HOMEMADE PAN RELEASE OR GOOP (COOKING "SPRAY")
This is a great way to keep your cakes from sticking to the pan and it's much cheaper than buying the non-stick cooking spray. It's so easy to make and you can store it in the refrigerator for months.

Steps:
- Place the shortening in a large mixing bowl. Beat with an electric mixer on medium high for about a minute. With the mixer on low, gradually add the oil and flour. Turn mixer up to medium high and mix for another minute or until smooth.
- Store in airtight container in refrigerator.
- When ready to use: Dip a pastry brush into mixture and spread over bottom and sides of cake pan.

HOMEMADE PAN RELEASE
Sick of having your cakes stick in the pans, even when you use baking spray? Try this homemade pan release recipe, also known as "cake goop!" It's easy to make and use, requires just a few ingredients, and is MAGIC when it comes to releasing cakes from their pans!

Steps:
- Add all ingredients to the bowl of a stand mixer fitted with a paddle attachment.
- Mix on low speed until the flour is moistening, then turn the speed to medium-low and mix until you have a smooth paste. (Alternately, you can use a firm spatula and stir everything together by hand.)
- Sometimes there will be small chunks of shortening in your pan release. This doesn't hurt anything, but if it bothers you, heat the pan release in very short intervals in the microwave (5-8 seconds), stirring after each one, until it is melted and smooth.
- Transfer the pan release to a container and label with the date. Store at room temperature out of direct sunlight. If it separates during storage, simply stir it together again.
- To use, dip a silicone pastry brush in the pan release and brush a thin, even layer on the bottom and sides of your cake pan before adding any cake batter.

HOMEMADE CAKE RELEASE (CAKE GOOP)
A spreadable paste to coat the inside of cake pans, this homemade cake release is a one-step alternative to buttering and flouring your pans-plus it doesn't leave a floury film on the surface of your cake. It's also a smart alternative to nonstick cooking spray, which can pool at the bottom of pans and isn't recommended for nonstick surfaces. Cake release is especially beneficial when coating intricate pans, since it can be brushed into nooks and crannies so that the design of the cake comes out clean.

- Whisk together the shortening and vegetable oil in a medium bowl until smooth, 2 to 3 minutes. Whisk in the flour until it becomes a smooth paste. When ready to use, spread a thin layer using a pastry brush on the inside of a cake pan before adding the batter and baking.
- Store cake release in an airtight container at room temperature for up to 1 month.
PAN RELEASE, PROFESSIONAL PAN COATING (BETTER THAN PAM SPRAY!)
If you bake and cook everyday then this is a must to have in your cupboard, it's so much cheaper than using cooking spray and works even better than Pam cooking spray, no chemical fumes and will not leave burnt on black residue on the edges of your pans like cooking spray will and will keep forever in your cupboard --- for baking recipes using chocolate you may use 1/2 cup unsweetened cocoa powder in place of white flour or 1/4 cup each cocoa powder and flour --- this may be increased or decreased sucessfully just make certain that *all* three ingredients are the same amounts or the mixture will not work as well ;-)

- Place all ingredients in a mixing bowl.
- Using an electric mixer beat until mixture has increased in volume slightly and resembles marshmallow cream.
- Place in a container with a lid and store on the counter or in a cupboard (in hot weather it may be refrigerated).
- The mixture tends to separate slightly upon sitting in your cupboard or refrigerator so mix before using, then brush pans using a pastry brush or a clean paper towel.
