STUFFED BEEF TENDERLOIN
My husband and I both retired recently - me from the local bank and he from a paper mill. We've always loved to fish and we also enjoy skiing...so we like hearty meals. This is certainly that, and it's delicious!

- In a large skillet, saute the onion, celery and mushrooms in butter until vegetables are tender. , Meanwhile, in a large bowl, combine bread crumbs, salt, pepper, basil and parsley. Add onion mixture and mix well. , Make a lengthwise cut three-fourths of the way through the tenderloin. Lightly place stuffing in the pocket; close with toothpicks. Place bacon strips diagonally across the top, covering the picks and pocket. , Place meat, bacon side up, in a shallow roasting pan. Insert thermometer into meat, not stuffing. Bake, uncovered, at 350° until meat reaches desired doneness (for medium-rare, the thermometer should read 135°; medium, 140°; medium-well, 145°). Remove from oven; let stand for 15 minutes. Remove toothpicks.

HAMBURGER-N-STUFFING CASSEROLE

- Step 1- Brown beef and strain.
- Step 2- Cook stuffing according to directions on box.
- Step 3- Layer in a 9x9 cake pan: beef, green beans, cream soup, 1/2 of the cheese, stuffing, and last the other 1/2 of the cheese.

I don't remember where this came from. If you like stuffing, this is a great version and a meal in itself. A lean beef is better in this.

Steps:
- Mix onion, celery, poultry seasoning and bread cubes.
- Add one can of the soup and the milk.
- Set aside.
- In a large bowl mix the ground beef and the mustard and Worcestershire.
- Add the bread mixture.
- Mix thoroughly.
- Spread into a 9x13 pan.
- Spread the other can of cream of mushroom soup over the top.
- Bake at 375 for about 1 hour (maybe a little less).
- If this starts to get brown on top or looks too dry, cover with foil.

STOVE TOP STUFFING CASSEROLE

Steps:
- Brown ground beef and onion in a skillet.
- Preheat oven to 375 degrees.
- In a medium bowl, mix 3 1/3 cups water and stuffing together until moist.
- In the skillet, combine corn, mushroom soup, and milk with meat until creamy. Salt and pepper to taste. Mixture should not be soupy or your stuffing will sink.
- Lightly grease pan with cooking spray. Pour meat mixture evenly into the bottom of a 10x14 baking dish.
- If stuffing is too dry or thick to spread, add just a little extra water. Spread stuffing on top of the meat mixture.
- Bake for approximately 30 minutes or until meat & soup mixture is bubbly and stuffing is browning on the top.
- Serve alone or with veggies.
- Variation: Use 3 packets of dry brown gravy mixed according to package directions instead of mushroom soup and milk for the gravy. Sometimes, I also use an extra box of stuffing to put on the bottom of the dish as a bottom crust.

- Tip the porcini into a bowl and pour over 250ml boiling water. Leave for 20 mins to soften and plump up, scoop out the mushrooms with a slotted spoon and finely chop, then strain the liquid (leaving behind the last drop as it might contain grit) and set aside.
- Set aside about half the wild mushrooms, choosing those with the best shape, then finely chop the remainder. Chop 1 shallot very finely. Heat a large frying pan, add the butter and 1 tbsp olive oil, then cook the chopped shallot and garlic over a medium heat for 3-5 mins until softened. Tip in the chopped porcini and stir around the pan for 2 mins. Add the chopped mushrooms to the frying pan along with the thyme sprigs. Cook for 10 mins until lightly browned and any liquid has evaporated. Leave to cool.
- Place the beef on a board. Take a sharp knife and make a slice lengthways along the fillet, about one-third of the way down, so it folds out like a book. One side of the beef should now be thicker than the other. Make another lengthways slice along the thick half of beef so the beef unfolds to a flat, evenly thick piece of meat, about the size of an A4 page. Spread the mushroom mixture all over the beef and season really well. Tightly roll up the beef to reform into a log and tie about 8 pieces of string around to secure well.
- Heat oven to 200C/180C fan/gas 6. Place a large heavy-based roasting tin over a high heat on the hob (ensure that it will fit in your oven beforehand). Heat some more butter and the other 1 tbsp oil in the tin, then fry the beef, turning every couple of mins, until well browned all over. This will take about 10 mins.
- Tip the whole shallots into the tin around the beef and toss them in the oil. Roast for 20-25 mins for rare, 35 mins for medium and 45 mins for well done. If you have a thick piece of meat, it may take a little longer. Ten mins before the end of cooking, stir the whole mushrooms around the pan, coating well in the oil and juices, then leave to roast alongside the meat and shallots. Leave the meat to rest on a board for 10-15 mins and keep the vegetables warm in a serving dish while you make the sauce.
- Place the tin back on the hob. Stir in the flour, mixing well into any oil in the pan, then very carefully pour over the brandy, making sure you don't pour straight from the bottle. Use a small whisk to stir in the brandy, scraping up all the lovely browned bits from the tin. When the brandy has nearly boiled away, pour over the strained mushroom liquid and beef stock. Cook for about 5 mins until the liquid just coats the back of a spoon, then stir in the mustard and crème fraîche. Season, sprinkle with parsley and pour into a gravy boat. Cut the beef into thick slices and serve with the vegetables, gravy and some Parmesan puffs, if you like.

BAKED, STUFFED BEEF HEART WITH PARSLEY STUFFING
Ths recipe was requestd by Sandi Moorhead. My British mother-in-law taught me this recipe, but she never measured anything so I guessed at amounts and it always tastes wonderful. You can adjust it to your own taste. This works equaly well with pig heart and venison heart.

- 1. Preheat oven to 350 degrees. Have a small roaster with lid ready.
- 2. Clean heart of any excess fat and veins.
- 3. In bowl, mix bread crumbs, egg, parsley, and onion. Add salt to taste. Add more moisture if too dry.
- 4. Lay heart open and place stuffing in center. Wrap heart around stuffing and sew together with needle and heavy thread. You could probably wrap heavy thread around heart to close if you prefer.
- 5. Place heart in roaster with a little beef stock or fat for moisture. Bake covered for 1 to 1 1/2 hour or until tender. Check during cooking and baste if necessary.
- 6. Cut into crosswise slices to serve.

- Tie the heart with string.
- Place it on a rack in an oven proof dish.
- Place in bottom of the dish the stock or diluted tomato soup.
- Place over the heart the bacon strips.
- Cover the dish closely and bake the heart in a moderate oven 325°F until tender, sometimes if beef, a matter of 3-5 hours, if veal about 2 hours.
- Remove heart to a plate and cool it slightly.
- Heat, then fill the cavity with 1 1/2 cups bread dressing or rice dressing.
- Sprinkle the heart with paprika.
- Return it briefly to hot oven 400°F or place it under a broiler to reheat.
- The drippings may be thickened with flour to make gravy.
