarine
2 cups shredded mozzarella cheese, divided (or more!)
1 (3 1/2 ounce) package sliced pepperoni

Steps:

  • Brown sausage thoroughly in a large skillet over medium heat, stirring to crumble; drain well.
  • Return sausage to skillet and add spaghetti sauce, stirring well to mix.
  • Cook lasagna noodles according to package directions, except omit salt if called for.
  • While pasta cooks, break egg into mixing bowl and beat lightly.
  • Add ricotta, parsley, oregano, pepper and grated Parmesan to beaten egg, stirring well to mix.
  • When lasagna is done, pour into a colander and run cold running water over the noodles.
  • (Be sure not to skip this step. They stick together something awful and will be impossible to layer if you don't rinse away all the starch.) Preheat oven to 375 degrees.
  • Lightly grease a 9" x 13" baking dish on bottom and sides with margarine.
  • Spoon a small amount of meat sauce into dish, spreading to coat lightly.
  • (Use 1/2 cup or less-- just enough to prevent the bottom layer of noodles from sticking. It should be more like a'film' than a layer.) Place half the noodles in bottom of dish, overlapping slightly if necessary.
  • Spoon half the ricotta mixture on top, using a rubber spatula to spread evenly over all.
  • Sprinkle with 1/3 of mozzarella.
  • Spoon on 1/3 the remaining meat sauce.
  • Repeat layers.
  • Cover top of dish with pepperoni slices.
  • Pour remaining meat sauce over all, spreading evenly.
  • Bake at 375 degrees for 20 minutes.
  • Remove from oven and sprinkle remaining mozzarella on top.
  • Bake an additional 5 minutes, or until cheese has melted.
  • Let stand 10 minutes before cutting into squares and serving.
  • (It won't affect the taste if you don't let it'rest', but it will be terribly runny instead of cutting nicely.).

1 egg, beaten
1 container (15 oz.) POLLY-O Natural Part Skim Ricotta Cheese
6 Tbsp. KRAFT Grated Parmesan Cheese
1-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1 pkg. (3 oz.) OSCAR MAYER Pepperoni, divided
1/2 cup each chopped green peppers and red onions, divided
2 cups CLASSICO Tomato and Basil Pasta Sauce
1/2 cup water
8 lasagna noodles, uncooked

Steps:

  • Heat oven to 350°F.
  • Mix egg, ricotta and Parmesan in medium bowl until blended. Stir in 1 cup mozzarella.
  • Reserve 9 pepperoni slices, and 2 Tbsp. each peppers and onions. Quarter remaining pepperoni slices; place in separate medium bowl. Add pasta sauce, water, remaining peppers and onions; mix well.
  • Spread 1/2 cup sauce onto bottom of 8-inch square baking dish sprayed with cooking spray. Top with layers of 2 lasagna noodles, broken to fit; 1/3 of the ricotta mixture; and 1/2 cup of the remaining sauce. Repeat layers twice. Top with remaining noodles, sauce, mozzarella, and reserved pepperoni, peppers and onions. Cover with foil sprayed with cooking spray.
  • Bake 45 min. or until heated through, uncovering for the last 10 min. Let stand 10 min. before cutting to serve.

This recipe is by Guy Fieri off the Food Network. It looks really tasty! Prep & cook time are for the lasagna, the tomato sauce will take about the same amount of time. The nice thing with this recipe is that you could switch out the homemade tomato sauce for your favorite and I'm sure it will be great. The pepperoni he used was the large round one, not the small ones like you see on pizzas. Don't let them get to crispy as they harden as they cool down.

2 lbs lasagna sheets
2 cups hand cut 1/8 inch slices pepperoni
1 lb ricotta cheese
16 ounces shredded mozzarella cheese
2 lbs bulk Italian sausage, cooked
3/4 cup grated parmesan cheese
3 ounces extra virgin olive oil
1 yellow onion, minced
5 medium garlic cloves, crushed
6 cups skinned and dice roma tomatoes
2 tablespoons thinly sliced fresh basil leaves
1 tablespoon minced fresh oregano leaves
salt & pepper

Steps:

  • Make sauce first - see below.
  • Preheat over to 375 degrees.
  • Boil 6 qts water, add pinch of slat and cook pasta to almost done. Remove from water and shock in ice bath.
  • In medium sauce pan add pepperoni and saute over medcium heat until crispy. Remove from heat and drain on a paper towel.
  • in a 10 X 14 X 3 baking pan or dish, pour 1 cup of tomato sauce in bottom and around side.
  • Layer lasagna sheets on the bottom of the pan overlapping by 1/2 inch. Add 1/3 amt. of ricotta, 1/3 amt of mozzarella, 1/3 amt of sausage, then sprinkle generously with the Parmesan, add 1/2 cup tomato sauce and 1/4 cup of pepperoni. Repeat this 2 more times.
  • On the very top sheet, top with remaining ricotta, tomato sauce, mozzarella, pepperoni, and dust with Parmesan. Bake for approx 45 minutes. Remove from oven, let sit 15 minutes.
  • TOMATO SAUCE - In sauce pan, heat olive oil. Add onion and cook over medium to low heat until transparent. Add garlic and cook until almost brown. Then add tomatoes and cook for 1/2 hour over low to medium heat. Add the basil and oregano and continue to cook for another 1/2 hour. Season to taste with salt & pepper.

10 lasagna noodles
1 1/2 lbs ground beef
1 cup sliced pepperoni
2 cups fresh spinach
1 (20 ounce) jar marinara sauce
water
15 ounces ricotta cheese
2 cups mozzarella cheese, grated
1/2 cup parmesan cheese, grated
2 cups colby-monterey jack cheese, grated
1 egg
1/3 cup milk
oregano
garlic powder
onion powder
chili powder
salt
pepper

Steps:

  • Cook lasagna noodles as directed on package. Drain and let cool.
  • Meanwhile, cook ground beef seasoned with salt, pepper, onion powder, garlic powder, chili powder and oregano to taste.
  • Add Pepperoni when hamburger is about 3/4 cooked through and cook together until hamburger is done.
  • Rinse spinach and pat dry.
  • Add spinach to pan and saute until the spinach wilts.
  • Drain excess oil from pan.
  • Add jar of marinara sauce plus 1/2 jar of water and let cook on medium low heat for about 15 minutes.
  • Mix ricotta cheese, egg, milk, salt and pepper in small bowl.
  • Mix mozzarella, parmesan and colby jack in small bowl.
  • Put about 2 heaping spoonfuls of marinara mixture on bottom of pan.
  • layer as follows: five lasagna noodles, 1/2 of ricotta cheese mixture, 1/2 of marinara mixture, 1/2 of grated cheese mixture then repeat.
  • Cook at 350 degrees until heated through. About 30 minutes.

1 (16 ounce) box lasagna noodles
1 (28 ounce) jar spaghetti sauce
1 lb ground beef
1/2 lb pepperoni slice (I like to use large size from the deli)
2 (8 ounce) packages pre-shredded mozzarella cheese
1 (8 ounce) container cottage cheese
1 (8 ounce) container ricotta cheese
1/2 lb provolone cheese (slices)

Steps:

  • Boil lasagna noodles according to package directions. Drain, rinse and allow a few minutes to cool.
  • While lasagna noodles are cooking, brown ground beef in a frying pan until cooked. Drain excess grease.
  • Mix together in a bowl cottage cheese, ricotta cheese, and 1 8 oz package of shredded mozzarella.
  • Place 3 lasagna noodles in a 13 x 9 inch baking pan. Spread 1/2 of the cheese mix evenly over the noodles. Then put 1/2 of the cooked ground beef, followed by 1/2 of the pepperoni slices and 1/2 of the provolone slices. Repeat layers starting with the lasagna noodles, then place 3 lasagna noodles on the top.
  • Pour spaghetti sauce over lasagna, then top off with 8 oz shredded mozzarella.
  • Cover and bake in 350 degree oven for 45 minutes.
