Detoxifying Beet & Berry Smoothie image

A vibrant, nutrient-packed smoothie made with detoxifying beetroot and fresh fruit. Subtly sweet, perfectly tart, and ready with just 1 blender, 3 ingredients, and 5 minutes.

1/3 cup peeled + chopped raw beet ((organic when possible))
1 ⅓ cup frozen strawberries ((if fresh, add ice // organic when possible))
1/4 ripe frozen banana ((optional // peeled + sliced))
2/3 cup fresh apple juice
Fresh mint or shredded coconut ((for garnish // optional))

Steps:

  • Add beet, strawberries, banana (optional for sweetness) and apple juice to a blender and blend on high until creamy and smooth, scraping down sides as needed.
  • Taste and adjust flavor as needed, adding more banana for sweetness, apple juice to thin, or strawberries for a more intense fruit flavor.
  • Divide between two serving glasses and enjoy. Optional: Garnish with banana slices, fresh mint, and/or shredded coconut. Best when fresh, though leftovers will keep covered in the refrigerator for up to 2 days. Freeze leftovers in ice cube trays or popsicle molds for an afternoon pick-me-up.

1 red beet (medium, trimmed, cut into 2-inch chunks)
1 apple (any variety, cut into 2-inch chunks)
3 carrots (ends trimmed, cut into 2-inch chunks)
1 orange (juiced)
1 2-inch piece fresh ginger (peeled)
1 cup cold water

Steps:

  • Place all ingredients in the pitcher of a high-powered blender, and blend until smooth, about 1-2 minutes. Use the tamper if needed.
  • Pour the smoothie into glasses and enjoy right away, or chill in the fridge to enjoy later.

12 ounces beets
2 tablespoons lemon juice
4 tablespoons coconut sugar crystals
300 ml water
2 teaspoons agar-agar, powder
1 apple, diced (small)
1/2 teaspoon salt (for apple soaking water)

Steps:

  • Steam whole beets until soft (about 45 minutes). (I pressure-cooked for 25 minutes.).
  • Soak apple pieces in salted water for 5 minutes to prevent oxidation.
  • When the beets are no longer hot, peel and cut into chunks.
  • Place cooked beets and water in a blender and blend until smooth.
  • Transfer the liquid to a sauce pan and add lemon juice and sugar.
  • Bring to a boil, add agar-agar powder and let it boil for a couple of minutes, stirring constantly.
  • Transfer the liquid to individual ramekins or glass containers. Place diced apple pieces on top and push them down.
  • Refrigerate for a few hours or overnight.
  • Infuse love and serve!

2 beets, peeled and thinly sliced
1 apple, cut into 1/2-inch wedges
1/4-1/2 onion, thinly sliced
2 teaspoons cinnamon honey
1 teaspoon lemon juice
1 teaspoon Dijon mustard (optional)
salt & fresh ground pepper, to taste

Steps:

  • In a bowl, whisk together honey, mustard (if using), lemon juice, salt, and pepper. Set aside.
  • Toss beets, apple, and onion with honey mixture.
  • Place beets in a casserole dish and bake in a preheated 375* oven for 15 minutes.
  • Add onion and bake for an additional 20 minutes.
  • Add apple and bake for 10-15 minutes longer (depending on how soft they are).
  • Enjoy!

8 -10 beets
5 cups water
1/2 cup lemon juice
1 package dry pectin
6 cups sugar

Steps:

  • Peel beets and simmer in water for 30 minutes.
  • When beets are tender strain off liquid measuring 4 cups of beet juice.
  • Pour into a large pot.
  • Stir in lemon juice and pectin.
  • Bring to a full, rolling boil over high heat.
  • Stir in sugar all at once and return to a full, rolling boil and boil for 1 minute.
  • Remove from heat and ladle into clean hot stearilized jars leaving 0.125 inch head space and seal.
  • I process any jelly for 5 minutes in a boiling water bath even though the recipes don't call for it.
