2 cups Bisquick™ Complete pancake & waffle mix
2 tablespoons granulated sugar
1/8 teaspoon ground cinnamon
1/3 cup mashed banana
1/3 cup milk
1 teaspoon vanilla
1/4 cup chopped walnuts
1/4 cup powdered sugar
2 teaspoons milk
1/4 teaspoon vanilla

Steps:

  • Heat oven to 425°F. Spray mini doughnut pan with cooking spray.
  • In medium bowl, stir together Bisquick mix, granulated sugar, cinnamon, banana, 1/3 cup milk and 1 teaspoon vanilla. Fold in walnuts. Spoon batter into pan, using about 1 tablespoon for each doughnut.
  • Bake 6 to 8 minutes or until toothpick inserted near center comes out clean. Remove doughnuts from pan to cooling rack; cool 5 minutes.
  • Meanwhile, in small bowl, mix glaze ingredients with whisk until smooth.
  • Drizzle glaze over doughnuts. Serve warm.

⅓ cup low-fat Greek banana yogurt
3 tablespoons canola oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 12-cavity doughnut pan with cooking spray.
  • Combine sugar and eggs in a large bowl; beat with an electric mixer until smooth and creamy. Add bananas, yogurt, oil, and vanilla extract; mix until incorporated. Add whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, and salt; mix until combined. Transfer batter to a resealable plastic bag.
  • Snip off one corner of the bag and pipe batter into the prepared doughnut pan.

Friends liked them, but I had mixed feelings. Please let me know what level of success (or lack of) you have with this - thanks.

5 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons salt
1 teaspoon nutmeg
1/4 cup butter
1 cup sugar
1 1/2 teaspoons vanilla extract
3 eggs, well beaten
3/4 cup mashed banana (about 2 good-sized bananas)
1/2 cup buttermilk
1/2 cup flour, for rolling
deep oil (for frying)

Steps:

  • Sift flour, measure and resift 3 times with baking powder, soda, salt, and nutmeg.
  • Cream butter then blend in sugar, add vanilla, and eggs, and beat until light and fluffy.
  • Add combined bananas and buttermilk, and stir until well mixed.
  • Add flour mixture in 3 or 4 portions, stirring thoroughly after each addition.
  • Chill for at least 2 hours before rolling.
  • Remove 1/4 of dough from refrigerator at a time, knead it lightly 4 or 5 times, roll to 3/8 inch thickness, and cut with floured 2-1/2 inch doughnut cutter.
  • Liberally sprinkle rolling surface with flour so dough won't get claggy and stick.
  • Fry in deep oil heated to 375 ° F. until golden brown, then lift out and drain on absorbent paper.
  • If desired, the dough may be covered tightly and kept in the refrigerator for 1 to 2 days, to be fried as needed.
  • Sprinkle with brown sugar or powdered sugar, or if you have the tools, put whipped cream inside.

This recipe is very quick and easy to make. I have a donut pan, which is like a muffin pan, but has donut shaped holes rather than muffin shaped holes. These donuts are baked not fried, so they don't have so many calories. I mix up either a powdered sugar glaze or a chocolate icing to top these with. They can also be rolled in cinnamon and white sugar, but it doesn't stick very well. My husband likes them just plain. For a chocolate glaze, simply stir 1/2 cup melted chocolate chips into the glaze mixture.

1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter (softened)

1 egg (at room temperature)
2 teaspoons pure vanilla extract
1 cup mashed banana (from approximately 2 large or 3 medium overripe bananas)
1/2 cup Greek yogurt OR sour cream (at room temperature)
½ cup sugar

3/4 cup white sugar

Steps:

  • Preheat your oven to 375 degrees Fahrenheit. Grease a medium 12-donut donut pan (or two if you have) with vegetable oil cooking spray or butter and set aside.
  • In a large bowl, whisk together the flour, cocoa, sugar, baking powder, and salt.
  • In a large glass measuring cup, measure the buttermilk.
  • Add the eggs and vegetable oil to the buttermilk and whisk with a fork to combine and break up the eggs.
  • Add the red food colouring paste and mix well with the wet ingredients until completely blended.
  • Add the wet ingredients to the dry ingredients and mix together gently with a rubber spatula just until any streaks of flour disappear. Over-mixing can make the donuts tough and rubbery, so mix gently and only as much as you need to.
  • Add the batter to a large piping bag and pipe the donuts into the donut pan cavities only about 1/2 full.
  • Bake at 375 degrees Fahrenheit for about 8-11 minutes, or until the donuts are no longer shiny on top and a toothpick inserted into one of the donuts comes out clean.
  • Cool in the donut pan for about 5 minutes before removing to a wire rack to cool. Repeat the steps for the next 12 donuts (this recipe makes 24 mini donuts).
  • Once cooled slightly, dip the donuts in powdered sugar (use a light spritz of vegetable oil spray on the donuts if the powdered sugar needs help sticking!) and enjoy!

  • Spoon the batter into the donut cavities– I highly recommend using a large zipped-top bag for ease. Cut a corner off the bottom of the bag and pipe the batter into each donut cup, filling 2 ∕ 3 –3 ∕ 4 of the way full. (See the photo in my chocolate frosted donuts post for a visual.)
  • Bake for 9–10 minutes or until the edges are lightly browned. Allow to cool for about two minutes and transfer to a wire rack set on a large piece of parchment paper or on a large baking sheet. Bake the remaining donut batter (there is usually enough batter for 2-3 more donuts) and once baked, transfer to the wire rack. Allow donuts to cool down until you can handle them.
