BENNY CENAC'S MELT-IN-YOUR-MOUTH DUCK RECIPE
This recipe works well with wild and store-bought duck alike.

- In a large saucepan, heat oil over medium-high heat. Add onion, and cook until translucent. Add 1 cup water, and cook until liquid is evaporated. Next, add the duck breasts after covering them in the rest of the ingredients. Cook over low heat until duck is tender and an instant-read thermometer inserted in thickest portion registers a minimum internal temperature of 165 °F°, adding water as needed so gravy doesn't cook out.
BETH'S MELT IN YOUR MOUTH BARBECUE RIBS (OVEN)
I almost didn't want to share this ribs recipe because this is one of the dishes that I make that keep my sons coming back home! These can be done with baby back or regular pork ribs. I have also made split chickens this way. The ribs are tender, moist and just slide off of the bone. I know that your family will love them just as much as my family does. I noticed that some are unable to find hickory smoked salt. You can use smoked paprika or just brush the ribs with liquid smoke before applying the rub. The smoke flavor is nice because it helps give the ribs a cooked-on-the-grill flavor. Also, the easiest way to remove the membrane is to work a spoon, or I use the tips of my kitchen shears, into the bottom center of the membrane, work it back and forth to form a "pocket," then I slide my thumbs in and work the membrane off from the center outward to the ends.

Steps:
- Preheat oven to 300 degrees F. Line a baking sheet with two layers of foil, shiny side out.
- Peel off tough membrane that covers the bony side of the ribs.
- Season the ribs on both sides with salt and pepper. If using, divide the Hickory liquid smoke evenly over the ribs.
- In a medium bowl, combine the light brown sugar, paprika, garlic powder and ground red pepper. Apply the rub to all sides of the ribs.
- Lay ribs on the prepared baking sheet, meaty side down. BONE SIDE DOWN FOR GRILLING!
- Lay two layers of foil on top of ribs and roll and crimp edges tightly, edges facing up to seal.
- Transfer to the oven and = bake for 2-2 1/2 hours or until meat is starting to shrink away from the ends of the bone.
- Remove from oven.
- Heat broiler.
- Cut ribs into serving sized portions of 2 or 3 ribs.
- Arrange on broiler pan, bony side up.
- Brush on sauce.
- Broil for 1 or 2 minutes until sauce is cooked on and bubbly.
- Turn ribs over.
- Repeat on other side.
- Alternately, you can grill the ribs on your grill to cook on the sauce.

MELT IN YOUR MOUTH BEEF BRISKET
This recipe produces the most wonderful tasting tender brisket with lots of flavor! Prep time is marinating time. Plan ahead, this brisket needs to marinate in the fridge overnight.

Steps:
- In a large roaster, season brisket with salt and pepper.
- Cover bottom of roasting pan with sliced onions.
- Lay brisket on top of onions in roaster.
- In a bowl, mix the prepared BBQ sauce with minced garlic.
- In the roaster with the onions, pour the BBQ sauce all over brisket, making sure that brisket is coated well on all sides.
- Cover with foil; refrigerate for 24 hours.
- Remove from fridge.
- In a bowl, mix together wine, ketchup, brown sugar and soup.
- Pour over brisket; mix slightly to combine with BBQ sauce.
- Cover tightly with foil.
- Bake at 350 degrees for 4-1/2- 5 hours, or until brisket if fork-tender.
- Remove from oven; let stand 20 minutes before slicing.
- Slice thinly against the grain; serve with remaining sauce.
PECAN SANDIES - MELT IN YOUR MOUTH
These are light sandies, they almost melt in your mouth. This recipe makes a bunch, perfect for pot luck or Christmas cookie platters. You can add semi or white chocolate chips to mix it up.

- Preheat oven to 375 degrees.
- In a large bowl, cream together the butter, vegetable oil, 1 cup of white/granulated sugar and confectioners sugar until smooth.
- Beat in eggs one at a time.
- Add vanilla. Stir until blended.
- Combine flour, baking soda, cream of tartar and salt.
- Stir into the creamed mixture. Mix until completely blended.
- Mix in the pecans.
- Roll dough into 1 inch balls and roll each ball in remaining white sugar.
- Place cookies 2 inches apart onto ungreased cookie sheet. (you may top each cookie with a pecan half if you like).
- Bake for 11 to 13 minutes in the preheated oven, or until the edges are golden.
- Remove from cookies sheet to cool on wire racks.

- Prep. Season both sides of the duck legs with kosher salt. Wrap the duck legs in plastic wrap and refrigerate for six to 12 hours.
- Prepare a sous vide immersion circulator, such as Anova Sous Vide Precision Cooker, according to the manufacturer's instructions and set the water temperature for 145°F.
- Remove the duck legs from the plastic wrap, rinse, and pat dry. Place the duck legs and duck fat in a zipper-lock freezer bag or 1/2 gallon reusable sous vide bag. Carefully submerge the bag in the water bath until most of the air has been removed and then seal the bag. Once the bag is submerged, cook for 24 hours. At this point, the duck legs can be refrigerated in the fat for up to one month before proceeding with the recipe. If you opt to store them for future use, remove the bagged duck legs from the sous vide then submerge the bagged duck legs in a large container filled with a 50/50 mix of ice and water until the meat's core temperature reaches a safe range of 34-38°F, approximately 15 minutes, before refrigerating.
- Remove the duck legs from the fat, pat them dry, and season with Chinese five spice powder. Let them rest at room temperature as you prepare the grill. Refrigerate the fat for future use.
