The Best Homemade Smash Burgers image

Number Of Ingredients 18

1/2 stick butter, melted
1 tablespoon worcestershire sauce
1/2 tablespoon fish sauce (trust me, adds a great depth of flavor)
a few dashes of liquid smoke
1 pound ground chuck (80/20)
Kosher salt and black pepper, to taste
Cheese, any kind you choose)
Brioche buns, buttered and toasted
Toppings of choice (try to keep it simple if you can)
1/4 cup mayo
1/4 cup ketchup
1/4 cup spicy brown mustard
2 minced garlic cloves
1 tablespoon white vinegar
1/8 teaspoon cayenne pepper
1/8 teaspoon smoked paprika
salt and pepper, to taste
pinch of sugar, to taste

Steps:

  • Mix all ingredients for the burger sauce, and set aside in the fridge. Mix all the Burger Juice ingredients together in a small bowl. In another medium-sized bowl, add the beef. Pour the Burger Juice into the beef, and gently break it up with a spoon or your hands and GENTLY mix thoroughly. Do not over-work your meat, be very very gentle with it. Once it's thoroughly mixed, scoop into 3-4oz sized balls. Cover the burger balls with plastic wrap and refrigerate for a minimum of a half hour. You want the meat to be super cold. You could also pop into your freezer for about 15 minutes.
  • When ready to cook, heat a large cast iron skillet over high heat until SUPER HOT. Drop a tiny sprinkle of water to test it, if it immediately sizzles and bounces around and disappears, it's ready. No need to add oil, there's plenty of fat in the burger. Remove your burgers from the fridge or freezer and sprinkle them with kosher salt and pepper. Place about 3 to 4 balls in the skillet, leaving room for them to be smashed down. After 30 seconds of searing, smash them all the way down until they can't be smashed anymore, with a large heavy skillet. Leave them alone and let them cook for about 3 to 4 minutes, or when the edges start to turn brown. Flip them over and immediately place a slice of cheese on top of each patty. When the cheese melts, they're ready, about 1 to 2 minutes longer.
  • Build your burger with the toppings of your choice and enjoy!

12 Jacob's cream crackers
8 sprigs of fresh flat-leaf parsley
500 g quality minced beef
2 heaped tablespoons Dijon mustard, optional
1 large free-range egg
olive oil
1 cos or round lettuce
3 ripe tomatoes
1 red onion
3-4 gherkins
6 slices of Cheddar cheese, optional
6 quality burger buns

Steps:

  • Wrap the crackers in a tea towel and smash up until fine, breaking up any big bits with your hands, then tip into a large bowl.
  • Finely chop the parsley (stalks and all), then add to the bowl with the mustard (if using), and the minced beef.
  • Crack the egg into the bowl, then add a good pinch of sea salt and black pepper.
  • With clean hands, scrunch and mix everything up well. Divide into 6 and pat and mould each piece into a roundish shape, roughly 2cm thick.
  • Place the burgers onto a plate, drizzle with oil, then cover and place in the fridge until needed - this will help to firm them up.
  • To cook the burgers, preheat a large griddle or frying pan for 4 minutes on a high heat, then turn the heat down to medium.
  • Place the burgers on the griddle or into the pan, then use a spatula to lightly press them down, making sure the burger is in full contact with the pan.
  • Cook the burgers for 3 or 4 minutes on each side, depending on how you like them - you may need to work in batches.
  • Meanwhile, wash and dry a few small lettuce leaves, tearing up the larger ones. Slice the tomatoes, peel and finely slice the red onion, then slice the gherkins lengthways as finely as you can.
  • Place all the veg toppings, and the cheese (if using) on a platter and put in the middle of the table with plates, cutlery, ketchup and drinks.
  • Once cooked, remove the burgers to a plate and carefully wipe the pan clean with a ball of kitchen paper.
  • Halve the burger buns and lightly toast them in the pan, then serve up.

½ cup crushed saltine crackers (or Panko breadcrumbs)
1 large egg
2 tablespoons Worcestershire sauce
2 tablespoons milk
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper

Steps:

  • Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is smooth, but stop once the mixture looks even. (Overmixing can create a dense heavy texture.)
  • Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 - 1/3 pound grill or skillet patties, or 12 thin griddle patties.
  • Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
  • Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
  • For thick patties: Grill or fry the patties for 3-4 minutes per side.
  • For thin patties: Cook on the griddle for 2 minutes per side.
  • Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

Spice Mix, optional, recipe follows
1 tablespoon vegetable oil
4 slices cheese, such as Cheddar, American, Saga blue cheese, and Swiss, optional
4 soft hamburger-style buns, split
4 slices beefsteak tomatoes, optional
Assorted lettuces and greens, such as iceberg, romaine, or watercress
Assorted mustards, such as whole-grained, Dijon, or French's, optional
Mayonnaise, optional
Ketchup, optional
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons onion powder
Hot Sauce, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
  • Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
  • When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
  • Timing for a countertop grill:
  • For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
  • For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
  • For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
  • Combine all ingredients.

I must give credit where credit is due. I took this recipe from a TV grilling show called "Red Hot & Ready". The burgers were originally called "Caesar Burgers" but I think my name is more appropriate. These burgers are without a doubt the best I have ever had.

1 small onion, diced
2 tablespoons horseradish
2 tablespoons Worcestershire sauce
1 ounce garlic, finely diced
1 dash celery salt

6 ounces butter
3 teaspoons Tabasco sauce
1 teaspoon crushed red pepper flakes

Steps:

  • First off we must prepare a spicy butter mixing 6 oz soft butter in bowl with 1 teaspoon tabasco sauce and 1 teaspoon crushed red pepper.
  • Roll spicy butter into a log using plastic wrap and place in fridge.
  • Combine remaining ingredients in a bowl and mix well.
  • Take hardened spicy butter log from fridge, remove plastic wrap and cut butter into discs.
  • Take ground beef mix and shape into 6 oz balls, inserting spicy butter discs in middle (the spicy butter will flavour and keep the burgers moist while grilling).
  • Flatten balls into uniform patties, no more than an inch think, to ensure proper cooking.
  • Grill to desired temperature, serve on toasty buns and enjoy!

8 slices bacon
1 1/2 pound ground beef (20% + fat)
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)

2 large onions (sliced into rings)
8 slices Swiss cheese (or cheddar cheese)
4 hamburger buns
lettuce
tomato slices

Steps:

  • Fry the bacon: In a large skillet until nice and crisp. Set aside.
  • Form the patties: Separate beef into 4 equal portions. Use your hands to form into patties that are about 4 inches (10 cm) in diameter. Don't overwork the meat, soft patties = juicy patties. Season each patty generously with salt and pepper on both sides.
  • Caramelize the onions: Heat 1 tbsp of the olive oil in a large skillet. Add the onion and cook until wilted and caramelized. This should take about 15 to 20 minutes. Season the onion with salt and pepper then transfer to a plate.
  • Cook the patties: Heat the remaining 1 tbsp of olive oil over high heat in the same skillet. To avoid the patties from shrinking up and having a dome, made a small dent in the center of each patty. Add two patties to the skillet and cook for 2 minutes until deep golden brown. Do not press anymore and only flip patty once the one side has a great crust. Once you flip the patty cook for 1 more minute. Top with 2 slices of cheese, cover the skillet with a lid and cook for another minute until the cheese melts. Repeat with remaining burgers.
  • Serve: Toast the cut side of the buns lightly. Spread the base of the buns with the condiment of choice, such as ketchup, mustard or relish or all. Top with hamburger, patty, pile with onions, 2 slices of bacon, tomatoes, lettuce, pickles and more condiments if preferred. Add the top bun and serve immediately.

  • Start with medium ground beef. It has a lot more flavour than lean or extra-lean beef, and most of the fat drips away while it’s cooking.
  • Mix the meat with your hands, not utensils. This will ensure you don’t over-mix the meat, and it creates a nice texture.
  • Keep your patties thin. Take a handful of ground beef and shape it into a ball, then flatten it out. Don’t make the patties too thick — half an inch to an inch thick is the perfect size.
  • Indent your patties. Use your thumb to make a little impression in the middle of each patty to prevent them from puffing up into balls as they cook.
  • The grill should be hot before you add the patties. This will ensure they don’t stick, and they’ll achieve that caramelized exterior.

  • Use grated cheese. It melts faster than sliced, while still giving your burger that extra oomph. (We like using smoked cheddar.)

  • Choose your meat. You want your burger to remain juicy so avoid going too lean. Choose a standard minced meat (usually around 20 % fat) or if you are set on leaner cuisine then 10 % fat is ok, don't go for less.
  • Add your flavourings. The world is your oyster when it comes to flavouring your burgers. Grated onion, finely chopped spring onion, crushed garlic, ground spices (cumin, coriander, ground chilli, fajita spice mix etc), mustard, chopped fresh or dried herbs, ground black pepper - pick the flavours you like.
  • Bind it. If you're going for a leaner meat or adding bulky ingredients (eg spring onions, onions, chillies), add an egg and a handful of breadcrumbs to bind the burgers.
  • Shape it. Give everything a thorough mix, it's good to get your hands in for this, then shape into burgers. "Squash the burgers really flat before you cook them.
  • Season it. "Don't add salt to the ground meat before it's shaped, it'll draw the liquid out of the meat leaving you with a dry burger. Instead sprinkle the outside with salt as it cooks," adds Cassie.
  • Chill it or freeze it. "Chill your burgers for at least an hour before you cook them," says senior food editor Barney. "This will help them keep their shape when they're cooking and stop them falling apart."
  • Cook it. Pop your burgers on the barbecue or in a hot, non-stick frying pan with a little oil. Cook for 5 - 6 minutes each side for medium and 8 - 9 minutes on each side for well done.

At this point the dough is very moist and sticky and not really able to be kneaded as you traditionally would. You will be tempted to dust with flour resist the urge to start.
