BANANA DONUTS
I am not much of a baker or dessert maker, but I gave this the old college try for a recent Sunday brunch. I've been wanting to make these because I love bananas so much. Friends liked them, but I had mixed feelings. Please let me know what level of success (or lack of) you have with this - thanks.

FLUFFY CAKE DOUGHNUTS
This recipe is very quick and easy to make. I have a donut pan, which is like a muffin pan, but has donut shaped holes rather than muffin shaped holes. These donuts are baked not fried, so they don't have so many calories. I mix up either a powdered sugar glaze or a chocolate icing to top these with. They can also be rolled in cinnamon and white sugar, but it doesn't stick very well. My husband likes them just plain. For a chocolate glaze, simply stir 1/2 cup melted chocolate chips into the glaze mixture.

Steps:
- Adjust oven racks to center position and preheat oven to 425°F. Spray two 6-cavity donut pans with nonstick cooking spray and set aside.
- In a large bowl, whisk together flour, baking soda, and salt. In another bowl, use an electric mixer to beat the butter until smooth, and then beat in the sugar until light and fluffy. Blend in the egg, vanilla, mashed bananas, and sour cream until fully incorporated (batter may look curdled at this point...it will smooth out with addition of flour). Gently mix in the dry ingredients until just blended. Evenly divide the batter between the prepared donut pans.
- Bake for 7 to 9 minutes until the tops of the donuts spring back when lightly touched. Allow donuts to cool for 5 minutes in pans before turning them out onto a cooling rack.
- FOR THE CINNAMON SUGAR COATING: In a medium bowl, combine the sugar and cinnamon. Place the melted butter in a shallow bowl. Dip one side of each donut in the butter, and then press into the cinnamon sugar. Serve warm or at room temperature.
- FOR THE CHOCOLATE GLAZE: Place a small saucepan over medium-low heat and melt together the butter and corn syrup. Remove the pot from the heat and add the chocolate chips, stirring until they are smooth and completely melted. Stir in the vanilla. If necessary, transfer to a bowl for dipping (or you can dip the donuts directly into the pot). While the glaze is still warm and thin, dip one face of each donut into the glaze. Place glaze-side-up on a plate or cooling rack. For optimal flavor and texture, serve sooner than later.

Steps:
- Preheat your oven to 375 degrees Fahrenheit. Grease a medium 12-donut donut pan (or two if you have) with vegetable oil cooking spray or butter and set aside.
- In a large bowl, whisk together the flour, cocoa, sugar, baking powder, and salt.
- In a large glass measuring cup, measure the buttermilk.
- Add the eggs and vegetable oil to the buttermilk and whisk with a fork to combine and break up the eggs.
- Add the red food colouring paste and mix well with the wet ingredients until completely blended.
- Add the wet ingredients to the dry ingredients and mix together gently with a rubber spatula just until any streaks of flour disappear. Over-mixing can make the donuts tough and rubbery, so mix gently and only as much as you need to.
- Add the batter to a large piping bag and pipe the donuts into the donut pan cavities only about 1/2 full.
- Bake at 375 degrees Fahrenheit for about 8-11 minutes, or until the donuts are no longer shiny on top and a toothpick inserted into one of the donuts comes out clean.
- Cool in the donut pan for about 5 minutes before removing to a wire rack to cool. Repeat the steps for the next 12 donuts (this recipe makes 24 mini donuts).
- Once cooled slightly, dip the donuts in powdered sugar (use a light spritz of vegetable oil spray on the donuts if the powdered sugar needs help sticking!) and enjoy!

- Spoon the batter into the donut cavities– I highly recommend using a large zipped-top bag for ease. Cut a corner off the bottom of the bag and pipe the batter into each donut cup, filling 2 ∕ 3 –3 ∕ 4 of the way full. (See the photo in my chocolate frosted donuts post for a visual.)
- Bake for 9–10 minutes or until the edges are lightly browned. Allow to cool for about two minutes and transfer to a wire rack set on a large piece of parchment paper or on a large baking sheet. Bake the remaining donut batter (there is usually enough batter for 2-3 more donuts) and once baked, transfer to the wire rack. Allow donuts to cool down until you can handle them.

- In medium bowl smash ripe bananas with fork - add all ingredients (except egg) and mix in with bananas. Lastly, slowly mix in egg - do not over-mix the batter.
- Fill a zip lock bag with batter and cut inch off the corner - use as a piping bag to transfer batter evenly into pan (link to the pan I used in the notes below). Pipe the batter 3/4 of the way in pan. Bake for 10 minutes - test with toothpick to check if they're baked through. Let donuts cool for several minutes before removing from pan.
- Chocolate Glaze: microwave chocolate chips and coconut oil in microwave safe bowl. Dip donuts face down in melted chocolate. These are best when warm! So eat right away, or store in refrigerator in sealed container and reheat for later.
