BEER-INFUSED BELGIAN WAFFLES
This recipe is combination of Brussels waffles and Liege waffles. The sugar chunks caramelize as you cook, which makes them crunch and delicious. Light enough to serve with syrup for breakfast, but rich enough to serve with ice cream or sauces for dessert.

Steps:
- Whisk together dry ingredients, except pearl sugar.
- Whisk together wet ingredients.
- Combine wet and dry ingredients.
- Pour batter into waffle iron, one at a time, then quickly sprinkle a handful of pearl sugar over the top before closing the top. This will evenly caramelize the sugar throughout the waffle.
- These will cook sooner than the ordinary waffle because of the pearl sugar. Watch them closely and don't let the iron automatically tell you when they're done. This will result in over-caramelized (possibly burnt) sugar and an astringent aftertaste.

- Spray preheated waffle iron with non-stick cooking spray. Ladle the batter into waffle iron. Cook the waffles until golden and crisp. Serve immediately.

Steps:
- Mix yeast with 1 cup of the flour.
- Whisk in the lukewarm water and beer and let sit for about 10-15 minutes until frothy.
- Meanwile, beat together the eggs, sugar, salt until well combined.
- In yet another bowl, mix together the melted butter, oil, and vanilla.
- Combine all three mixtures, as well as the remaining flour, and beat for 2 minutes.
- Cover and chill overnight, or at least 4 hours.
- Heat up your waffle iron according to manufacturer's directions, greasing if needed.
- Stir the batter to remix the ingredients.
- Ladle batter ontp the hot waffle iron and cook waffles until steaming stops or according to the manufacturer's directions.

This hearty waffle recipe comes from an issue of Parent's Magazine. Ive made it every week for years and it comes out great every time. I double it and freeze the leftover waffles and reheat in toaster oven.

- Mix all dry ingredients together using a large whisk.
- Mix the wet ingredients together.
- Gently combine but don't overmix.
- Cook as your waffle maker directs.
- Sprinkle with powdered sugar (my daughter).
- Cover with toasted nuts, bananas, and real maple syrup (Me!).
- Pour on log Cabin (my son) and Michele's Maple Cream Syrup for my husband!
