This is in response to a request from the boards. You could use this on your sandwiches or spread on chicken or roasted pork. Any time you need some creole style mustard and don't have any on hand.

This is awesome! Ususally, I don't like anything extra on my steak but this is wonderful! These sauces are great but that doesn't mean you have to eat it with the sauce. This tenderloin recipe is Courtesy of Emeril Lagasse, 2003. The Creole Seasoning comes from "New New Orleans Cooking" by Emeril Lagasse and Jessie Tirsch. Published by William and Morrow, 1993. The Creole Mustard Dressing is courtesy of "Louisianna Real and Rustic" by Emeril Lagasse and Marcelle Bienvenu, William Morrow Publishers. This roast can be used cold; the day before roast the meat and place on a platter and wrap tightly in saran wrap or aluminum foil, just let rest 40 minutes before refrigeration.

1 (3 1/2 lb) center-cut beef tenderloin, trimmed and tied
1 tablespoon olive oil
salt, to taste
fresh ground black pepper, to taste
spice essence, to taste
fresh watercress or parsley, rinsed & spun
French bread or Italian bread
assorted rolls or assorted biscuit
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano leaves
1 tablespoon thyme
2 cups sour cream
1/4 cup prepared horseradish, drained
1 tablespoon chives
1 tablespoon champagne or 1 tablespoon white wine vinegar
1 teaspoon salt
1 dash hot red pepper sauce (optional)
1 large raw egg
3 tablespoons creole mustard or 3 tablespoons other whole grain mustard
1 tablespoon distilled white vinegar
1 cup olive oil
2 tablespoons chopped fresh parsley leaves
1 tablespoon honey
1/2 teaspoon salt
1/8 teaspoon cayenne

Steps:

  • Make the 2 sauces ahead of roasting the tenderloin.
  • Horseradish Sauce:.
  • In a bowl, combine all ingredients and blend well.
  • Adjust the seasoning to taste.
  • Refrigerate until ready to serve.
  • Yield: 2-1/4 cups.
  • Creole Mustard Dressing:.
  • In a food processor or blender, process the *egg*, mustard and vinegar until well blended.
  • With the motor running pour the oil through the feed tube in a steady stream and process until emulsified.
  • Add the parsley, honey, salt and cayenne and pulse to blend.
  • Transfer to an airtight container and refrigerate for at least 30 minutes before using.
  • Use within 24 hours.
  • Yield: 1-1/2 cups.
  • *RAW EGG WARNING*.
  • The American Egg Board states: "There have been warning against consuming raw or lightly cooked eggs on the grounds that the egg may be contaminated with Salmonella, a bacteria responsible for a type of foodborne illness. Healthy people need to remember that there is a very small risk and treat eggs and other raw animal foods accordingly. Use only properly refrigerated, clean, sound-shelled, fresh grade AA or A eggs. Avoid mixing yolks and whites with the shell?".
  • Essence (Emeril's Creole Seasoning):.
  • Combine all ingredients thouroughly and store in an airtight jar or container.
  • Yiled: 2/3 cup.
  • Preheat oven to 400°F.
  • Place the tenderloin in a large, heavy roasting pan.
  • Rub with olive oil and season lightly on all side with the salt, pepper and Essence.
  • Place over medium-high heat and sear the meat on all sides, 5-6 minutes.
  • Place ib the oven and roast to desired temperature, about 25 minutes for madium-rare.
  • Arrange a bed of watercress or parsley on a large decorative platter.
  • Remove the roast from the oven and place on a cutting board.
  • Loosely cover and lest rest for 10 minutes before carving.
  • Remove the butcher's twine and carve to desired thickness.
  • Arrange the slices on the watercress covered platter.
  • Serve with a variety of breads or rolls and desired sauce(s).

This beef tenderloin with horseradish sauce is a show stopper. It's the perfect centerpiece for a holiday meal!

1 cup chopped fresh flat-leaf parsley
½ cup butter, softened
6 tablespoons Dijon mustard, divided
2 tablespoons whole green peppercorns, coarsely ground
2 tablespoons whole pink peppercorns, coarsely ground
2 teaspoons coarse kosher salt, or to taste
1 (3 pound) beef tenderloin, trimmed
1 (8 ounce) container sour cream
2 tablespoons prepared horseradish

Steps:

  • Mix parsley, butter, and 3 tablespoons Dijon together in a small bowl. Combine green and pink peppercorns with salt in a small bowl.
  • Place beef tenderloin on a rack set on top of a heavy, rimmed baking sheet. Rub butter mixture over the tenderloin, coating well. Pat peppercorn mixture into the butter. Cover and refrigerate for 3 to 24 hours.
  • Mix sour cream, remaining 3 tablespoons Dijon, and horseradish together in a small container. Cover and chill for 3 hours.
  • When ready to cook, preheat the oven to 350 degrees F (175 degrees C).
  • Uncover tenderloin and bake in the preheated oven until firm and reddish-pink and juicy in the center, about 1 hour. An instant-read thermometer inserted into the center should read between 135 and 140 degrees F (57 and 60 degrees C) for medium-rare/medium.
  • Transfer to a serving platter and loosely cover with foil. Let rest 10 minutes before slicing.
  • Serve with the sour cream-horseradish sauce.

1 1 1/2-pound piece beef tenderloin (thick end), fat and sinew trimmed
3 1/2 tablespoons extra-virgin olive oil
1 large bunch watercress, trimmed
1 4-ounce jar capers, drained
1/2 cup shaved Parmesan cheese
2 tablespoons fresh lemon juice
1 French-bread baguette, sliced
Mustard-Horseradish Sauce

Steps:

  • Tie beef with kitchen string to hold shape. Sprinkle with salt and pepper. Heat heavy large skillet over medium-high heat. Rub 1 tablespoon oil over beef. Add beef to skillet. Sear until brown on all sides and cooked to desired doneness, about 20 minutes for medium-rare. Transfer beef to plate. Freeze until almost frozen solid, about 3 hours. Remove string. Using large sharp knife, cut beef crosswise into very thin slices. (Can be prepared 8 hours ahead. Arrange slices between sheets of waxed paper on baking sheet. Cover tightly and refrigerate.)
  • Cover large platter with watercress. Arrange beef slices atop watercress. Drizzle with 2 1/2 tablespoons oil. Sprinkle with capers and Parmesan cheese. Drizzle with lemon juice. Sprinkle with pepper. Serve with baguette slices and sauce.

1 cup sour cream
1/4 cup mayonnaise
5 tablespoons prepared horseradish
4 tablespoons Dijon mustard
2 tablespoons chopped fresh parsley
2 tablespoons Worcestershire sauce
1 teaspoon crushed dried rosemary
1/2 teaspoon kosher salt
1/2 teaspoon cracked peppercorn (medley of black, white, green, pink, etc.)
1 (4 lb) beef tenderloin, tied and trimmed

Steps:

  • Combine sour cream, mayonnaise, 3 T. horseradish, 2 T. mustard and 1 T. parsley; refrigerate.
  • Preheat oven to 425 degrees. Combine remaining 2 T. horseradish and 2 T. mustard with Worcestershire, rosemary, salt and peppercorns. Spread mixture over all sides of beef.
  • Place beef in roasting pan. Roast until meat thermometer inserted into center of beef registers 145 degrees, 50-60 minutes. Let stand 10 minutes before slicing.
  • Remove string from meat and slice. Sprinkle with remaining 1 T. parsley. Serve with horseradish sauce.

This is a great special occasion recipe. I made it for my family for Christmas a few years back and everyone loved it! The sauce is a delicious touch! You can add more horseradish if you desire!

1 cup sour cream
2 teaspoons prepared horseradish (more if you like it spicy!)
3 tablespoons Dijon mustard
6 teaspoons peppercorns (black, white and green)
2 teaspoons coarse salt
3 tablespoons Dijon mustard
5/8 cup room temperature butter
1 cup loosely packed fresh parsley, chopped
1 (2 lb) beef tenderloin, trimmed

Steps:

  • Sauce: whisk all ingredients together. Cover and refrigerate until you serve. Can be prepared 2 days in advance.
  • Beef:
  • Coarsely grind all peppercorns and transfer to bowl. Mix in salt.
  • Whisk butter, parsley and mustard together and spread over tenderloin.
  • Roll in pepper mixture and cover completely with pepper.
  • Heat oven to 450.
  • Place tenderloin on rack in shallow baking pan.
  • Roast until meat thermometer inserted in center registers 130 degrees for rare/about 35 minutes; (or 40-50 minutes for medium, 50-60 for well).
  • Transfer to platter and let stand 10 minutes. then slice and garnish with parsley and sauce.
