SONORAN STYLE HOT DOG

Steps:
- Wrap each dog evenly in 1 slice of bacon. Secure with a toothpick at both ends and refrigerate for at least 30 minutes to firm up the bacon and help it adhere.
- Heat a grill or grill pan for medium heat. Grill each side of the hot dogs until the bacon is extra crispy but not burnt. It is import to control the heat to insure the hot dogs get properly warmed through and the bacon does not burn or undercook. Set aside.
- Butter the outsides of the "pocketed" rolls and gently griddle them until just golden brown.
- Layer a schmear of warm refried beans on the bottom of each roll followed by a bacon-wrapped dog. Top with the avocados, tomatoes, onions, jalapenos and a squiggly drizzle of Zesty Mayo. Garnish with some cilantro leaves and serve with your favorite hot sauce.
- Combine the cilantro, mayonnaise, hot sauce, lime zest and juice and some salt and pepper in a bowl and whisk until well blended.
HOT DOGS COOKED IN BEER
Be it vegan, turkey, beef, pork, sausage links give it a try. For those that don't like the Chard dogs with grill marks. Or you can pre simmer them and then grill them. I myself like grilled but my Dad prefers boiled dogs so I'm posting for him a kicked up version using beer in place of water.

- Stir the brown sugar, sage, salt, basil, black pepper, onion powder, marjoram, and red pepper flakes together in a small bowl. Place the ground beef in a large bowl; mix the spice blend into the ground beef with your hands until evenly integrated. Refrigerate for 24 hours to let the flavors blend.
- Divide the ground beef mixture into 8 patties.
- Place a large skillet over medium heat; cook the patties in the skillet until firm, hot, and cooked in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

BEEF SAUSAGE HOT DOGS WITH BASIL & LEMON MAYONNAISE
My adaptation of one of several "sizzling sausages" recipes in this week's issue of the Australian magazine 'New Idea'. The cooking editor - Barbara Notrhwood - says "Embrace the great Aussie tradition! Throw a snag on the barbie this summer and whip up one of these tasty, budget-friendly meals". A snag BTW is an Australian slang term for a sausage. I'd certainly be interested to know if the term is used anywhere else in the world! This recipe she's costed as $A2.55 a serve. She includes "chips, to serve" which I've omitted. My other changes wouldn't make an appreciable difference to the costing. By any reckoning, a tasty, budget-conscious, 2009-savvy recipe.

- To make the Basil & Lemon Mayonnaise, place all the ingredients in a small bowl and stir until they are well-combined; set aside while you cook the sausages.
- Cook the sausages under a medium to hot grill, turning occasionally, until they have browned all over and are cooked right through, or if it's summer and you have a BBQ, bung them on the barbie (Aussie for "put them on the barbecue").
- Cut lengthways slits in the sausages, three-quarters of the way through; divide the chutney evenly among the sausages (in the slits) and sprinkle the grated cheese on top of the chutney.
- Return the sausages to the grill (or the barbie) and cook them for a further 2 minutes or until the cheese has melted.
- Cut the rolls lengthways in half, being careful not to cut them all the way through; spread the cut sides with the Basil & Lemon Mayonnaise; divide the tomato slices (and cucumber slices if you're using cucumber) between the rolls; add the optional salt and pepper (if using) on the tomato (and cucumber) slices, sausages and baby spinach leaves evenly between the rolls; and serve.
CHICKEN AND SAUSAGE HOT DOGS WITH FRIED ONIONS
I found this in Delicious magazine. I have not tried it yet, but will be doing so on my new George Foreman grill!

- If using wooden skewers, soak in cold water for 30 minutes.
- Heat oil and butter together. Sauté onions till very soft--about 15 minutes.
- Add white sugar and cook another 15 minutes till onions are caramelized; set aside and keep warm.
- Cut each hot dog into 4 pieces.
- Cut each chicken breast into 4 strips; roll each strip into a spiral.
- Thread 3 pieces of chicken alternately with 4 pieces of hot dog onto a skewer.
- On low heat melt butter, ketchup, mustard, tomato paste, Worcestershire sauce, and seasoning; stir to mix.
- Brush the kebabs liberally with sauce.
- Cook on outdoor grill, indoor grill, or broil, about 20 minutes, basting frequently. Remove and baste again with sauce so that they are gooey!
- Serve in hot dog rolls with caramelized onions on the bottom. Be sure to pull skewer out before munching!

- -Preheat oven to 425. Line a baking sheet with foil. Toss red onions with 5tbsp. of oil and all of vinegar in large bowl. Sprinkle the onions with salt and pepper. Place onions in single layer on lined baking sheet. Bake until onions start to brown and they are tender, about 40min. Then cool completely.
- -Mix mayonnaise, lemon juice, lemon peel, basil and the remaining 2tbsp. oil in small bowl.
- -Spread mayonnaise mixture over cut sides of bread. Top bread with roast beef,onions and arugula. Cover with top halves and bread and serve.

POACHED SALMON WITH LEMON MAYONNAISE

- For salmon:
- Combine first 5 ingredients in deep skillet.
- Simmer 10 minutes to blend flavors.
- Add salmon, cover and simmer until just cooked through, about 9 minutes per inch of thickness.
- Transfer salmon to plate, using 2 spatulas as aid.
- Reserve liquid in skillet.
- Cool salmon.
- Cover and chill until cold. (Can be prepared 1 day ahead.).
- For Mayonnaise:
- Boil salmon poaching liquid in skillet until reduced to 1/4 cup, about 20 minutes.
- Combine mayonnaise, lemon juice, lemon peel, chives and parsley in medium bowl.
- Mix in 1 tablespoon poaching liquid.
- Season to taste with pepper. (Can be prepared 1 day ahead. Cover and chill.).
- Line platter with lettuce.
- Top with salmon.
- Make cut in each lemon slice from center to edge.
- Twist lemon slices and place atop salmon.
- Garnish with lemon wedges and tomatoes and serve with mayonnaise.
