GRILLED RED POTATO SALAD WITH BACON-BLUE CHEESE VINAIGRETTE



Grilled Red Potato Salad with Bacon-Blue Cheese Vinaigrette image

Number Of Ingredients 9

4 pounds new potatoes, scrubbed, cooked until almost tender, drained, and halved
1/4 cup olive oil, plus 1/4 cup
Salt and freshly ground black
3/4 pound hickory smoked bacon
1 large red onion, finely sliced
1/4 cup plus 2 tablespoons white wine vinegar
1 tablespoon sugar
1/4 cup coarsely chopped flat-leaf parsley
1 cup crumbled Maytag blue cheese

Steps:

  • Preheat grill. Toss potatoes with 1/4 cup olive oil and season with salt and pepper, to taste. Grill cut side down for 3 minutes. Turn over and continue grilling 2 to 3 minutes. Place in a large bowl.
  • Place medium skillet on the side burner or the grill and heat until almost smoking. Add the bacon and cook until golden brown and crisp. Remove to a plate lined with paper towels. Let cool and crumble.
  • Remove all but 2 tablespoons of the bacon fat from the pan. Add the onions and cook until soft, 5 to 6 minutes. Add 1/4 cup olive oil, vinegar, and sugar and cook until sugar is dissolved. Pour the onion mixture over the potatoes, add the crumbled bacon and parsley and toss to combine, season with salt and lots of black pepper. Spoon the salad onto a large platter and sprinkle with the crumbled blue cheese.

4 slices cooked OSCAR MAYER Butcher Thick Cut Applewood Smoked Bacon, coarsely chopped, divided
1 small head iceberg lettuce, cut lengthwise into 4 wedges
1 tomato, chopped
1/4 cup chopped red onions
freshly ground black pepper to taste

Steps:

  • Mix mayo, buttermilk and vinegar in medium bowl; stir in cheese and half the bacon.
  • Place 1 lettuce wedge on each of 4 plates; top with mayo mixture, tomatoes, onions and remaining bacon.
  • Season with pepper.

4 tablespoons olive oil
1 tablespoon fresh limes or 1 tablespoon lemon juice
1 teaspoon white wine vinegar
1 1/4 teaspoons Dijon mustard or 1 1/4 teaspoons whole grain prepared mustard
1/4-1/2 teaspoon maple syrup or 1/4-1/2 teaspoon honey
2 teaspoons finely minced green onions
salt and pepper
1 cup walnut halves
1/2 teaspoon butter
1 teaspoon maple syrup or 1 teaspoon honey
1 dash cayenne or 1 dash hot smoked paprika
1/2 lb arugula, mesclun, romaine, mache, spinach (whatever may be your preference)
3 firm bartlett pears, washed, cored and sliced into very thin wedges (skin remaining)
4 ounces blue cheese, crumbled (gorgonzola, Stilton, etc.)
2 slices bacon, cooked until crisp and well drained
1/2-1 lb cooked sliced chicken (optional)

Steps:

  • Whisk together all vinaigrette ingredients until well blended; set aside.
  • In a small frying pan set on a medium heat, melt the butter, stir in the maple syrup or honey and then stir in the walnuts. Continue to heat the walnuts, stirring continuously, for approximately 2-3 minutes or until they are fragrant, caramelized and lightly browned. Remove from the heat; set aside.
  • Place the greens in a large salad bowl or, if individual servings are preferred, distribute them equally among 6 salad plates. Sprinkle over the pears, blue cheese and walnuts. Place over chicken then drizzle with dressing and toss.
  • Note: I find having the chicken warmed is superior to cold chicken.

2 tablespoons vegetarian Worcestershire sauce
1 teaspoon salt
2 teaspoons fresh-ground black pepper
1 pound sliced bacon
½ head shredded iceberg lettuce
½ head red leaf lettuce, torn
1 (10 ounce) bag baby salad greens
1 cup blue cheese salad dressing
½ pound crumbled blue cheese
½ pound shredded Cheddar cheese

Steps:

  • Rub the flat iron steaks with Worcestershire sauce, salt, and pepper; set aside. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown and crispy. Remove bacon to cool on a paper towel lined plate, while leaving the grease in the skillet.
  • Heat the bacon grease over medium-high heat until it begins to smoke. Place the flat iron steaks in the hot grease, and cook until done to desired degree of doneness, 3 to 4 minutes per side for medium. Once done, remove the steaks and keep warm.
  • Place the iceberg lettuce, red leaf lettuce, and baby greens into a large salad bowl. Toss with the blue cheese dressing, then sprinkle with the blue cheese and cheddar cheese. Crumble the bacon and sprinkle overtop. Thinly slice the flat iron steak, and arrange over the salad.

Don't be put off by the blue cheese - the flavor is not overwhelming at all. I didn't know it had blue cheese until I asked for the recipe.

5 slices bacon
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon vinegar

3 ounces blue cheese, crumbled (about 3/4 cup)

Steps:

  • Boil potatoes until tender.
  • Cook bacon until crisp, and cut into one inch pieces.
