1/2 teaspoon black pepper
1/2 teaspoon ground cloves
1/2 teaspoon cayenne pepper
1 (15 ounce) can tomato sauce
1 (10 ounce) can tomato puree
1 1/2 cups water (more or less)
16 ounces thin spaghetti or 16 ounces spaghettini, cooked al dente
1 (16 ounce) can dark red kidney beans, rinsed and drained
1 large sweet onion, finely chopped
8 ounces sharp cheddar cheese, finely shredded
oyster crackers (optional)
hot pepper sauce (Frank's or Crystal preferred) (optional)

Steps:

  • In a large pan brown ground beef along with onion, celery, bell pepper, and garlic, breaking up meat as it cooks.
  • Drain any accumulated fat.
  • Add rest of ingredients to pan, mixing well.
  • Bring to a boil, then lower heat, cover, and simmer for 1 1/2-2 hours, stirring occasionally.
  • Adjust consistency with water as needed.

1 lb ground beef (lean)
1/2 cup diced onion
1 teaspoon minced garlic
1 can, 14.5 oz, diced tomatoes
1 can, 15 oz, tomato sauce
1 teaspoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon cinnamon
1 ounce unsweetened chocolate
Salt and pepper
Optional Toppings: Shredded Cheese (3-way), Diced Onions (4-Way), Canned Chili Beans (5-Way)

Steps:

  • Add beef, onion and garlic in a skillet. Heat over medium high heat until meat is brown and no longer pink.
  • Drain grease and return to pan.
  • Add tomatoes, Worcestershire sauce, spices and chocolate.
  • Heat over medium heat, stirring frequently until chocolate is melted.
  • Season with salt and pepper and continue to simmer for 10 minutes so seasoning can mingle.
  • Serve on top of a bed of warm spaghetti pasta.
  • To make it 3 way, top with shredded cheese. To make it 4 way, add onions too. To make it 5 way Cincinnati Chili - add cheese, onoins and canned beans.

2 onions, chopped

2 tablespoons sweet paprika

1 1/2 pounds ground beef chuck

1 6-ounce can tomato sauce
1 cup diced tomatoes
1 bay leaf
2 tablespoons chopped unsweetened chocolate
1 tablespoon cider or red wine vinegar
2 tablespoons Worcestershire sauce
Freshly ground pepper
12 ounces spaghetti
1 19-ounce can kidney beans, drained and rinsed
1 pound grated cheddar cheese

Steps:

  • Heat the oil in a medium Dutch oven or heavy pot over medium heat. Add half the chopped onions and the garlic and cook until soft, stirring, about 5 minutes. Add the chili powder, paprika, cumin, allspice, coriander, cinnamon, cayenne and cloves. Cook, stirring, until fragrant. Add the beef and cook the mixture, stirring, until the beef is no longer pink, about 5 minutes. Add 1 tablespoon salt.
  • Add the tomato sauce, diced tomatoes, bay leaf and 1 1/2 cups water; simmer the mixture, uncovered, stirring occasionally, until slightly thicker. Add the chocolate, vinegar and Worcestershire and cook until the mixture is thickened but still soupy, about 15 more minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Cook the spaghetti according to the package directions. Drain well.
  • Discard the bay leaf and season the chili with the freshly ground pepper. Divide the spaghetti among bowls and top with the chili, beans, remaining onion and cheddar. Serve with the oyster crackers if desired.

1 large yellow onion (chopped)
2 tablespoons tomato paste
8 ounces tomato sauce
3 tablespoons chili powder
1 1/2 tablespoons cumin

1/2 teaspoon cayenne pepper (depending on how hot you like it.)

10 1/2 ounces beef consommé or beef stock
2-3 cups water ((depending on the method of cooking))
2 1/2 pounds ground beef
2 tablespoons worcestershire sauce
1 bay leaf
2 tablespoons apple cider vinegar
1 ounce unsweetened chocolate (chopped)

Steps:

  • Set the instant pot to sauté function and add the olive oil. Stir in the chopped onions and cook, stirring for 4-5 minutes until the onions are softened and slightly translucent.
  • Add the tomato paste and stir well to combine. Cook the tomato paste for 1-2 minutes until very fragrant, then add the tomato sauce.
  • Add the chili powder, cumin, garlic powder, cinnamon, allspice, cayenne pepper, cloves, sugar and salt cook and stir one to two minutes until very fragrant.
  • Add the consumé or stock and water and mix well to combine.
  • Add the ground beef and break apart with the back of a wooden spoon. When the beef is evenly combined, stir in the worcestershire sauce and add the bay leaf.
  • Seal the pressure cooker and bring to high pressure. Cook for 30 minutes on high pressure, then let the pressure reduce naturally. Let the chili cool to room temperature, cover and refrigerate several hours or overnight so that the fat layer on top solidifies.
  • Once the fat has hardened, remove it with a fork or spoon and discard. Transfer the chili to a large pot and simmer for 20-30 minutes with the lid askew to thicken the sauce.
  • Stir in the apple cider vinegar and chocolate. Check for seasonings and adjust to taste.
  • In a skillet, heat the olive oil over medium to medium high heat and stir in the chopped onions. Cook for 4-5 minutes until they're softened and translucent. Add the tomato paste and cook for 1-2 more minutes until well combined.
  • Add the tomato sauce to the mix along with the spices and simmer for a few minutes until fragrant.
  • Transfer the mixture to the slow cooker and add the consommé or stock, 3 cups of water, ground beef, worcestershire sauce and bay leaf. Break up the beef with the back of a spoon so it's evenly combined with the liquids.
  • Set the slow cooker to low and cook for 4-6 hours until saucy and fragrant. If it needs to thicken, place the lid slightly askew on the top so allow steam to escape and sauce to reduce.
  • Stir in the apple cider vinegar and chocolate. Check for seasonings and adjust to taste.
  • In a large dutch oven, heat the olive oil over medium to medium high heat and stir in the chopped onions. Cook for 4-5 minutes until they're softened and translucent. Add the tomato paste and cook for 1-2 more minutes until well combined.
  • Add the tomato sauce to the mix along with the spices and simmer for a few minutes until fragrant. Add the consommé or stock, 3 cups of water, ground beef, worcestershire sauce and bay leaf. Break up the beef with the back of a spoon so it's evenly combined with the liquids.
  • Bring the pot to a boil, then immediately reduce the heat to a simmer over medium low heat. Cover with the lid and slow cook for 2-3 hours, stirring occasionally so nothing sticks to the bottom of the Dutch oven.
  • Stir in the apple cider vinegar and chocolate. Check for seasonings and adjust to taste.
  • Put a cooked hot dog in a steamed bun and top with one, two, three or four of your favorite toppings listed above.
  • Ladle Cincinnati chili over cooked spaghetti and add your favorite toppings, listed above.
