YEAST BEER BREAD



Yeast Beer Bread image

Beer bread is great for snacking, football games munchies, and for dipping in a bowl of super hot chili.

1 package active dry yeast
1/4 cup warm water
1 cup beer (room temperature)
1 tablespoon cream cheese
1 tablespoon sugar
1 1/2 teaspoons salt
3 cups bread flour

Steps:

  • Gather the ingredients.
  • In a small bowl, mix water and yeast. Stir until yeast is dissolved.
  • In a large bowl, add beer, cream cheese, sugar, and salt. Pour in yeast and stir.
  • Mix in 2 1/2 cups flour. Turn out onto a floured board and knead in remaining 1/2 cup of flour until dough is soft and smooth.
  • Put dough in greased bowl and turn dough so that top is greased . Cover and let rise in warm place for about 60 minutes, or until doubled in size.
  • Punch down dough with your fist. Turn dough out onto floured board and knead for about 1 minute.
  • Preheat oven 375 F. Form dough into 1 loaf. Put into buttered bread pan. Cover and let rise until double in size, about 30 minutes.
  • Score dough by cutting 3 slashes across top with a sharp knife.
  • Put in oven and bake for about 45 minutes or until golden brown.
  • Turn out bread and let cool on a rack or dish towel.

Steps:

  • Mix all ingredients together in bowl, pour into a greased loaf pan. Bake in a preheated 350 deg oven for 1 hour and 10 minutes. Beer bread goes down as one of my all-time favorite comfort foods. This basic beer bread recipe is just about the easiest you'll ever make!

3 c. self-rising flour
3 tbsp. sugar
12 oz. fluid beer, at room temperature
4 tbsp. butter, melted

Steps:

  • Grease a 9 x 5 loaf pan with shortening. Preheat oven to 350ºF.
  • Stir flour and sugar together. Pour in beer and stir until foaming subsides and flour is incorporated. Spoon into prepared pan and bake for 50-60 minutes until a toothpick comes out clean or an instant-read thermometer reads about 190ºF.
  • Immediately remove from pan and set on a wire rack on top of a rimmed baking sheet. Pour melted butter over the top and brush sides.
  • Let bread cool for 15 minutes or so, then serve warm. Once the bread is completely cooled, it can be sliced to use for sandwiches, toasted, or served plain.

I've posted two variations that will give your bread additional flavor, although you can make it with the first four ingredients and you will be back to "normal" beer bread, which is still wonderful!

1/4 cup sugar
12 ounces beer, room temperature
1/4 cup salted butter, melted
1/2 cup sharp cheddar cheese, shredded
1 teaspoon onion flakes
1/4 cup parmesan cheese, grated
1/4 teaspoon ground black pepper
1/4 teaspoon rosemary, ground

Steps:

  • Preheat oven to 375 and spray a loaf pan (I use a glass pan).
  • In a large bowl, mix flour and sugar together. If you are making one of the "variations", add those ingredients to the bowl.
  • Slowly pour in room-temperature beer, as if you were trying NOT to create a huge "head" of bubbles.
  • Gently mix batter, again being careful not to whip the bubbles out of the beer and only mixing until everything is moistened. You will have lumps!
  • Pour batter into loaf pan. Melt butter and pour over batter.
  • Bake 375 degrees for 45-47 minutes. The top will be brown and the butter will have created a wonderful, slightly salty exterior.
  • Tip: place a sheet of foil under your loaf pan to catch any excess butter that may bubble over.

  • Preheat oven to 350 degrees. Spray a standard sized loaf pan with non-stick spray.
  • In a large bowl add the self-rising flour, sugar and beer. Stir until combined. Pour into the loaf pan. Melt half of the butter in the microwave or stove top and pour over batter evenly.
  • Place the loaf pan on the center of the rack and bake for 1 hour or until golden brown and the center comes out clean when a toothpick is inserted in the center of the loaf.

You can even mix it in the baking pan for easy cleanup. This is sensational when served with soups or just as a snack, but don't expect it to be around very long when your family gets a taste of it! Be sure to use a sheet pan on the shelf below the pan to catch any excess butter that may drip during cooking.

That compacts the flour and will turn your bread into a "hard biscuit" as some have described. That's because they aren't sifting their flour! If you do not have a sifter, use a spoon to spoon the flour into the 1 cup measure. Try it once the "correct" way and you will see an amazing difference in the end product.
  • I have had many email from you kind folks about using non-alcoholic beverages instead of beer. That is fine to do but I highly recommend adding a packet of Dry Active Yeast or 2 teaspoons of Bread (Machine) Yeast so that you get a proper rise.

No yeast beer bread is one of those easy bread recipes that's almost too good to be true. Five ingredients, in one bowl, it takes about a minute to make!

12 ounce bottle of beer

Steps:

  • Preheat oven to 375F. Spray a 9x5 loaf pan lightly and line with a piece of parchment paper.
  • When the oven has come to temperature, measure the flour, sugar, baking powder and salt into a mixing bowl and whisk well to combine. Break up any lumps in your brown sugar.
  • Add the beer to the bowl and whisk or stir to combine. Mix just enough to combine everything and there is no dry flour left. Don't worry about lumps.
  • Turn the batter into your loaf pan and spread out the top so the batter is even from end to end.
  • Bake for 45 minutes, or until a toothpick inserted in the center comes out without wet batter on it (moist crumbs are fine.)
  • Let cool for 10 minutes in the pan, then remove to a rack to cool.
  • I like to slice the bread while it is still warm, but don't slice it until you are ready to eat.
