6 boneless skinless chicken breast halves (4 ounces each)
6 slices Swiss cheese
6 thin slices deli ham
3 tablespoons olive oil
3/4 cup seasoned bread crumbs

Steps:

  • Flatten the chicken to 1/4-in. thickness. Place a slice of cheese and ham on each to within 1/4 in. of edges. Fold in half; secure with toothpicks. Brush with oil and roll in bread crumbs. , Grill, covered, over medium-hot heat for 7-9 minutes on each side or until chicken is no longer pink. Remove toothpicks.

1/2 cup firmly packed fresh parsley leaves
1/4 cup extra-virgin olive oil
1 clove garlic, chopped
1/2 shallot, chopped
Grated zest and juice of 1/2 lemon
Kosher salt
1 1/2 pounds medium summer squash, such as yellow pattypan, cousa or zucchini, cut into 1-inch chunks
4 skinless, boneless chicken breasts (6 to 8 ounces each)
Freshly ground pepper
4 thin slices Swiss cheese
4 thin slices deli ham
2 cups spring mix salad blend (about 2 ounces)

Steps:

  • Preheat a grill to medium. Combine the parsley, 3 tablespoons olive oil, 1 tablespoon water, the garlic, shallot, lemon zest and juice, and 1/2 teaspoon salt in a mini food processor and puree.
  • Toss the squash with 2 tablespoons of the parsley sauce; spread in a single layer in a large cast-iron skillet. Transfer the skillet to one side of the grill; cook until the squash softens, about 10 minutes.
  • Meanwhile, rub the chicken with the remaining 1 tablespoon olive oil and season with salt and pepper. Grill on the other side of the grill until just cooked through, 4 to 5 minutes per side. Top each chicken breast with a slice of cheese, then a slice of ham. Cover and cook until the cheese melts, about 2 more minutes.
  • Serve the chicken with the salad greens and squash. Top with the remaining parsley sauce.

4 chicken cutlets (1/4 inch thick; 3/4 to 1 pound total)
1 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
4 slices Black Forest ham
8 slices smoked mozzarella
1 baguette
3 tablespoons unsalted butter, softened
3 tablespoons dijon mustard
1 bunch watercress or arugula, tough stems removed

Steps:

  • Preheat the broiler. Line a baking sheet with foil and evenly space the chicken cutlets in the center. Brush the chicken with 1 tablespoon olive oil and season with salt and pepper. Broil, rotating the baking sheet as needed so the chicken cooks evenly, until lightly browned, 2 to 3 minutes. Flip the chicken and continue to broil until cooked through, 2 to 3 more minutes.
  • Remove the baking sheet from the oven and top each piece of chicken with 1 slice ham and 2 slices mozzarella. Broil until the cheese melts, 1 to 2 minutes. Season with salt and drizzle with olive oil.
  • Meanwhile, cut the baguette crosswise into 4 equal pieces, then split open. Spread the bottom halves with butter and the top halves with mustard. Toss the watercress with the remaining 1/2 tablespoon olive oil and season with salt and pepper. Sandwich the chicken and watercress between the baguette halves.

4 tablespoons purchased sandwich spread
8 (1-oz.) slices Swiss cheese
1/4 lb. thinly sliced cooked chicken or turkey (from deli)
1/4 lb. thinly sliced cooked ham (from deli)
2 tablespoons butter, softened

Steps:

  • Spread 4 of the bread slices with sandwich spread. Top each with 1 slice cheese, 1/4 of chicken, 1/4 of ham, 1 slice cheese and bread slice. Spread outside of each sandwich with butter.
  • Heat 12-inch nonstick skillet or griddle over medium-low heat until hot. Place sandwiches, 2 at a time if necessary, in skillet; cover and cook 2 to 4 minutes on each side or until golden brown and cheese is melted.

4 kaiser rolls, Halved
4 boneless skinless chicken breasts
barbecue sauce
4 slices black forest ham
4 slices swiss cheese
1 cup mayonnaise, not Miracle Whip
2 tablespoons liquid honey
2 tablespoons prepared horseradish
3/4 teaspoon dry mustard

Steps:

  • Place boneless, skinless chicken breasts between 2 pieces of plastic wrap abd pound to 1/4 inch thickness.
  • Place chicken breasts on greased grill using medium-high heat, close lid and cook, turning once, a total of about 12 minutes or until no longer pink inside or meat thermometer inserted in each piece reads 165(74C).
  • On each chicken breast, slather some BBQ sauce on one side.
  • Place slices of ham on each breast. Close lid. Let heat for 1 minute then put a slice of cheese on each breast/ham piece. Take off grill.
  • In a bowl, combine well the mayonnaise, honey, horseradish and dry mustard, spread over cut sides or rolls.
  • Build sandwiches with chicken and garnishes.
  • Garnishes-Lettuce, Tomato, Thinly Sliced Onions, Sliced Pickled Hot Peppers.
