This sour cherry crisp uses fresh tart cherries with an easy gluten-free and vegan topping to create a patriotic and easy summer dessert everyone will love!

4 cups sour (tart) cherries, pitted (*see note)
1 tablespoon lemon juice
2 tablespoons coconut sugar
1 1/2 tablespoons arrowroot powder
1/2 cup blanched almond flour
1/2 cup sliced almonds
1/4 cup sorghum flour (or oat flour)
3 tablespoons coconut sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 teaspoon salt
1/4 cup coconut oil, softened but not melted

Steps:

  • Preheat oven to 350°F.
  • Place sour cherries in a large bowl. Add lemon juice and toss to combine.
  • Add the coconut sugar and arrowroot powder to the bowl and stir until well combined. Transfer the mixture into a pie dish, cast iron skillet or baking dish.
  • Add all the ingredients for the filling except the coconut oil in another bowl. Stir together until well combined.
  • Add the softened coconut oil to the bowl and work into the mixture with either the tines of a fork or your fingers until a fine crumble consistency results.
  • Spread the topping over the berries in the baking dish in an even layer.
  • Bake for 40-45 minutes until cherries are bubbly and crisp topping has turned golden brown.
  • Remove from the oven and let sit for at least 10 minutes before serving.

4 cups pitted sour cherries, with their juice
4 tablespoons sugar
1/2 cup all-purpose flour
1/4 cup whole-wheat flour
1/3 cup light brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
6 tablespoons cold unsalted butter, cut in pieces
1/4 cup chopped walnuts
1/4 cup rolled oats

Steps:

  • Preheat oven to 375 degrees. Combine the cherries and the sugar and let stand for 10 minutes. Place in a sieve and let drain very well. Place in a 9-inch pie plate and set aside.
  • In a medium-size bowl, combine the all-purpose and whole-wheat flours, sugar, salt and cinnamon. Rub in the butter until the mixture resembles coarse meal. Add the walnuts and oats and toss lightly to combine. Cover the cherries with the topping and bake until the topping is crisp and the juices are bubbling, about 40 minutes. Place on a rack to cool slightly before servings.

This was out of inspiration for something to do with my fresh sour cherries. Only got a few this year so wanted to make something really tasty! I think this did it. Very simple and can be adjusted to your needs if fresh sour cherries are not available, but I do not recommend using Bing or sweet red cherries for this. Use sour cherries in the can if you can find them. Enjoy! Refrigerate when completely cooled.

1 (9 inch) prepared pastry for a single-crust pie
4 cups fresh sour cherries, pitted
1 cup white sugar
4 tablespoons cornstarch, or more as needed
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup packed light brown sugar
⅔ cup all-purpose flour
⅔ cup rolled oats, or more to taste
1 tablespoon ground cinnamon
½ teaspoon salt
½ cup butter, cut into small cubes

Steps:

  • Line the bottom of an oven with aluminum foil to catch spills. Preheat the oven to 400 degrees F (200 degrees C). Line a 9-inch square baking dish with the pie crust.
  • Place cherries in a bowl. Let sit in the refrigerator for about 4 hours until juices start to come out. Gently press down on top of the cherries to release juice. Pour off 3/4 cup juice, reserving cherries in the bowl.
  • Pour juice into a small saucepan over medium heat. Mix sugar, cornstarch, and cinnamon together. Stir mixture into the juice before it starts to steam. Bring mixture to a boil, stirring constantly. Remove from heat and keep stirring until mixture starts to thicken, 3 to 5 minutes. Stir in vanilla and almond extracts.
  • Pour juice mixture into the bowl with the cherries; stir until combined. Pour mixture into the prepared crust.
  • Bake in the preheated oven for 40 minutes while preparing the crumb topping.
  • Mix brown sugar, flour, oats, cinnamon, and salt together in a large bowl. Cut in butter pieces with a fork until they're the size of small peas.
  • Remove cherry pie from the oven. Top with the crumb topping and bake for an additional 20 minutes. Remove from oven and cut a small hole in the center to help vent. Let cool, at least 1 hour. Serve warm.

1 ½ cups white sugar
4 tablespoons all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine cherries, 1 1/2 cups white sugar, and 4 tablespoons flour. Pour into 9x13 inch baking dish. In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar. Cut in butter and shortening until crumbly. Sprinkle over cherries.
  • Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.
