Mango chunks and a citrus marinade give this recipe for beef and mango kebabs a bright and tropical, Caribbean flare that is perfect for summer grilling. Yield: 12 kebabs

¼ C Worcestershire sauce
1 lime, (juiced (roughly 2 Tbsp juice))
1 tsp ginger
1 tsp chili powder
½ tsp salt
1 lb sirloin steak, (cut into ¾" cubes)
2 large mangos, (pitted, peeled, and diced into ¾" cubes)
12 bamboo or other grilling skewers

Steps:

  • In a small bowl or liquid measuring cup, whisk together Worcestershire sauce, lime juice, ginger, chili powder, and salt.
  • Place the sirloin cubes into a shallow dish and cover with the marinade. Cover and let the beef marinate for 30 minutes.
  • Preheat the grill to medium-high heat. (You should be able to hold your hand 4 inches over the cooking grate for 4-5 seconds.)
  • If using bamboo skewers, soak the skewers in water for 3-5 minutes to prevent them from charring.
  • Skewer the marinated meat and mango cubes, leaving about 2 inches at each side of the skewer for easy turning.
  • Place the skewers on the grill and cook, covered 4 minutes.
  • Use a spatula to loosen the mango chunks from the grill grate. Then, flip the skewers. (Moving them around as needed to hotter or cooler parts of the grill.) Cover the grill and cook for an additional 4 minutes.
  • Serve kebabs as is or use them as a tropical topping for a fresh summer salad.

1/2 cup balsamic vinegar
1/2 cup water
1 tablespoon olive oil
4 garlic cloves, minced
2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
1 tablespoon minced fresh marjoram or 1 teaspoon dried marjoram
2 teaspoons sugar
1-1/4 pounds beef top sirloin steak, cut into 1-inch cubes
3 medium zucchini, cut into 1/2-inch slices
32 small fresh mushrooms
1/2 teaspoon salt
8 cherry tomatoes

Steps:

  • In a small bowl, combine the first 7 ingredients. Pour 2/3 cup marinade into a large bowl; add the beef. Turn to coat; cover and refrigerate for 4 hours. Cover and refrigerate remaining marinade for basting., Drain and discard marinade from beef. On four metal or soaked wooden skewers, alternately thread the beef, zucchini and mushrooms. Spoon over uncooked kabobs with reserved marinade; sprinkle with salt. Broil 4 in. from heat for 5 minutes on each side or until meat reaches desired doneness, basting frequently with reserved marinade. Place a tomato on each skewer before serving.

1 lb boneless beef top sirloin steak, cut 1-inch thick
1 large red bell peppers or 1 large yellow bell pepper
12 large mushrooms
1 (6 ounce) package long grain and wild rice blend
1/4 teaspoon salt
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 tablespoon water
2 teaspoons dijon-style mustard
1 teaspoon honey
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper

Steps:

  • Trim fat from beef steak; cut into 1 1/4-inch pieces.
  • In large bowl, whisk together seasoning ingredients; add beef, bell pepper and mushrooms, tossing to coat. Alternately thread pieces of beef, bell pepper and mushrooms on each of four 12-inch metal skewers.
  • Prepare rice according to package directions; keep warm.
  • Meanwhile, place kabobs on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 9 to 12 minutes for medium rare to medium doneness, turning occasionally.
  • Season with salt. Serve kabobs with rice. Makes 4 servings (serving size; 1 kabob and 3/4 cup rice) Total preparation and cooking time: 30 minutes Cook's Tip: To grill, place kabobs on grid over medium, ash-covered cools.
  • Grill kabobs, uncovered, 8 to 11 minutes for medium rare to medium doneness, turning occasionally; season with salt.

1 teaspoon fresh rosemary, chopped
3 large garlic cloves, minced
1 lb beef tenderloin, trimmed and cut into 1-inch cubes
1/2 teaspoon kosher salt, divided
1/2 teaspoon black pepper, freshly ground and divided
2 teaspoons fresh lemon juice
2 cups cherry tomatoes
1 large red onion, cut into 1-inch pieces
1 yellow bell pepper, seeded and cut into 1-inch pieces
1/2 lb cremini mushroom, stemmed and halved
cooking spray

Steps:

  • Combine 2 teaspoons oil, rosemary, and garlic in a large zip-top bag. Add beef; seal and marinate in refrigerator 1 hour, turning occasionally.
  • Remove beef from bag; discard marinade. Thread beef evenly onto 6 wooden skewers; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper.

40 ounces pineapple chunks, undrained
1/2 cup packed brown sugar
2/3 cup cider vinegar
1/4 cup soy sauce
2/3 cup catsup
2 teaspoons ground ginger
1 1/2 teaspoons honey or 1 1/2 teaspoons liquid smoke
3 lbs round tip roast, cut into cubes
1/2 lb fresh mushroom cap
1 small onion, quartered
1 green pepper, cut into 1 inch pieces
4 -6 red potatoes, boiled and cubed

Steps:

  • Drain pineapple saving juice.
  • Combine juice and next 6 ingredients, mix well.
  • Pour in large shallow dish.
  • Add meat, cover and marinate in refrigerator over night.
  • Drain meat, retaining marinade.
  • Bring marinade to a boil in a saucepan.
  • Add mushrooms, reduce heat and simmer, uncovered, for 10 minutes.
  • Drain, saving marinade.
  • Alternate meat, pineapple, mushrooms, onions, green peppers and potatoes as desired on skewers.
  • Grill over medium coals 10-15 minutes, basting frequently with marinade and/or BBQ sauce.

2 tablespoons olive oil or 2 tablespoons vegetable oil
2 1/2 teaspoons red wine vinegar
1 teaspoon sugar
1/8 cup fresh parsley, chopped
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/8 teaspoon pepper
8 ounces sirloin steaks, cut 1 thick
1 (2 1/2 ounce) jar mushrooms, drained (whole mushrooms)
1 green bell pepper, cut into 1 chunks

Steps:

  • Place steak on unheated rack in broiler pan.
  • Broil about 3" from heat for 8 minutes, turning once.
  • Let cool slightly.
  • Cut meat into twelve equal sized pieces (about 1-inch cubes), trimming off all visible fat.
  • Place steak and mushrooms in a plastic bag; set in a shallow dish.
  • Combine wine, oil, vinegar, sugar, parsley, garlic, salt, rosemary, and pepper; pour mixture over meat and mushrooms.
  • Close bag and marinate 5 hours or overnight in refrigerator, turning bag occasionally.
  • Drain meat & mushrooms, discarding marinade.
  • To assemble skewer meat, mushrooms, and pieces of green pepper alternately onto metal skewers.
  • Broil about 3" from heat until meat is medium rare (8-10 minutes).
