12 slices of thick-sliced thick slab bacon, halved
6 small sweet apples, cut in wedges
1 cup flour
2 teaspoons salt
1 teaspoon pepper
6 thin-sliced pork chops

Steps:

  • Cook bacon in a heavy skillet over medium heat until crisp.
  • Remove to a paper towel and reserve.
  • In the bacon fat, saute the apples over medium heat until they are soft, but not mushy.
  • The cut edges should brown and caramelize.
  • Remove apples with a slotted spoon and keep warm.
  • Place flour, salt and pepper in a brown paper bag and shake thoroughly.
  • Shake the pork chops in the seasoned flour.
  • Fry the chops in the remaining fat over medium high-heat until they are browned, turning once.
  • Serve the chops on warmed plates, covered with the apples and 4 pieces of bacon per chop.

2 cups orange juice
1/4 cup sea salt
Four 8- to 10-ounce pork chops
2 tablespoons grapeseed oil
1 tablespoon salt
1/2 teaspoon ground pepper
1 tablespoon grapeseed oil
1 cup 1/2-inch-diced apple
1/4 cup medium-diced cooked bacon
1/4 cup julienned red onion
1 teaspoon salt
1/4 cup white balsamic vinegar
1 teaspoon sugar
2 tablespoons butter
1/4 cup celery leaves

Steps:

  • For the pork chops: Mix together the juice, salt and 1 gallon cold water. Submerge the pork chops and let brine in the refrigerator overnight.
  • In a large saute pan over high heat, warm the oil. Sprinkle the chops with the salt and pepper. Then add the chops to the oil and reduce the heat to medium. Sear the chops until browned on the first side, 4 to 5 minutes, and then flip and repeat the process on the second side. After cooking on the second side, remove the pork from the pan and drain out any excess oil from the pan.
  • For the salad: Return the pan to medium-high heat with the oil. Then add the apples, bacon, onions and salt to the pan. Cook for 6 to 7 minutes, stirring throughout. Add the balsamic and sugar, and then reduce the vinegar for 2 minutes. After reducing, remove the pan from the stove and stir in the butter until smooth. Add the celery leaves.
  • Serve the chops with the apple bacon salad.

Steps:

  • Peel, core, and slice the apples.
  • Preheat the oven to 350 degrees.
  • Melt the butter in a skillet.
  • Brown the pork chops on both sides in the butter.
  • Grease (or spray) a large baking dish.
  • Put the apple slices in the bottom of the dish.
  • Mix the brown sugar and cinnamon.
  • Sprinkle the cinnamon and sugar over the apples.
  • Place the pork chops on top of the apples.
  • Cover with foil and bake for 1 and 1/2 hours.

½ teaspoon salt
1 pinch ground black pepper
2 cups applesauce
1 cup chicken stock
½ cup ketchup
¼ cup brown sugar
2 tablespoons all-purpose flour
1 tablespoon black cherry balsamic vinegar
1 pinch garlic pepper seasoning
1 onion, sliced
1 Granny Smith apple, peeled and sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium heat. Add pork chops and cook until browned, seasoning with salt and pepper, about 5 minutes per side. Place pork chops in a large ceramic casserole dish.
  • Add applesauce, chicken stock, ketchup, brown sugar, flour, vinegar, and garlic pepper to the skillet with the pork juices. Stir until thickened and smooth, about 5 minutes. Place sliced onion and apple on top of pork chops; pour applesauce mixture on top.

4 1 1/2-inch center-cut loin pork chops, about 1 1/2 pounds total weight
Salt to taste if desired
Freshly ground pepper to taste
2 Golden Delicious apples, about 3/4 pound
1 tablespoon corn, peanut or vegetable oil
1/4 cup finely chopped onion
1 tablespoon brown sugar
2 tablespoons red-wine vinegar
1 red ripe tomato, peeled, seeded and cut into 1/4-inch cubes, about 3/4 cup
1/2 cup fresh or canned chicken broth

Steps:

  • Trim most of fat from chops andsprinkle on both sides with salt and pepper.
  • Quarter, core and peel apples.
  • Heat oil in skillet large enough to hold chops in one layer. Cook until nicely browned on one side, 2 or 3 minutes. Turn and cook again until browned, 2 or 3 minutes more.
  • Continue cooking chops about 15 minutes, turning often. Arrange quartered apples around the chops. Cover closely and continue cooking 5 minutes.
  • Transfer chops and apples to warm platter and cover with foil. Pour off fat from skillet. Add onions and stir until wilted.
  • Add brown sugar and vinegar and stir. Add cubed tomato and broth. Stir to dissolve brown particles that cling to skillet. Cook, stirring, 2 minutes. Add any liquid that accumulated around the chops. Cook until sauce is reduced to about 3/4 cup.
  • Pour hot sauce over chops and apples and serve.

½ cup chopped onion
4 raw chop with refuse, 113 g; (blank) 4 ounces (1/2-inch thick) pork chops
½ teaspoon salt
ground black pepper to taste
2 medium (2-3/4" dia) (approx 3 per lb)s apples - peeled, cored and sliced
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cloves
¾ cup hot water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.
