(2) 14 ounce cans ranch style pinto beans, do not drain
(1) 14 ounce can black beans, drained and rinsed
(1) 14 ounce can white beans, do not drain
(1) 14 ounce can tomato sauce
(1) 14 ounce can diced tomatoes
(1) 14 ounce can fire roasted tomatoes with green chile
(1) 7 ounce can chopped green chile
(1) 14 ounce can yellow corn, drained
2 tablespoons Mexican spice mix (or taco seasoning)
Toppings: shredded cheese (sour cream, green onions, corn chips)

Steps:

  • STOVE-TOP DIRECTIONS: Combine all ingredients in a large pot. Bring to a simmer over medium low heat, cover with lid and simmer, stirring occasionally for 2-10 hours. (Yes, you can simply bring the chili to a boil, simmer 15 minutes and then serve it. However, if you have the chance to cook it longer, I highly recommend it. The flavors will change into something even better if you allow them to simmer together for a while.) Serve with the toppings of your choice. Enjoy!
  • CROCK-POT DIRECTIONS: Combine all ingredients in a large crock-pot. Cook on LOW for 8-12 hours. Serve with the toppings of your choice. Enjoy!

1 tablespoon minced garlic
1 15-oz. can pinto beans (drained and rinsed)

1 15-oz. can tomato sauce
1 15-oz. can diced tomatoes
3 tablespoons tomato paste
1 tablespoon maple syrup
3 tablespoons chili powder
2 teaspoons garlic powder
2 teaspoons ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoons salt
1/4 teaspoon ground pepper
1 cup beef broth (chicken broth or water works too)
shredded cheddar cheese
Fritos

Steps:

  • First, heat a large stockpot over medium/high heat.
  • Then, add ground beef, yellow onion, and minced garlic and sauté for 7-10 minutes or until beef is fully browned.
  • Next, add pinto beans, kidney beans, tomato sauce, diced tomatoes, tomato paste, and maple syrup to the pot and stir to combine.
  • Add spices and 1 cup of broth and stir to combine.
  • Bring beef chili to a boil, then reduce heat to low and let simmer for 10-15 minutes to thicken.

2 onions, diced
1 green pepper, diced
1 tablespoon jalapeno, finely chopped
1 (14 ounce) can Mexican-style tomatoes (like Rotel)
2 (8 ounce) cans tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika (smoked if you can find it)
1 (14 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 cup water
sour cream
cheddar cheese

Steps:

  • In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.

1 large sweet pepper, chopped
33 ounces tomato sauce (1 box)
1/4 cup molasses or brown sugar

1-2 cups corn, optional

Steps:

  • In a large stock pot cook 4-6 slices of cut up bacon over medium high heat until it looks about half way done - just about 2-3 minutes.
  • Add a chopped pepper (any color) to the bacon and continue to cook another 3-4 minutes, stirring occasionally.
  • Add 1 lb ground beef and continue to cook until book is thoroughly cooked.

You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. 1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced

1 pound ground beef
1 cup chopped onion
½ cup chopped green bell pepper
2 ½ tablespoons chili powder
1 clove garlic, minced
1 bay leaf
½ teaspoon ground cumin
4 teaspoons finely chopped jalapeno chile peppers
1 (29 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (16 ounce) can chili beans, undrained
salt and pepper to taste

Steps:

  • In a large saucepan over medium high heat, combine the ground beef, onion and bell peppers. Saute for about 5 minutes, or until beef is browned. Drain excess fat.
  • Add the chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper to taste. Bring to a boil and reduce heat to low. Cover and simmer for 1 1/2 hours, stirring occasionally. Stir in the beans and heat through.

1 lb(s) lean ground beef
2 Tbsp olive oil
1 large red onion, chopped
½ green pepper, chopped
½ red pepper, chopped
½ yellow pepper, chopped
2 large carrots, chopped
4 stalks celery, chopped
2 cloves garlic, minced
corn kernels from 2 cobs of corn
1 jalapeno pepper, chopped
2 Tbsp chili powder
2 Tbsp chili powder
1 Tbsp paprika
1 Tbsp ground cumin
1 cup brewed coffee
1 cup red kidney beans
1 cup white beans
1 can (540 mL) crushed tomatoes
2 cans (1.5 L total) diced tomatoes
salt and pepper
1 bunch (8-10) basil leaves

Steps:

  • In a large pan, add oil, and heat to medium-high.
  • Once heated, add meat, cooking until browned.
  • Add garlic, onion, peppers, carrot, celery, and corn, along with spices. Cook for 8-10 minutes, until everything becomes fragrant, and onions begin to turn slightly translucent.
  • In a slower cooker, add ingredients from your pan, then return the pan to your element, deglaze with coffee, and add to slow cooker.
  • Add in the beans, and tomato, cooking on low for around 8 hours, or high for about 4 hours. If you are using unsoaked beans, you will likely need to cook for a longer time period on low, for the beans to soften up (I cooked the chili this way, and cooked for about 8 hours on low).
  • Once cooked, serve with a some shredded cheese, a dollop of sour cream, diced red onion, and some nice bread.
