Steps:
- Heat oven to 350°F and position racks in top and bottom thirds.
- Wash potato (or potatoes) thoroughly with a stiff brush and cold running water.
- Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking.
- Place in a bowl and coat lightly with oil.
- Sprinkle with kosher salt and place potato directly on rack in middle of oven.
- Place a baking sheet (I put a piece of aluminum foil) on the lower rack to catch any drippings.
- Bake 1 hour or until skin feels crisp but flesh beneath feels soft.
- Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another.
- It will pop right open.
- But watch out, there will be some steam.
- NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.

- Scrub potatoes well as skins are delicious. Dry well and stab to vent.
- Coat clean dry potatoes with olive oil and salt. (I do this in a plastic bag).
- Place potatoes directly on oven rack and bake at 450F for 1 hour or until done.

- Preheat oven to 450 degrees F. Place a wire rack over a rimmed 18 by 13-inch baking sheet.
- Pierce each potato 6 times (3 times on two sides) with a fork.
- In a large bowl, whisk together water and salt until salt has dissolved.
- Roll each potato in salt water to coat entirely, transfer to a wire rack while spacing evenly apart.
- Bake in preheated oven until center registers 205 degrees F on an instant read thermometer (potatoes should almost be soft inside when pressed).
- Brush potatoes with vegetable oil, return to oven and bake 10 minutes longer.
- Remove from oven and immediately cut a slit or "X" across to release steam. Using a kitchen towel squeeze ends to open then top as desired.

- Poke holes all around the potato with a corn-on-the-cob holder (or fork), then rub it with the olive oil and sprinkle with salt and pepper. Put a metal skewer through the center of the potato lengthwise, put the potato in the oven and position a baking sheet on the rack below to catch any drippings. Bake until the potato is cooked through, 1 to 1 1/2 hours.
- Serve immediately with desired toppings.

- Preheat an oven to 400 degrees F. Pierce each potato with a paring knife and roast in the oven until tender, about 1 hour, depending on the size of your potatoes.
- Meanwhile, dice up the bacon. Heat a saute pan over medium heat and cook the bacon until crispy, about 7 minutes. Drain the bacon fat and reserve.
- Return the saute pan to the heat and add the reserved bacon fat. Cook the broccoli and red pepper for 2 minutes. Add the water and allow to cook until water has evaporated. Remove from heat.

- Split while raw (do not cut all the way through the potato).
- Season with butter, salt, pepper and place one slice of bacon in middle of potato.

- Using a fork, poke six times to make holes into each large Russet potato.
- Combine salt and water. Roll each potato in liquid.
- Transfer potatoes to a wire rack on a baking pan. Place into oven.
- Bake in a preheated 450 degrees for 45 minutes to an hour. IMPORTANT: Internal temperature should be 205 degrees to be done.
- Test temperature into the end of the potato and see that there is no resistance. 205 to 212 degrees is the ideal range.
- Brush potatoes with 1 Tbsp. of vegetable oil and return to oven for 10 minutes to crisp skin.
- Cut an X in the top of the baked potato and using a dishtowel, squeeze potato at each end to open the X and let steam escape.

- Place butter in a microwave-safe bowl and microwave on high until melted, 20 to 30 seconds. Stir in olive oil, garlic powder, salt, and pepper.

THE BEST BAKED POTATO CASSEROLE EVER!
This recipe comes from the Kirby House Restaurant in Abilene, Kansas. It is a low maintenance but flavorful potluck dish! In addition to the below ingredients, I add Penzey's Brady Street & Sandwich Sprinkle to each layer. But if you do add Sandwich Sprinkle, remember, there is salt already in it. This is a great 'make-ahead' dish that you can refrigerate or freeze until you are ready to bake. Prep time is approximate. Enjoy!

- Wash potatoes thoroughly and microwave until tender.
- If you would like you can always bake in a 400 degree oven for one hour or until done.
- As the potatoes are cooling, melt your butter in a large saucepan and saute your onions until light brown.
- Add in your flour to make a roux.
- Add in your chicken broth, water, cornstarch, instant mashed potatoes and spices and bring to a boil.
- Reduce your heat and simmer for about 5 minutes.
- Take your cooled potatoes and peel off the skin and chop up into desired pieces.
- Add in your chopped up potatoes and the heavy whipping cream to your soup and bring it back to a boil.
- Reduce heat and simmer for about 15 minutes or until it is thick.
- Garnish with cheddar cheese, crumbled bacon and green onions.
