3 tbsp. butter
4 tbsp. garlic, minced
1 bag spinach
Salt and pepper, to taste
2 cans artichoke hearts, rinsed and drained
3 tbsp. butter (additional)
3 tbsp. flour
1 1/2 c. whole milk (more if needed)
1 package (8 ounce) softened cream cheese
1/2 c. crumbled feta
1/2 c. grated parmesan
3/4 c. grated Pepper Jack cheese
1/4 tsp. cayenne
Extra grated Pepper Jack
Pita wedges, tortilla chips, crackers

Steps:

  • Melt 3 tablespoons butter in a skillet over medium heat. Add the minced garlic and cook for a couple of minutes. Crank up the heat a bit and throw in the spinach. Stir around and cook for a couple of minutes until the spinach wilts. Remove the spinach from the skillet and put it in a small strainer. Squeeze the excess juice back into the skillet. Set the spinach aside.
  • Throw in the artichokes and cook over medium high heat for several minutes, until liquid is cooked off and artichokes start to get a little color. Remove the artichokes.
  • In the same skillet or a different pot, melt 3 additional tablespoons of butter and whisk in 3 tablespoons of flour until it makes a paste. Cook over medium-low heat for a minute or two, then pour in milk. Stir and cook until slightly thickened; splash in more milk if needed.
  • Add cream cheese, feta, Parmesan, pepper jack, and cayenne and stir until cheese are melted and sauce is smooth. Chop artichokes and spinach and add to the sauce. Stir to combine.
  • Pour into buttered baking dish. Top with extra grated pepper jack and bake at 375 for 15 minutes, or until cheese is melted and bubbly.
  • Serve with pita wedges, chips, or crackers!

2 Tbsp Lemon Juice
1/2 cup Canned Coconut Cream ((120ml) Unsweetened)
1 tsp Distilled White Vinegar
1 tsp Salt
1 tsp Onion Powder
1/2 cup Vegan Mayonnaise ((120g))
3/4 cup Nutritional Yeast ((45g))
1 Tbsp Olive Oil
1 Medium Onion (White, Yellow or Brown, Chopped)
1 tsp Crushed Garlic
1/2 tsp Dried Rosemary
7 ounces Marinated Artichokes ((200g))
4 cups Baby Spinach ((160g) Packed cups)

Steps:

  • Preheat the oven to 375°F (190°C).
  • Add the soaked cashews, lemon juice, coconut cream, white vinegar, salt, onion powder, vegan mayonnaise and nutritional yeast to the blender and blend until smooth. Then leave it in the blender for the moment and set aside.
  • Add the olive oil to a pan along with the chopped onion, crushed garlic and rosemary and sauté until the onions are softened.
  • Then remove half the onions from the frying pan and place them into the blender jug along with the cream cheese mixture and blend again. Leave it in the blender again and set aside.
  • Add the marinated artichokes to the frying pan with the remaining onions and sauté, letting the artichokes break up as you fry them with the onions. When the artichokes are softened then add in all the spinach and fry it with the artichokes and onions until wilted.
  • Transfer the spinach and artichoke mix to an oven safe 9-inch round dish.
  • Pour over the cream cheese from the blender and fold it in with the spinach and artichokes.
  • Place into the oven and bake for 15-20 minutes until lightly browned on top.

⅓ cup mayonnaise
2 cloves garlic (minced)
1 ½ cups shredded mozzarella cheese (divided)

½ cup shredded gruyere cheese
10 oz frozen chopped spinach (defrosted and squeezed dry)
14 oz marinated artichoke hearts (chopped)
1 baguette (optional)
olive oil

Steps:

  • Preheat oven to 375°F.
  • In a bowl combine cream cheese, sour cream, mayonnaise and garlic with a hand mixer until fluffy.
  • Stir in parmesan cheese, 1 cup mozzarella cheese, gruyere cheese, spinach, and artichokes.
  • Place into a 9x9 casserole dish (or deep dish pie plate) and top with remaining ½ cup mozzarella cheese.
  • Bake 25-30 minutes or until bubbly and cheese is browned.

Every time I have a get together, my spinach dip is a staple. It is requested every time and I never have any left over. I just made it the way I liked it.

64 ounces sour cream
1 large onion, finely diced
2 (8 ounce) boxes frozen spinach
2 (1 1/4 ounce) packages Knorr vegetable soup mix
1 large round loaf pumpernickel bread
onion salt
vegetables, for dipping (your choice)
nacho cheese flavor Doritos or pretzel stick, are also very tasty

Steps:

  • in a large bowl, combine sour cream, soup mix, onions and mix very well.
  • Drain and squeeze the moisture out of the spinach and add to sour cream mixture.
  • mix very well.
  • Add onion salt to taste.
  • Refrigerate for at least an hour.
  • Meanwhile, hollow out the pumpernickel round loaf.
  • Tear the bread into bite size pieces.
  • Cover so they don't get hard.
  • Slice vegetables of choice such as broccoli, green peppers, celery sticks, and carrots.
  • Remove dip from fridge, and mix well again.
  • Taste for desired seasoning, add more onion salt to taste.
  • Spoon into pumpernickel and serve with bread pieces and veggies.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.)
