100 wonton skins
1 3/4 lbs ground pork
1 tablespoon minced fresh ginger
4 -5 fresh minced garlic cloves (or more or less to suit taste)
2 tablespoons minced green onions
4 tablespoons soy sauce
3 tablespoons sesame oil (no substitutions, only sesame oil)
1 egg, beaten
5 cups finely shredded Chinese cabbage

Steps:

  • In a large bowl, combine the uncooked pork, ginger, garlic, green onion, soy sauce, sesame oil, egg and cabbage; stir until well mixed.
  • Place 1 heaping teaspoon of pork filling onto each wonton skin; moisten edges with water then fold edges over to form a triangle shape.
  • Roll edges slightly to seal in filling.
  • Set dumplings aside on a lightly floured surface until ready to cook.
  • TO COOK: Steam dumplings in a covered bamboo or metal steamer (an electric veggie steamer works great also) for 15-20 minutes.
  • Serve immediately with sweet and sour sauce.

Ah, the comforting feeling of a big pot of chicken and dumplings on the stove! Enjoy an Asian twist with a lighter sweet and sour style broth and dim sum dumplings. Easy to make and flavorful! I have updated this recipe to reflect changes graciously suggested by expert RSC#9 contest reviewers.

1 chicken, cut up (buy the eight piece chicken in your grocery store meat department)
1 (14 1/2 ounce) can fat free chicken broth
1/2 tablespoon red pepper flakes
1 tablespoon gingerroot, freshly grated
1 tablespoon chicken bouillon powder
1 tablespoon garlic, chopped
4 tablespoons reduced sodium soy sauce
2 tablespoons vinegar (rice vinegar preferred)
1 tablespoon sesame oil
2 carrots, peeled and shredded
3 cups bok choy, chopped (spinach or cabbage also work)
1 cup sliced mushrooms (I used large dried Asian mushrooms soaked overnight)
1/4 cup green onion, chopped
2 tablespoons brown sugar
1 (21 ounce) package pot stickers, frozen (about 30 pieces)

Steps:

  • In a large soup pot, combine all ingredients in "add first" category.
  • Add enough water to cover chicken and heat on high burner setting until boiling; reduce heat, cover and simmer for one hour (leaving it on longer, up to an additional hour, is fine.).
  • Remove chicken pieces from pot and strain broth to remove fat.
  • Strip chicken off the bones; discard skin and bones and return chicken meat to soup pot along with "add last" ingredients.
  • Cook uncovered over medium heat 5-7 minutes (or until pot stickers are cooked) and serve hot.

I got this recipe from my old land lord in Beijing. He was a "lao Beijing ren" (native Beijinger), so his recipes are very authentic. He decided that my roommate and I needed to learn all the Beijing dishes, and thus took it upon himself to teach us. My friends and I like to have dumpling parties, where we get together and wrap dumplings and talk, which makes it not as labor intensive.

1 1/2 lbs ground pork
1/2 lb minced raw shrimp
5 -7 garlic cloves, minced
3 green onions, chopped finely
1/2 head cabbage, chopped and salted
3 inches peeled ginger, grated
2 tablespoons salt
2 tablespoons soy sauce
2 teaspoons sugar
1 egg
3 tablespoons sesame oil
2 teaspoons five-spice powder
1 tablespoon red pepper powder
100 dumpling wrappers (1 package of shui jiao-style ones or 1 1/2 cups flour, pinch of salt and pinch of water to make by h)
1 pinch salt
1 pinch water

Steps:

  • Clean the cabbage, chop it, and put it in a large non-reactive pot with salt Set it aside and let it sweat out water for 45 min or so (you can prepare this ahead).
  • If you're using a meat grinder, feed the shrimp, pork, garlic, onions, and ginger through the meat grinder, getting everything to be a smooth, yet chunky mixture. If you're using a food processor, you're going to half way freeze the meat, and chop each ingredient on it's own, and then mix them in a pasta bowl. Traditionally, all these ingredients are minced and chopped using a large cutting board and a cleaver. However you do it, it's up to you.
  • Put the meat and veggie mixture into a a large bowl. Add the salt, soy sauce, egg and sugar to the mixture.
  • In a heavy skillet, heat up the oil. Add the spice powders and toast the spices. Pour this mixture hot over the meat mixture in the bowl, and stir inches.
  • Drain the cabbage, rinse it and drain again. Mix it in to the meat mixture.
  • (Optional step) Make the dumpling wrappers: mix together 1 1/2 cup flour and pinch of salt and then slowly add just enough water to result in a springy dough. Knead it a lot to make the gluten stringy and strong. Roll the dough out into a long rope, cut the rope apart into ping pong ball sized pieces. Flatten the pieces out into small flat discs, and flour a table or cutting board, and roll them out using a beer bottle or small rolling pin. As you make them, hand them to the person wrapping the dumplings. Or just buy the pre-made wrappers.
  • Wrap the dumplings in the dumpling skins, pinching together the sides and tucking in the ends.
  • Cook the dumplings: boil a pot of water. Drop the dumplings in, they are ready when the float to the top of the pot. Don't boil too many at once, or they'll stick together. Scoop them out with a strainer, so you can use the water for the next batch.
  • Serve with soy sauce, dipping sauce, raw garlic (for true Northern Chinese style eating!), chili sauce, or cut up green onions.

  • Heat the peanut or canola oil in a large sauté pan over medium heat. Once the pan is hot, add the cabbage, ginger, garlic, and scallions. Cook everything for about 2 minutes, stirring frequently. Add 1/4 teaspoon of kosher salt and stir. Turn off the heat and transfer the vegetables to a plate to cool for 10 minutes (see note 4).
  • If you are using store-bought wrappers, fill a small bowl with water for wrapping and sealing the dumplings. If you are using fresh dumpling wrappers, cover the wrappers with a dry cloth or a layer of plastic wrap to keep them from drying out.
  • If you are using store-bought wrappers: Dip the dumpling wrapper into the bowl of water. Rotate the wrapper so that 3/4 of the wrapper is wet, creating a wet border about 1/4 to 1/2-inch wide. Lay the wrapper on your left hand, the wet side facing you. Place about 1 to 1 1/2 tablespoons of filling into the center of the wrapper (you may use more or less depending on the size of your dumpling wrapper).
  • Heat a well-seasoned large cast iron skillet or large nonstick pan with 1 1/2 tablespoons of oil over medium-high heat. Arrange the dumplings over the pan. I usually cook about 15 to 17 dumplings at a time. Pan fry the dumplings for 2 to 3 minutes, until the bottoms are golden brown.

Drain in a mesh strainer, flush with water, and drain again. To remove more moisture, squeeze the cabbage in your hands over the sink, or put in a cotton kitchen towel and wring out the moisture over the sink. You should have about ½ cup firmly packed cabbage.

There should not be any visible large chunks of pork. To develop the flavors, cover and set aside at room temperature for 30 minutes. You should have about 2 cups of filling. The filling can be prepared 1 day ahead and refrigerated. Bring it to room temperature before assembling the dumplings.
  • To make the dough, place a large mixing bowl over a damp paper towel on your work surface, to keep in place while mixing. Add the flour and make a well. Use a wooden spoon to mix the flour while you add the water in a steady stream. Mix together until you have a lot of lumpy bits, then knead the hot dough in the bowl until the dough comes together. Add water by the teaspoon if the dough does not come together.
