Time 3h40m

Yield 16 to 20 blondies

Number Of Ingredients 13

1 cup pecans
Cooking spray
1 8-ounce package cream cheese, at room temperature
1/4 cup granulated sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon fine salt
1 1/2 sticks (12 tablespoons) unsalted butter, melted
1 1/2 cups packed light brown sugar
3 tablespoons high-quality caramel sauce, plus more for topping
1/2 teaspoon fleur de sel

Steps:

  • Preheat the oven to 325 degrees F. Spread the pecans on a baking sheet. Bake until toasted, about 8 minutes. Let cool, then chop.
  • Coat a 9-inch square baking dish with cooking spray. Line with parchment paper, leaving an overhang; coat the parchment with cooking spray.
  • Make the cheesecake batter: Beat the cream cheese and granulated sugar in a large bowl with a mixer on medium speed until creamy, about 3 minutes. Beat in 1 egg and 1/2 teaspoon vanilla until combined; set aside.
  • Make the blondie batter: Whisk the flour, baking powder and fine salt in a medium bowl. Whisk the melted butter and brown sugar in a large bowl; whisk in the remaining 2 eggs and 1 teaspoon vanilla until combined. Fold in the flour mixture with a rubber spatula until just combined. Stir in 3/4 cup pecans.
  • Spread half of the blondie batter in the prepared pan. Top with half of the cheesecake batter in spoonfuls. Warm the caramel sauce in the microwave, then drizzle between the spoonfuls of cheesecake batter. Top with the remaining blondie batter, then the remaining cheesecake batter in spoonfuls. Using the tip of a butter knife, gently swirl together to create a marbled effect.
  • Bake until a toothpick inserted into the center comes out clean, 50 to 55 minutes. Let cool 10 minutes in the pan, then lift the blondies out of the pan using the parchment and transfer to a rack. Drizzle with more caramel sauce and sprinkle with the remaining 1/4 cup pecans and the fleur de sel. Refrigerate until completely cooled, about 2 hours. Cut into squares.

Time 43m

Yield 28 bars

Number Of Ingredients 15

1 3/4 cups packed brown sugar (sugar substitute not recommended)
1/3 cup butter
1/4 cup canola oil
1/2 cup refrigerated fat-free liquid egg product (Egg Beaters) or 2 large eggs
2 teaspoons vanilla
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans
1/2 ounce ridged potato chips, coarsely crushed (about 1/4 cup)
12 vanilla caramels, unwrapped
2 tablespoons nonfat milk
1/2 teaspoon sea salt

Steps:

  • Preheat oven to 350°F Line a 13x9x2-inch baking pan with foil, extending foil over the edges of the pan; lightly coat foil with nonstick cooking spray. In a medium saucepan combine brown sugar, butter and oil; cook and stir over medium heat until smooth. Remove from heat; cool slightly. Stir in egg and vanilla.
  • In medium bowl, combine the flours, baking powder, 1/2 teaspoon salt and the baking soda. Add the egg mixture to the flour mixture; stir to combine. Stir in pecans.
  • Spread batter into the prepared baking pan. Sprinkle with crushed potato chips. Bake 18 to 20 minutes or until a wooden toothpick inserted in the center comes out clean. Cool pan on a wire rack.
  • Meanwhile, in a 1-cup glass measure combine vanilla caramels and milk. Microwave on 50% power 1 1/2 to 2 minutes or until smooth, stirring every 30 seconds. Drizzle mixture over blondies; quickly sprinkle with the sea salt.
  • Using the edges of the foil, lift the uncut blondies out of the pan. Cut into 28 bars.

  • In a 1-quart saucepot over medium-high heat, combine sugar along with 2 tablespoons water and stir with a fork until the sugar dissolves and the mixture begins to simmer, 2 to 3 minutes. Cover and cook until the sugar just starts to caramelize, 3 to 5 minutes. Remove lid and cook until the sugar becomes a deep caramel, swirling the pan as needed for even cooking, about 1 minute. Remove from heat and carefully add the cream followed by the olive oil and stir to combine (the mixture will vigorously foam up, so take care to keep your hands away from the steam). Stir in the salt, pour into a heatproof bowl, and set aside to cool.
  • In a large bowl, whisk together the olive oil, brown sugar, kosher salt, and baking powder. Whisk in the eggs, one at a time, until creamy and combined. Set the mixture aside for 20 to 40 minutes, whisking occasionally (this dissolves some of the sugar and results in a chewier blondie).

  • Preheat oven to 350F and line a pan of your choice with parchment paper. I recommend a 9 x 6 pan. An 8×8 baking dish works too but the blondies will be a bit thinner.
  • In a large bowl combine cassava flour, coconut flour, coconut sugar, cinnamon, baking soda, and sea salt.
  • In a small bowl mix together liquified/melted coconut butter, melted coconut oil, unsweetened applesauce and vanilla extract.
  • Make a well in the center of the dry ingredients, add in the wet ingredients and combine. The batter will be quite thick.
