  • Place all ingredients in a blender; cover and process until smooth. Transfer to a bowl or jar; cover and store in the refrigerator.

1/2 cup purchased or homemade mayonnaise
1/4 cup sour cream
1 scallion, chopped (about 2 tablespoons)
1 1/2 to 2 teaspoons anchovy paste
1/3 cup chopped fresh flat-leaf parsley
2 to 3 tablespoons chopped fresh chives
2 tablespoons chopped fresh tarragon
3 to 4 teaspoons freshly squeezed lemon juice (from 1 lemon)
Freshly ground black pepper

Steps:

  • In a blender or food processor, blend together the mayonnaise, sour cream, scallion, anchovy paste, parsley, 2 tablespoons chives, tarragon, and 2 teaspoons lemon juice, stopping and scraping down the sides occasionally, and blending until the dressing turns green. Taste and blend in the remaining tablespoon chives and 1 teaspoon lemon juice, if desired. Season the dressing with freshly ground black pepper. DO AHEAD: The dressing can be prepared ahead and refrigerated, in an airtight container, up to 4 days.

1 cup packed watercress or spinach leaves, stemmed
2 tablespoons tarragon leaves, rinsed

2 anchovy fillets, preferably salt-packed

1 tablespoon plus 1 teaspoon Champagne vinegar or sherry vinegar
1/2 cup canola oil or grapeseed oil
1/2 cup mayonnaise, preferably homemade (see note)

Steps:

  • For the dressing: Puree the sour cream, mayonnaise, lemon juice, parsley, tarragon, garlic salt and scallions in a blender until very smooth. Set aside.
  • For the sandwich: Add the dressing to a medium bowl with the chicken, celery and red onion. Mix until well combined. At this point you can make sandwiches or refrigerate until you are ready to serve. If you are serving sandwiches right away, place a scoop of chicken salad on top of a piece of bread. Top with the tomato slices and season with salt and pepper. Top with the cucumber slices, a mound of sprouts, the bacon and a second slice of bread. Repeat to make 3 more sandwiches.
