The Best Lentil Salad, Ever image

This recipe was created by Sarah Britton and posted on the My New Roots blog. She calls it the best lentil salad ever, and I have to agree. I serve this over a small bed of baby arugula, and top the salad with some crumbled goat cheese for a healthy, tasty meatless meal. Other optional add-ins mentioned by Sarah are walnuts, fresh herbs & sprouts.

8 ounces dry lentils
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1/2 tablespoon maple syrup
1/2 tablespoon stone ground mustard
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
1/8 teaspoon cayenne pepper
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
1/2 red onion, finely diced
1/2 cup raisins or 1/2 cup dried currant
3 tablespoons capers, drained

Steps:

  • Rinse lentils well, drain. Place in a pot and cover with a 3-4 inches of water, bring to a boil, reduce to simmer. Check lentils for doneness after 10 minutes, but they should take about 15 minutes in total. You will know they are cooked if they still retain a slight tooth - al dente! (Overcooking the lentils is the death of this dish) Drain & rinse the lentils under cold water and set aside.
  • In a small bowl, make the dressing by whisking together the olive, vinegar, maple syrup, mustard and all the spices (salt through cinnamon).
  • In a large serving bowl, gently combine the lentils and dressing. Add the onions, cranberries and capers and stir to combine well. If using other add-ins such as herbs, greens, or cheese, wait to add until just before serving. Otherwise, this salad can hang out in the fridge for as long as a couple days!

My mother made this once but it had raisins (I don't like raisins) So I took her Fruit Salad, experimented with it for awhile, and then I had THE BEST Fruit Salad EVER! Very easy to make and my favorite way to eat fruit :D

1 fresh cantaloupe
15 ounces dark sweet cherries (1 can or 3 and 1/2 cups fresh)
2 cups seedless grapes (whatever kind you prefer)
2 fresh bananas
2 cups fresh strawberries
1 apple
3 cups marshmallows
8 ounces strawberry yogurt
2 tablespoons powdered sugar
1/2 teaspoon cinnamon (or "a dash")
1 tablespoon honey (or "a squirt")
2 1/2 cups Cool Whip (10 ounces)

Steps:

  • Chop all fruit into bite sized pieces. You CAN cut the grapes and cherries, but I usually do not.
  • Throw all the fruit into a very large bowl and add cool whip, yogurt, marshmallows.
  • Add powdered sugar, cinnamon, and honey.
  • I usually freeze this, but tastes good in the refrigerator, too! Although, fruit doesn't keep as long in refrigerator, and the freezy treat is tastier to me :D.

4 cups seedless watermelon balls
3 cups fresh strawberries
3 cups sliced bananas
2 ½ cups mandarin orange slices
1 cup orange-flavored vodka

Steps:

  • Combine watermelon, strawberries, bananas, and mandarin slices in a large bowl. Pour in vodka and toss to coat. Cover with plastic wrap and let chill in the refrigerator until serving.

Sweet, sour, tangy, creamy and crunchy--this is the ultimate salad. So many tastes and textured, we just love it. You can substitute strawberries for the apples. YUM! Also good with grilled chicken or grilled shrimp! Cooking time reflects the preparation of the pecans. It makes a lot, though...so once you have them made, you have enough for several salads.

1/2 cup sugar
1 teaspoon dry mustard
1 teaspoon salt
2/3 cup white vinegar
3 tablespoons apple cider vinegar
4 1/2 teaspoons onion juice
2 teaspoons Worcestershire sauce
1 cup vegetable oil
4 cups greens
2 green onions, chopped
1 cup blue cheese, crumbled
1 granny smith apple, chopped
2 large egg whites
1/2 teaspoon salt
3/4 teaspoon sugar
2 teaspoons Worcestershire sauce
2 teaspoons paprika
1 1/2 teaspoons cayenne pepper
4 1/2 cups pecans (about 1 lb)
6 tablespoons butter

Steps:

  • For the Dressing: Put everything in container and shake.
  • For the Pecans:.
  • Preheat oven to 325°F, beat the egg whites with salt until foamy.
  • Add sugar Worcestershire, paprika, and cayenne.
  • Fold in pecans and melted butter.
  • Spread pecans over baking sheet.
  • Bake 30-40 minutes, stirring every 10 minutes.
  • Remove from oven and cool.
  • Store pecans in an airtight container.
  • Mix field greens, green onions, blue cheese, apple and pecans.
  • Toss with dressing--to your taste.
  • You will have leftover dressing and pecans.

1 pint blueberries
2 cups diced fresh pineapple
3 kiwi, peeled, halved, and thinly sliced
1/4 c. Limoncello liqueur
4 Tbsp. minced fresh mint or basil

Steps:

  • Combine the fruit in a large bowl. Pour in the Limoncello and toss with a wooden spoon to coat the fruit pieces. Let sit at least fifteen minutes to soak up the booze. Fold in the fresh herbs just before serving.
