Steps:

  • Mix 1/2 cup rolled oats, 1 tablespoon ground flaxseed, 2/3 cup milk, 1/3 cup plain yogurt, 2 teaspoons brown sugar and a pinch each of salt and cinnamon in a small jar. Add 1/4 cup crushed freeze-dried blueberries and 1/2 chopped banana. Cover and refrigerate overnight. Top with fresh or frozen berries.

60g rolled oats
125ml milk (of choice)
50g plain greek yoghurt
50g blueberries
maple syrup to taste

Steps:

  • Mix the oats, yoghurt and milk together.
  • Stir in the blueberries
  • Pour into a small jar and cover
  • Leave in the fridge for at least four hours or overnight
  • Remove from fridge, add maple syrup to taste and serve immediately.

A really simple overnight oats recipe, probably my go-to one! The grated apple is a classic addition and provides extra sweetness. I like to serve with some yoghurt and honey in the morning. You can make the recipe vegan by using a non-dairy milk and serving with a non-dairy yoghurt and maple syrup instead of honey.

2/3 cup old fashioned oats
2/3 cup milk, of choice (cow's, almond, soy, rice...)
1 apple, shredded
2 tablespoons raisins
1/4 cup fresh blueberries or 1/4 cup frozen blueberries
1 tablespoon ground flax seeds or 1 tablespoon whole chia seeds
1 banana, sliced into coins
honey and plain yogurt, to serve

Steps:

  • In a medium bowl, mix the oats and milk together. Stir in the apple, raisins, blueberries and flax.
  • Divide between two bowls or mason jars and store in the fridge overnight.
  • In the morning, top with the sliced banana and serve with honey and yoghurt, if desired and serve.

½ cup vanilla greek yogurt
½ teaspoon vanilla extract
1 teaspoon chia seed, optional
½ teaspoon cinnamon
2 teaspoons honey
blueberry
⅓ cup graham cracker, crushed

Steps:

  • In a mason jar or sealable container, add the oats, milk, yogurt, vanilla extract, chia seeds, cinnamon, blueberries, and graham crackers, and stir together.
  • Seal and place in the refrigerator overnight for up to five days.
  • Top with additional blueberries, if desired.
  • Enjoy!

These oats deliver a triple dose of blueberries - compote, dried and fresh - giving them a bright purple colour. If you can't find dried blueberries you can use currants instead or leave them out.

1 cup frozen blueberries
2 tablespoons granulated sugar
1 tablespoon water
2/3 cup old fashioned oats
2/3 cup milk, of choice (cow's, almond, soy, rice...)
3 tablespoons dried blueberries
1/2 cup fresh blueberries

Steps:

  • Heat the frozen blueberries, sugar and water in a small pot over a medium heat. Once the mixture starts to bubble, turn the heat down to low and let simmer and soften for 10 minutes. Take off the heat and mash slightly with the back of a fork.
  • In a medium bowl, mix the oats, milk, cooked blueberries and dried blueberries until combined.
  • Divide between two bowls or mason jars and store in the fridge overnight.
  • In the morning, top with the fresh blueberries and serve.

  • Prepare the crumble: Combine all ingredients for crumble in a small bowl. Set aside. (This can be done the night before as well.)

You'll notice that the protein powder, oats and chia seeds soak up a lot of the liquid so you may want to add a little more almond milk before serving.
