BOBBY FLAY'S BEER-SIMMERED BRATWURST

Bobby Flay's Beer-Simmered Bratwurst image

These are wonderful bratwursts! They are always a big hit with our guests. I always make these with Recipe #113133. Great for a summer party.

Provided by HeidiSue

Categories     < 60 Mins

Time 55m

Yield 8 serving(s)

Number Of Ingredients 12

3 large onions, peeled & thinly sliced
2 garlic cloves, crushed
3 lbs bratwursts, pricked with a fork (Bobby uses pre-cooked brats, but we get more flavor out of using uncooked, Johnsonville is our favor)
6 (12 ounce) bottles dark beer (we always use Sierra Nevada Pale Ale)
2 cups water
1 teaspoon coriander seed
1 teaspoon caraway seed
1 teaspoon mustard seeds
1 piece fresh ginger, peeled & chopped (1-inch)
bun, of your choice (or not)
German mustard, of your choice (we prefer Honey Spice mustard)
pickled beets, chopped (optional) or sauteed onion (optional)

Steps:

  • Arrange onion slices and garlic along the bottom of a medium stockpot.
  • Place bratwurst on top and then add the beer, water, coriander, caraway, mustard seeds and ginger.
  • Fire up the grill.
  • Bring to a simmer over the grill grates or on a burner.
  • We do it on the stove top, but you still need the grill to finish cooking the brats.
  • Simmer the sausage in the mixture for about 10 minutes.
  • Remove the pan from the heat and let the bratwursts sit in the liquid for 10 more minutes.
  • Remove the sausages with tongs onto a platter.
  • Place the bratwursts on the grill and grill until cooked through (about 10-15 minutes).

BEER SIMMERED BRATS

Beer Simmered Brats image

When I saw these on the commercial I had to get the recipe and make them! They are fantastic! Serve them at your next cookout with plenty of COLD beer to go along! Everyone will love them!

Provided by Little Bee

Categories     Pork

Time 20m

Yield 6 serving(s)

Number Of Ingredients 6

36 ounces your favorite beer (approx. 3, I use Budweiser)
1 large onion, thinly sliced
6 bratwursts
1/2 teaspoon cajun seasoning or 1/2 teaspoon Emeril's Original Essence
6 hoagie rolls (I use the Italian style Hoagie rolls and you may substitute hotdog rolls)
prepared mustard (your preference)

Steps:

  • Prepare grill for direct grilling and preheat to medium.
  • Place beer, seasoning, onion and brats in medium pot and bring to gentle boil over medium heat.
  • Let brats simmer gently until partially cooked, 6 to 8 minutes.
  • Do not let brats boil, or they will burst.
  • Drain brats well.
  • After removing Brats drain and reserve onions also.
  • Place brats on grill parallel to grates (to hold brats in place) and grill 5 to 7 minutes per side.
  • Internal temperature of brats should be about 170 degrees when serving.
  • Serve on buns with reserved onions and mustard.

BEER-BRAISED BRATWURST & ONIONS

Beer-Braised Bratwurst & Onions image

Juicy bratwurst and caramelized onions piled into rolls with grainy mustard, "beer brats" make a delicious weeknight supper or game-day dish.

Provided by Jennifer Segal

Categories     Dinner

Time 35m

Yield 6

Number Of Ingredients 8

2 tablespoons vegetable oil
6 bratwurst (see note)
2 medium yellow onions, thinly sliced
½ teaspoon salt
1 (12 oz) bottle lager beer (see note)
6 hoagie rolls or hot dog buns
Coarse grain mustard
Warm sauerkraut

Steps:

  • In a large (12-inch) cast iron skillet or nonstick pan with a tight-fitting lid, heat the oil over medium-high heat. Add the bratwurst and sear until nicely browned, 2 to 3 minutes per side. Using tongs, transfer the sausage to a plate; set aside. Add the onions and salt to the skillet and cook, stirring frequently, until the onions are softened and golden brown, about 5 minutes (do not burn; reduce the heat if necessary).
  • Place the bratwurst back in the pan on top of the onions, add the beer, and bring to a boil. Reduce the heat to low, cover with the lid, and simmer for 10 minutes (at this point the sausages will be partially cooked through). Remove the cover, increase the heat to medium, and continue cooking until the bratwurst are cooked through and the beer is reduced by about three quarters, 10 to 12 minutes more. Serve the bratwurst and onions on rolls with mustard and sauerkraut, if desired.
  • Note: I use Johnsonville Original Brats; avoid any brats already flavored with beer, as the finished dish will taste too bitter. Also be sure to purchase fresh (not cooked) sausages.
  • Note: Lager is a family of beers that includes bright lagers, amber lagers, dark lagers, Oktoberfests, and pilsners. I use Sam Adams Oktoberfest, but Budweiser, Bud Light, Coors Light, and Miller Lite are all good options. No need to use anything fancy!
  • Note: The nutritional information does not include the optional serving ingredients.

  • If you want to finish the sausage by searing on the grill, heat grill to 500F / 260C degrees (alternatively, you can sear on the stovetop).
  • Combine beer (or stock) and butter in a stock pot over medium heat. Bring liquid to a simmer and add sausage, onions and peppers to hot liquid. (Don’t worry if the sausage isn’t completely covered in liquid.)
  • Simmer, turning sausage every few minutes, until liquid is mostly reduced and onions and peppers are tender, ~15 minutes.
  • Remove sausage from liquid and set aside. Let onions and peppers continue cooking until all the liquid is evaporated and vegetables begin to caramelize on the bottom of the pan.

  • In a cast iron or heavy bottomed skillet, melt the butter over medium high heat. Add the onion and caraway seeds and cook for 5 minutes or until the onions begin to soften. Season with kosher salt. Nestle the bratwurst in the onions, add the bottle of ale and bring to a low boil. Reduce the heat to a simmer and cook for 30-40 minutes, turning the brats occasionally.
  • To finish the bratwurst on the stove, transfer the onions and beer broth to a bowl and set aside. Add the brats back to the skillet and increase the heat to medium high. Brown the sausages evenly on all sides, adding a little more butter or oil if needed. Add the onions and beer broth back to the skillet and keep warm.
  • To finish the bratwurst on the grill, preheat the grill to medium-high heat. Cook the bratwurst sausages on the grill for 2-4 minutes per side or until browned on all sides. Add back to skillet with the onions and beer and keep warm.

  • In a heavy dutch oven or pan with a lid, add the beer, caraway seed, chopped sage and bay leaf. Bring to a boil over medium-high heat then reduce it to simmer and add the bratwurst. Put the lid on the pan and allow to simmer.
  • After the pan has been simmering for 20 minutes, check the temperature with an instant read or probe-type thermometer and continue simmering and checking the temperature until the bratwurst have reached an internal temperature of 160°.
  • While the bratwurst is cooling, add the four, the salt and pepper to a shallow dish and reserve and when the bratwurst has cooled enough to handle, lightly oil each one and dust them in the reserved flour.

  • Fire up. Set up the grill for 2-zone cooking. Open the high quality beer and drink it while you are cooking. This is the way it is done in Wisconsin. You cannot cook unless you are drinking.
  • Cook. Use a pan (you can use a disposable aluminum pan) for the brat tub. Dump in the cheap American lager and bring it to a simmer on the grill or side burner. Most brats come curved. Bend and flex them so they are close to straight. They are easier to turn on the grill and they fit the buns better when they are straight, allowing more room for the sauce. Add the brats to the beer and simmer for about 15 minutes to absorb flavor. Roll the brats around if they are not covered in beer and simmer 15 minutes per side.
  • Remove the brats and grill them over high heat just enough to get some brown onto the skin. Just a minute or three on each side. I like to lay them between the grates so they are easier to turn. Yes, I know the grill marks are going the wrong way, but this way I don't incinerate one side.
  • Prep. While the brats are grilling, the onions in to half rings. Add the butter, hot sauce, BBQ sauce, mustard, onions, in the pan with the beer. Stir.

  • Prepare the grill for direct cooking over high heat (450° to 550°F). If you're using a charcoal grill, keep a small part of the charcoal grate clear of briquettes as a safety zone of indirect heat.
  • In a small saucepan over medium-high heat on the stove, melt the butter. Add the flour and cook until the mixture turns a light beige colour, about 2 minutes, stirring constantly. Whisk in the milk, mustard, and Worcestershire sauce and cook until the mixture thickens, about 2 minutes, whisking occasionally. Add the three cheeses and stir until they are melted. Set aside and reheat gently just before serving.
  • Brush the cooking grates clean. In a large disposable foil pan combine the beer, onions, mustard, and sugar. Add the brats. Place the pan over direct high heat, close the lid, and bring the liquid to a simmer. Simmer until the brats are evenly coloured and no longer look raw, about 20 minutes, turning occasionally. If the liquid starts to boil, temporarily move the pan over indirect heat to prevent the bratwurst from splitting open.
  • Lower the grill’s temperature to medium heat (350° to 450°F). Transfer the brats to a small disposable foil pan and place the pan over indirect heat. Strain the onions through a colander into the pan with the brats. Return the onions to their original pan and place the pan over direct medium heat. Close the lid and cook until the onions are very tender, about 8 minutes, stirring occasionally.
